Step 1
In a large skillet over medium-high heat, add the beef and the shallot and cook, while crumbling the beef, until browned, about 5-7 minutes.

Season the beef mixture with the salt and the pepper.
Step 3
Drain any excess grease from the skillet.
Step 4
Transfer the beef mixture to a plate or bowl.
Step 5
Add the butter to the pan to melt.
Step 6
Return the cooked beef mixture to the pan.

Add the potato and onion mix to the pan and heat it through, seasoning with the salt and the pepper if needed.

Using the back of a spatula, press down on the hash mixture.

Allow the hash to cook until crisp on the bottom, about 3 minutes.

Flip the hash and cook until crisp on the other side, about 2-3 minutes.

Crack the eggs over the top of the hash and cover.

Allow the eggs to cook until they reach your desired level of runniness, about 3-5 minutes.
