Step 1

Pre-heat your oven to 180ºC/350ºF and get your waffle iron warming up.

Step 2

Cut the very thick rind from the bacon (if it has it) but leave a nice ring of fat.

Step 3

Line a baking sheet with cooking paper and arrange the bacon in a single layer.

Step 4

Cook the bacon for 15 minutes until just starting to crisp.

Step 5

Remove from the oven and use a pastry brush (the silicone ones are best) to brush maple syrup over your bacon.

Step 6

Cook for a further 5 minutes.

Step 7

To make the waffles, tip the flour, baking powder and baking soda into a large bowl. Set aside.

Step 8

Put the butter into a small pan and melt until it is on the verge of browning.

Step 9

Crack the eggs into a large jug (or another bowl) whisk gently to break the yolks then add in the maple syrup, milk and melted butter. Mix well.

Step 10

Pour the egg mixture into the bowl with the flour and stir until it is just combined. Don't over mix it, the batter should be a bit lumpy.

Step 11

Spoon the mixture into your waffle iron and cook for 4 minutes or until they are golden and lift easily away from the plates. If you have a traditional cast iron waffle iron, you may need to oil it first, the non-stick Belgium style ones should be fine without oil. Depending on your waffle iron you will make about 8 waffles. I find 1/2 cup of mixture just fills one waffle plate, but the smaller ones will need about 1/3 cup.

Step 12

Pile the bacon onto of your maple syrup waffles, drizzle with a little more maple syrup and enjoy!
