Heat oil in a frying pan on medium heat and cook bacon for 1-2 minutes on each side or until crisp.

Step 2

Whisk eggs, milk and sugar together in a shallow dish.

Step 3

Heat a frying pan on medium heat, add half the butter and 1 tablespoon oil.

Step 4

Dip bread, 1 slice at a time, into the egg mixture and turn to coat.

Step 5

Allow the excess to drain. Cook for 3 minutes each side or until golden.

Step 6

Add remaining butter and oil as required.

Step 7

Arrange the toast on a serving plate then top with bacon.

Step 8

Finish off with a drizzle of maple syrup on top.
