This is a HUGE hit at all of my parties!!!  With kids, as well as adults...and it is very easy to make!!! Serve this flavorful dip with tortilla chips. Roasted red peppers and two kinds of cheese create the perfect combination. Adjust the amounts of onion and garlic to taste.

Mary's Roasted Red Pepper Dip

Monterey Jack cheese

(8 ounce) package cream cheese, softened

mayonnaise

onion

garlic,

Dijon-style mustard

Preheat oven to 350 degrees F (175 degrees C).


In a small baking dish, mix the roasted red peppers, Monterey Jack cheese, cream cheese, mayonnaise, onion, garlic and Dijon-style mustard.


Bake in the preheated oven 20 minutes, or until bubbly and lightly browned. Serve warm.


I'm ashamed of how long it's taken me to review this, considering how often I make the recipe.

This is perfection in hot-dip form.  

EVERYONE asks me for the recipe when I serve this at parties (and yes, I do give credit!).

The changes I make to the recipe are minimal. I up the onion to 2 tbs, I up the garlic to 2 cloves. I decrease the mustard to 1 tbs (I find it makes the dip a little too sharp with 2 tbs) and I add a big dash of hot sauce.  Not a big difference, in the grand scheme of things.

My Mother-in-Law called me from the grocery store recently because she was having difficulty finding the roasted red peppers. If you do, as well, they're usually located by either the olives and pickles or they're located by the "fancy" canned goods (like marinated mushrooms, etc), depending on the store.  

The only other note is that I can only find a 12oz jar of the roasted red peppers. I usually use most of it (scraping off any charred skin left on the peppers) and just snack on any leftovers while waiting for the dip to come out of the oven. :D

My friends and I really enjoyed this dip.  Based on previous reviews I made a few changes: used 2 tablespoons of dry minced onions, used 4 cloves cloves of minced garlic, used 2 cups of shredded monterey jack / colby jack cheese and added a half cup of shredded parmesan cheese.  I prepared the dip in two Pyrex 5 X 7" dishes and cooked them approximately 25 minutes.  I plan on making this for many upcoming parties.

I have a recipe similar to this using artichokes instead of the peppers.  The sweetness of the roasted peppers compared to the saltiness of the artichokes makes this a completely different dip however.  I added extra garlic, several chopped jalepenos, and about 1/2 c. of parmesan cheese.  The combination of sweet peppers, salty cheese, and spicy jalepenos is extraordinary!

Fabulous recipe to tinker with as you please and still have it turn out great.  I had a cheddar/jack mix, so I used that, and I used 1/2c mayo/1/2c sour cream to cut down on grease, and I didnt have dijon mustard, so I used Cleveland Stadium mustard (its a brown mustard) and my guests loved it--said it was a definite keeper. Also added a bit of horseradish, and only the 7 oz jar of peppers. Served with Frito scoops.  So, this recipe is not too sensitive--you can substitute, and it still turns out as a crowd pleaser. Very easy and quick to make, and goes over very well.  I quickly patted excess liquid from my roasted peppers to make sure there wasn't too much liquid, and it turned out excellent. Definite keeper.  Think it would go well served in bread bowl with bread pieces or with cut up pieces of bagel.  Very versatile as to type of chip/bread for dipping.

This was amazing.  I prepared it the day before and took it to a friend's house, heated it up and we devoured it.  We all loved it and I had to pass out the recipe.  I roasted my own bell peppers instead of using the jar.  I used 2 but I think 3 would have been even better.  Yummy Yummy!

Good if you like mustard-flavored mayo. I had high hopes for this b/c of the recipe's high rating and the fact that I love red peppers, but to me, the taste of this dip was nothing more than hot mayo and dijon mustard. Ick.

Everyone loved this dip - especially the teenagers!  The only changes I would make would be to use a little less mayo and more cheese.  The color was perfect for the Christmas buffet.

Two words:  DE-LISH!!!   I used lite mayo and 1/3 less fat cream cheese and it was still super creamy.  One note:  don't rewarm in microwave, it will seperate.  LOVE THIS DIP!!!

As the reviewers suggested, I added extra minced onion, 1/2 parmesan and with some reviewers saying it needed additional spice - I added a few chopped jalopenos. Delicious!  I used a 12-ounce jar of red peppers for a full-bodied taste.  I added half again as much garlic, onion, and dijon mustard, but my friends and I all felt this could use even more.  Perhaps due to the extra peppers?  At minimum, I will double the amount of the garlic and onion ingredients.  We all felt it was a winner!

I used one whole pepper out of a 12 oz. jar and diced it.  I used one pkg of  4 cheese mexican blend of shredded cheese  for better flavor instead of just monterey jack and only 1/2 cup mayo.  Optional, but I doubled the garlic and onion.  People loved this dip!!  Makes enough for about 14 adults.  I have no idea how this could feed 32!  It is too good to stop eating!

I threw all the ingredients in the food processor to make preparation even easier. It was delicious BEFORE I put it in the oven, and sensational after; I think I ate half the pan myself. Kind of reminds me of a hot pimento cheese dip. Simple and scrumptious.

I have used this recipe for years but forgot to rate it!  Everyone loves this and it's always requested.  I replace the mayo with sour cream (I hate mayo) and it's great.  Low-fat or fat-free ingredients also work fine with this.  You can also add corn or black beans to bring it to another level of yumminess!

I used a whole jar of 12 oz peppers and it was very good when it was cold.  I heated it up in a small crockpot for a party and it looked like really gross cat &amp;^&amp;%.. sorry.. but it was great when it was cold!!

delicious, will definitely make it again, made it for a group of 6 people aged 30-60 and they all loved it.  Next time might add a bit of Tabasco for some spice.

This was the hit of a party I went to yesterday.  Here are my modifications:

- used Roasted Red Pepper spread in a jar
- used only 1/2 cup mayonnaise
- used mozzarella/cheddar blend
- served with sliced cucumbers as well as thin crackers
- no mustard used.

Awesome! Awesome! Awesome! Everyone in my family loved this dip. I only made a couple of changes. I used fat free cream cheese, and pepper jack cheese instead of monterey. Also, if you have the time, it's totally worth it to roast your own red peppers. (drizzle on a little extra virgin olive oil and add a little crushed garlic)YUM!

This was a huge hit!  I made some modifications to this to suit my tastes as I don't like mayo and I like a little heat.  I also had some left over roasted garlic so I substituted that as well.  This was WONDERFUL!!  Everyone asked for the recipe.  I used a 14oz jar of peppers, sour cream instead of mayo, granulated onion powder (3 pinches) since I don't like raw onions, 3/4 of a brick of pepper jack cheese, 1 head of roasted garlic, mashed and 3 big squirts of Emril's Kicked-up Horseradish mustard.  This was excellent! Has become my new "dish to bring"!!

minus one star for too much mustard in original recipe.  

Next time I made it, only used 1/2 tbsp mustard, and it was much better.  I replaced 1/2 of mayo with plain yogurt, which lightened it up considerably.  IMPORTANT!!! Make the dip ahead of time - if you put it together and bake right away, it is pretty bland in the beginning and too sweet - however, upon sitting, the flavors of the red pepper and garlic really develop in the finished product!

I have been making this  for years now and it is my most requested dish when visiting friends or having a get together! Several of my friends now have the recipe and make it for their own events! I usually cut down on the amount of mustard and add a bit more onion and garlic just to suit our tastes but it is wonderful when it is made as is!

My girlfriends and I take a prepared 13x9 pan of this dip on our ski weekend; we pop it in the oven while we're unloading our gear and by the time we've unpacked, we have a nice tasty warm snack!  As a bonus, what we don't eat can be reheated again the next day - or in an hour!!  Also, if you like more spice, mix in some chopped fresh jalapano peppers.

I threw this together with ingredients on hand for a quick get together.  I used half sour cream and half maynoise.  I used a little less mustard.  I used granulated garlic and onion powder instead of what the recipe called for.  I also used half mozz. and cheddar.  I served it with big crunch croustini bread pieces and tortilla yips and it was definitely better with the tortilla chips.

Love this!! I roasted my own red peppers which I will do everytime. I used three medium sized peppers. Throw them under the broiler until charred on all sides. Remove and place under a towel for 10 minutes. Then remove all the skin, cut up and put in a 400 degree oven with some olive oil for about 20 minutes. I put everything into a food processor for easy mixing. So simple and so delicious!

Served before a family dinner last evening.  Big hit.  Adapted as follows: 1/2 cup mayo; 1/2 cup sour cream; 1 tsp. worcestershire sauce; dash of any type of hot sauce

This recipe was so easy and tasted so wonderful! My 5 year old son loves it as well as everyone to whom I have served it. This recipe is great for any time of year.

I made this for my daughter's 5th birthday party.  All of the adults LOVED IT. I had to print several copies of the recipe for them to take home!!!!   Very easy.  I made the night before and then baked it when I needed it.  Try it, you will love it.  It is a keeper!!!

Very good - was a big hit at a party.  Next time, I think I will increase the onions and cut back just a little on the cream cheese - it was a little overwhelming - hard to taste other ingredients.

This was extremely good! I served it in a croustini breadbowl. I used reduced fat cream cheese and low fat mayo. It was perfect! 

Embarassing to admit, but I have woken up in the night thinking about this dip.  I have now made it several times, always just the way the recipe says.  I do cut the cream cheese into little cubes to make their distribution easier, and I just mix the whole mess up with my hands, which leads to one caveat:  if you're going to do that, take off your jewellery or you may find yourself explaining to a friend at a baby shower that no, the ring she just found in her snack does not make her the winner of some cute secret game, it just makes her an accomplice to finding the engagement ring that must also be in the dip!!  It should be noted that she STILL asked for the recipe.

I made this dip for a party with one other one and this was gone before the other dip was touched!  It was just delicious and addicting.  I made it again the next day and didn't have roasted red peppers and it was still delicious!

Excellent!  It makes a ton- but who cares?  It is so good, you want a lot of it!!  I ended up using a 12oz. jar of peppers and a Mexican blend of cheeses. I also added 1T horseradish to the mix, and puree'ed the whole thing in the food processor.  I brought it to an "eat-with-your-hands" dinner party and it was a huge hit.  Definitely a keeper!

I don't mean to be a fuddy duddy, but I was really disappointed with this dip. The flavor is nice - like others, I also doubled the garlic and added more minced onion. I added a bit of cayenne for a little bite. What really needed modified was the mayo. One cup of mayonnaise is WAY too much; it essentially ruined it. That much mayo made it very, very oily. The presentation was awful. If I made this again, I would cut the mayo to 1/2 c. at the most. I would possibly even skip it all together and let the cream cheese give the moisture to the recipe. I would probably add more red pepper, too. The red pepper flavor seemed to get lost. 

This is probably a nice base recipe, but it definitely needs some kick added to it and the mayo cut in half - at least. And yes, more red pepper, too.

This was fantastic!  Very heavy so be be prepared to feel guilty the next day.  I turned this into a bread bowl for a friends surprise part and it was almost gone by the time the guest of honor showed up.  Will be using this again and again.  Thank you for the recipe.

I had someone bring this to a party at my home and it went quickly.  I got the recipe and have made it several times since.  It is wonderful!  The only thing that I change is the mayo.  I cannot stand the stuff so I use sour cream or plain yogurt instead.

Very easy to make and has an interesting mix of ingredients.  The recipe does make a lot of dip, so for a smaller group, the recipe can easily be cut in half.  Very enjoyable!

Oh my oh my--this is absolutely divine! I made it for my cookie exchange and used my own roasted red peppers instead of jarred. It was a hit--and I couldn't keep my hands off it in the fridge. This dip was good, but I added more onion and more garlic.  It needed a little more seasoning.  I also added some salt and pepper.  I came home with an empty bowl from the party.  I would make this again with some modifications.

This was good but as written you wouldnt be able to taste the red peppers. I used a 10oz jar (and then one ADDITIONAL red pepper I had in a jar in the fridge) I used onion poweder and garlic powder. Also, i used about 2 tablespoons of mayo...not the full cup. and i pulsed the peppers and cream cheese in a food processor to get a nice creamy smooth texture. will definately make again!

I made this dip 2 times over the holidays and both times people raved!! The recipe is so easy. I added as much red peppers as looked good, I'm sure it was more than what was called for. Second time I made it I used the peppers made by vlasic rather than a fancy brand in oil and tasted no difference! This dip is also equally as good heated up in the micro the next day!

i made this dip the other weekend for a poker party, and the dip was well received.  i did make a few changes:  i used 4 cheese mexican cheese instead of the monterey jack, i also(like others) added 1/2 c. sour cream and i added 1 teaspoon of worcheshire sauce.  turned our great... i bet you could substitute sun dried tomatoes instead of the roasted red peppers... thanks!!!

I love making dip - and so does everyone else who tastes it! It's usually one of the first appetizers to go at our parties.  A friend suggested adding lump crab meat which I haven't tried yet, but it sounds like a good idea.

Wonderful!  I only had jalepeno cream cheese and cheddar cheese on hand. I used both as substitutes and they worked perfectly.   I will make this again very soon!

This is the best dip!  I have made it so many times and everyone always asks for the recipe.  I serve with the scoop tortilla chips as the dip is pretty thick and hearty.  Some people are hesitant to try it as the color is kind of bland but make sure you push them to try becuae they won't stop eating it!

Yummy. It makes up pretty quickly and tastes great. I served it with garlic cracker/chips from Costco. Went over very well. Serves 32 though, which I didn't realize. You might want to scale it down if you're not serving a large group.

The dip was very tasty with melba toast but it was just a bit too rich for my liking. Not red peppery compared to the cream cheese and mayonnaise. Probably wouldn't make it again.

Have been making this awesome dip for a couple of years now-love it!  I like that it makes a big batch so even if I take it to a small party and there is some left over it is also yummy as a cold spread the next night!  Absolutly love it goes with chips, veggies, crackers or bread!

This dip is GREAT!! I made it for my friends and they all RAVED about it and now ask if I will make it again whenever they come over. This is my favorite dip recipe to date. I roast my own peppers and the garlic as well. I also use mozerella cheese since it's what I normally buy. I'm enjoying some right now!!!!!

It was such a strong red pepper taste. It didn't really seem to mix well with the other flavors. One thing I would recommend is to eat them with tortilla chips. The saltiness of the chip was nice with the dip.

WONDERFUL!  I used a little more onion and garlic as previously suggested.  I also made a few revisions to cut down a LITTLE on the fat.  I reduced the amount of cheese and used 2 cups of Pepper Jack and 1/4 cup Parmasean instead of 3/4 lb. of Monterey Jack.  Using light mayo and 1/3 less fat cream cheese didn't hurt the flavor or consistency at all!  Will definitely make again!

I get rave reviews with this recipe every time I serve it. I always do parmesan on top (not any other cheese) and broil it at the end; otherwise you won't be able to dip bread into it. Amazing dip! So easy and so much better than any store bought dips.

I made this recipe yesterday for a pre-Thanksgiving dinner appetizer and it turned out wonderful! I followed the recipe exactly except that I didn't add the minced onion because I didn't have any and I used one reviwers suggestion and added 1 teaspoon of horseradish to give it a little kick. I don't know how much red pepper I added because I was using what was left from a Costco-sized jar but it was about 6 large peppers. Probably less than what the recipe called for but I thought the amount was perfect... it didn't overpower the entire dish. I served it was Fritos Scoops which was perfect as you could scoop out a lot!  This was a huge hit and is now one of my favourites. Thanks Mary!

This was okay, not anything outstanding.  Great dip for those who are not fans of a ton of spice.  I was just looking for more flavor.

This is a great dip. I had many comments of "This is so good, you'll have to givce me this recipe!" I followed others advice and put 12oz of peppers in, and of only using 1Tbsp of Dijon Mustard. I also used ultra low fat Miracle whip and low fat cream cheese and it was just fine.I used a plain Montery Jack cheese but a pepper or jalepeno cheese is what I am going to put in next time for a little extra something! Great recipe!

This is FANTASTIC!  I made it for my marina friends, and it was gone in about 10 minutes with several asking for the recipe.  I didn't have Monterey Jack cheese, so I used Muenster and threw in a handful of shredded Colby Jack cheese.  As suggested by a few, I added some Tabasco sauce (about 3/4 tsp.), and also added a few dashes of black pepper.  I served it with crackers and slices of French bread.  As many of my friends said, this recipe is a keeper!

I have had made this quite a few times and while I am not crazy about it, I always get asked for the recipe or to make it for parties.
I add one small can green chili peppers, 1Tbl horseradish, 1/2 mayo 1/2 sour cream and a mexican cheese mixture. I also add a splash of hot sauce. This gives it a bit of a tangy kick but not spicy hot. 
I serve with bagel chips.

Texture was thicker than I expected, but very very good. It took an additional 10 minutes in oven to brown and start bubbling around the sides. I put mixture in a round corningware dish so this may be the reason. Big hit at the Christmas party I brought this to!

I love this recipe and people always ask me for it.  I also jazz up a bit with some tobasco and the entire 12 oz jar of roasted peppers.  Enjoy!

I made this dip over the holidays and it was very good.  I bought the monterey jack cheese with jalepenos in it, which added a nice spicy twist.  Very easy to make and enjoy!

It really wasn't that GREAT.  It was a little bland and I ended up with a lot of leftovers.  Maybe I'll try again, but I'll a little horseradish as others have suggested.

Yum.  Big hit.  added chopped artichokes and a bit of parmesan and it was fantastic.

I halved this for six and we cleaned the bowl!  I loved the subtle tang of the red peppers and it was so nice and creamy. I did scale the mustard back a bit.  Used Spicy Brown mustard and probably added about  1 t for the half recipe. Served it with tortilla chips and it was a big hit.  I think it would be nice served with Triscuits as well.
