Step 1

Heat oven to 400 degrees F (205 degrees C).

Step 2

In a large bowl whisk together Olive Oil (2 tablespoon), Ground Cumin (1 teaspoon), Salt (1 pinch) and Freshly Ground Black Pepper (to taste).

Step 3

Add Sweet Potato (to the bowl, and toss until they are coated in oil.

Step 4

Place sweet potatoes in a single layer onto a baking sheet and roast, flipping once, until cooked and browned, about 20-25 minutes.

Step 5

Build your sandwiches by layering Hummus (1/2 cup) onto Sandwich Bread (8 slice). Top with roasted sweet potatoes, Alfalfa Sprouts (to taste), Jarred Roasted Red Peppers (8 slice), Fresh Basil (to taste) and Hot Sauce (to taste) if using.

Step 6

Add the tops of your sandwiches and voila! Serve and enjoy!
