Step 1
Preheat the oven to 400°F.

Brush both sides of each flatbread with the olive oil, about 1/2 teaspoon per side. Sprinkle 1/4 teaspoon oregano on one side of each flatbread. Place the flatbread herb side up onto a rimmed baking sheet. Bake for 7 to 9 minutes, until warmed through and the bottom and edges are crisp.
Step 3
Spread 1/4 cup hummus on each flatbread. Top with the arugula, sliced cucumber, halved grape tomatoes, and pickled red onions.
Step 4
Garnish with fresh chopped parsley and fresh cracked black pepper.
Step 5
Serve immediately.
