Step 1
Slice the chicken in half lengthwise to make 6 approximately equal-sized pieces. Sprinkle both sides of the chicken with salt and pepper.
Step 2
Heat the oil, butter, and garlic in a skillet or large fry pan over medium-high heat. Add the chicken, sear, and then cook for 5 minutes on each side. Transfer chicken to a plate and set aside.
Step 3
Reduce the heat to medium. Add the chicken broth, lime juice, chillies, and herbs, and stir thoroughly. Cook for 2-3 minutes.
Step 4
Return the chicken back to the pan, then add the tomatoes and stir together to combine. Cook for 5 minutes, then lower the temperature.
Step 5
Stir in the cream cheese and then add the peas and corn. Simmer the southwest chicken mixture for 10-15 minutes, stirring occasionally.
Step 6
Remove the Millionaire Southwest Chicken from the heat. Season with salt & pepper, then serve immediately with a side of your choice, such as air-fried potatoes or mash.
