Step 1
Juice limes and oranges into medium bowl.
Step 2
Add minced garlic, oregano, cumin, salt, and 1/4 cup olive oil to juice.
Step 3
Turn instant pot on saute setting and add 1 tbsp olive oil. (If working with a slow cooker, heat olive oil in a large pan).
Step 4
Brown all sides of pork in instant pot, approximately 2 minutes on each side.
Step 5
Add marinade mixture and onions to the pork in the instant pot.
Step 6
Set instant pot to high pressure for 60 minutes (if using slow cooker, cook on low for 8 hours or high for 4 hours).
Step 7
When timer beeps allow pressure to naturally release for 15 minutes and then turn valve to quick release.
Step 8
Shred pork using two forks and remove bone. Be cautious as contents are hot!
Step 9
Optional step for extra flavor: Turn Instant Pot back to manual setting on high pressure for 5 minutes.
Step 10
Optional step for extra flavor: Allow pressure to naturally release for 3 minutes and then turn valve to quick release.
Step 11
