Using a rolling pin, flatten each slice of bread slightly. Spray each side of bread with oil. Line prepared pan holes with bread, pressing to form a case. Bake for 10 minutes or until lightly golden and crisp. Remove from the oven.

Meanwhile, heat a large frying pan over medium-high heat. Add chorizo. Cook, turning, for 3 to 4 minutes or until golden and crisp. Transfer to paper towel to drain.
Step 4
Whisk eggs, cream and milk together. Season with salt and pepper. Divide pepper strips, chorizo, cheese and 2/3 of onion among bread cases. Carefully pour over egg mixture. Bake for 20 minutes or until golden and set. Serve quiches sprinkled with remaining onion.
