Step 1
In a mixing bowl, beat the softened cream cheese until smooth and creamy.

Gradually add the sweetened condensed milk and vanilla extract, and continue to beat until the mixture is well combined.

Stir in 1 cup of shredded coconut and a pinch of salt into the cream cheese mixture until evenly distributed.

Place the mixture in the refrigerator for about 1 hour to firm up slightly.

After chilling, take small portions of the mixture and roll them into bite-sized balls between your palms.

Place the remaining 1 cup of shredded coconut in a shallow bowl.

Roll each cream cheese ball in the shredded coconut, pressing gently to adhere the coconut to the exterior.

If desired, roll the coconut-covered balls in powdered sugar for an extra touch of sweetness.

Place the finished snowball delights on a baking sheet lined with parchment paper.

Refrigerate the snowballs for at least 1 hour, or until they are firm and ready to serve.
