Step 1
Beat egg white until peaks form, gradually add sugar and continue beating sugar until sugar is dissolved.
Step 2
Beat in egg yolks until combined.
Step 3
Sift flour, cornflour and baking powder together twice.
Step 4
Gently fold sifted ingredients into beaten egg mixture until no flour pockets remain. Mixture should be light and fluffy, do not overmix.
Step 5
Place heaped teaspoons of mixture about 5 cm apart on a greased tray.
Step 6
Bake at 170C for about 10 minutes or until golden.
Step 7
Join puffs together with whipped cream and refrigerate for 2 hours, dust with icing sugar before eating.
