Pressure-Cooker Carrot Cake Oatmeal

(20 ounces) crushed pineapple, undrained

carrots

steel-cut oats

raisins

cinnamon

pumpkin pie spice

Brown sugar, optional

Let me start by saying I really wanted to like this recipe. Just the sound of it made my mouth water. The end results, not so much. I followed the recipe to the letter. Actual closed pot time was closer to 35 minutes (time to come up to pressure cook time 10 minute natural release and then quick release) I did use an 8qt pot, but I'm not sure how much that affected things. The oatmeal came out soupier than I like. I prefer a thicker consistency, so I would probably cut the water back to 3 3/4 cups. The over all taste was a little too carroty (I used store bought pre-shredded carrots), so if I were to do this again, I'd use a very fine grater to shred only 1 cup worth of carrots, not 2. It was also kind of bland, especially without the brown sugar since the only sweetness is derived from the pineapple juice. Though a tablespoon of brown sugar helped, only 3 out of the 4 children (ages 9-17) finished their bowl. My hubs and I both finished ours, but it wasn't with the oohs and ahhs that I'd hoped for. 2 stars because it was edible, but not delicious.

I just loved this recipe the moment I read it.  After making it I loved it more, very healthy way to start the morning.  I used the 6 qt instant pot as it said to and it came out great.  It is a little thin just after taking the lid off but after stirring it and letting it cool down it does thicken up.  I made it the night before and took some to work with me this morning.  It was delicious and naturally sweet didn't even add the brown sugar.  Five Stars for sure!!!

After reading other reviews and online research, I added only 3 cups of water. I followed the recipe other than that. I thought the consistency was just right. I served it with toasted walnuts and brown sugar. Pretty good. I don't think I would cook the raisins in the pot next time, I prefer them sprinkled on top.

So easy and delicious! I grated my own carrots in my food processor, used an 8 quart Instant Pot, cut back the water by a cup and it's perfect. I agree about the raisins. I only had golden raisins, added 1/2 in the IP and then sprinkled a few over the it afterwards. I will make this often, and it's really good with a dollop of IP homemade Greek yogurt.

I just submitted a review and wanted to note that I used quick oats and not steel-cut oats.  Everything else was used as directed.

Followed the recipe as is. I’ll read the reviews first next time. If I were to make it again I would use less water and put in the raisins afterward. I probably won’t make it as the kids wouldn’t eat it.
