Step 1

In a small bowl, mix the salt, thyme, rosemary and garlic powder. Rub the mixture over the pork loin. Turn your Instant Pot to saute function and add the butter.

Step 2

Once the butter is melted, add the seasoned pork loin and saute on each side so there is a nice golden sear.

Step 3

Meanwhile, peel and slice your apples into a bowl of cold water with a splash of lemon juice.

Step 4

Remove the seared pork from the pot and add the Bourbon and orange juice. Scrape the bottom of the pan with your spatula to remove all the seared on bits.

Step 5

Drain the lemon water off the apples and add them to the pot along with the remaining ingredients. Place the pork loin back in the pot on top of the apples.

Step 6

Place the lid on the pot and turn the knob to seal. Cook on high pressure for 35 minutes. Allow the pressure to release naturally for 15-20 minutes.

Step 7

Remove the pork loin from the pot and allow to rest for 5 minutes before cutting. If you prefer a smooth apple sauce, use an immersion blender to blend until it reaches your desired consistency.

Step 8

NOTE: While the apple sauce is still pipping hot, taste test it to see if it is as sweet or savory to your preference. If it is too sweet, add another splash of apple cider vinegar. If it is too savory, stir in some more brown sugar until it dissolves.
