Preheat the oven to 375 degrees F.

Cook the sausage in a skillet over medium heat until browned and crumbly, about 5-7 minutes.

Drain the fat from the skillet.

Add the Neufchâtel cheese to the skillet. Cook and stir until melty and combined.

Transfer the skillet from the heat and set aside.

Unroll the crescent rolls and place 1/2 of the rolls into an 8x8-inch glass baking dish, pressing the seams together.

Top the crescent rolls with the sausage-Neufchâtel cheese mixture and sprinkle it with the cheddar cheese.

Top the dish with the remaining crescent rolls.

Season the top of the casserole with the salt and the pepper.

Bake the casserole until golden brown, about 20-25 minutes.

Transfer the dish from the oven and allow it to cool for 10 minutes before serving.
