I made this for a Thanksgiving  dish to pass at work.  I came home with an empty slow cooker.   Our company president said he hadn't had a sweet potato in 20 years because the last one was so bad, he loved this!  I used 7 cups of potatoes because I wanted to fill a 3 quart slow cooker and it was very sweet, I'm thinking with just 3 cups of potatoes less sugar might be better.  Also I cooked this using the high setting, I was worried about the eggs being thoroughly cooked.

I made these for a Thanksgiving crowd of 8 so I used 5 lbs of swt potatoes (3 giant ones, made about 10 cups mashed). I used the same butter & sugar - same amounts as this recipe for just 3 cups of swt potatoes, and only 4 eggs  (I did not double or triple the sweets and fats). Anyway the dish is still very very sweet (and I like sweets but wow) and the butter is pooling a lot on the top. I think you’d be fine to cut the sugar way down, as well as cut the butter way down. I’m not even sure what purpose the eggs serve in this recipe, I’m going to leave them out next time. It helps to food-process, use a mixer or a blender on the mashed potatoes to get a smooth fluffy base.
