Step 1
Begin making your one pot soy milk pasta by heating oil or dairy-free butter in a large non-stick deep skillet / pot over medium-high heat. Add minced garlic to cook for 1-2 minutes; allowing the garlic to slightly brown but not burn.
Step 2
Then, stir in the soy milk (unsweetened is preferred), vegetable broth (or vegetable bouillion) and nutritional yeast. Add the dry pasta and submerge it under the liquid. If the pasta doesn't fit completely yet, cook for a couple of minutes to allow the pasta to soften before gently pushing the rest into the skillet.
Step 3
Next, bring the pot to a boil. Once it starts to boil, reduce the heat low to simmer, stirring every few minutes to separate any pasta that sticks together.
Step 4
Simmer for about 20 minutes or until the pasta has cooked and the soy milk pasta sauce has thickened to your liking. If you find that there isn't enough liquid before the pasta is cooked, add small splashes of soy milk, vegetable broth or water as needed. Add salt and pepper to taste and enjoy your soy milk pasta!
