Step 1
Preheat oven to 400 F.
Step 2
Add 1 cup of vegan feta cheese to the centre of a baking dish.
Step 3
Add tomatoes, olive oil, garlic, red pepper flakes, salt and pepper, with the vegan feta in the middle.
Step 4
Bake for 20-30 minutes until the feta is golden on top and the tomatoes are nicely roasted.
Step 5
Meanwhile, boil water and cook pasta according to package directions.
Step 6
When done, add approximately ⅓ cup of pasta water to feta and tomato dish and mix well.
Step 7
Add the pasta and additional pasta water if needed and mix until pasta is well coated.
Step 8
Serve.
