In a large jar add; flour, vegan protein powder, sugar, baking powder, baking soda and salt. Shake to mix up. Alternatively, whisk everything in a large bowl, and transfer to an airtight container or plastic bag.

Step 2

To make the pancakes: In a medium-size bowl add 1 cup soy milk (I find soy works the best for these) and 1 tbsp apple cider vinegar. Let it sit for a minute or two. Then add 1 tsp vanilla extract(optional) and 1 cup of the pancake mix. Cook pancakes in a greased skillet for 2-3 minutes or until you see the bubbles in the centre stop "opening and closing". Flip and cook for another 1-2 minutes.
