Step 1

Place the plain flour, icing sugar, 1 egg, butter and vanilla extract in the mixing bowl. Mix 20 Sec. / Speed 6.

Step 2

If you don't have a Thermomix, place the plain flour, icing sugar, 1 egg, butter and vanilla extract in a large bowl and knead until you have a smooth pastry.

Step 3

Remove from the bowl and wrap in clingfilm. Chill for 30 minutes.

Meanwhile, halve the plums and remove the stones. Place in the mixing bowl with the caster sugar and water. Cook 10 Min. / 100C / Reverse Speed 1.

Step 5

If you don't have a Thermomix, halve the plums and remove the stones. Place in a large saucepan with the caster sugar and water. Cook for 10 minutes until slightly softened.

Step 6

Leave to cool entirely. Preheat the oven to 180C.

Step 7

Place the pastry on a floured surface and roll out to a circle about 35cm diameter. Place on a baking tray lined with greaseproof paper.

Step 8

Decorate the plums in the centre leaving a 3cm gap towards the edge. Sprinkle the blueberries on top.

Step 9

Crack the remaining egg in a bowl and whisk slightly. Then fold over the edges of the party to tuck in the plums, brushing it with egg while folding over. Sprinkle with the caster sugar and bake in the oven for 25-30 minutes until golden brown. Leave to cool slightly, then serve with a dollop of vanilla ice cream immediately. Enjoy!
