Step 1

Add milk, sugar and yeast to the mixing bowl and warm 2 Min. / 37°C / Speed 2.

Step 2

If you don't have a Thermomix, place milk, sugar and yeast into a saucepan and warm up until it is lukewarm. Stir at all times with a wooden spoon.

Step 3

Add butter in small chunks, flour, egg and salt (in this order!) and knead until smooth 2 Min. / Kneading function.

Step 4

If you don't have a Thermomix, place the milk-yeast mixture in a large mixing bowl. Add the butter in small chunks, add flour, egg and salt (in this order!) and knead until smooth. This process might take up to 10 minutes depending on your flour consistency and butter temperature.

Step 5

Cover the dough and leave to rise for one hour. Once risen, take the dough out of the bowl and place it onto a floured surface.

Step 6

Roll out the dough to a large rectangle approximately 45x30cm and 0.7cm thickness.

Step 7

Brush the melted butter all over the rectangle. Sprinkle the sugar, cinnamon, raisins and currants over evenly.

Step 8

Roll up the dough, starting on the long side. Once rolled up, cut off the first 3cm on each side. Now cut it into 12 individual buns and place on a baking tray lined with greaseproof paper. Cover with a tea towel and leave to rise for a further 45 minutes.

Step 9

Meanwhile, preheat the oven to 200°C.

Step 10

Uncover tray and place in the middle of the oven, baking them for 10-15 minutes until lightly golden brown.

Step 11

Remove from the oven and leave to cool. To make the filling, place the milk and icing sugar in  small bowl and, using a whisk, combine until you have a thick but runny icing. If it is too thick, add a bit more milk. Drizzle over the buns. Enjoy!
