Step 1
In a large mixing bowl, whisk together the flour, cake mix, sugar, baking powder, baking soda and salt. Set aside.
Step 2
Now in a small bowl add the flax and water and mix together to make flax eggs.(this is equal to 2 eggs). Let sit for a second to thicken.
Step 3
Now in a medium bowl, whisk together the flax eggs, vanilla, almond milk and vegetable oil. Fully combine, then pour into the large mixing bowl with the dry ingredients.
Step 4
Whisk together the wet and the dry ingredients until fully combined. Now stir in the sprinkles. Use 1/3 of a cup if you want less sprinkles and 1/2 a cup if you want a lot of sprinkles.
Step 5
Heat your waffle iron, spray with non stick spray and pour about 1/3 c. of batter into the waffle iron. Cook according to the waffle iron's instructions. Serve immediately with maple syrup or coconut whipped topping and more sprinkles.
