Put noodles into a large heatproof serving bowl, cover with freshly boiled water from the kettle and set aside for 3min. In a sieve, drain noodles, then rinse under cold water. Tip back into the serving bowl.

In a separate small bowl, combine the dressing ingredients and set aside.
Step 3
Halve the cucumber lengthways, scrape out and discard seeds, then slice. Add to the noodles with the cabbage, carrot, chicken, spring onions, chilli and most of the herbs.
