Step 1
Begin by making sure your perch is clean, cut and ready to be used. I purchase ours already cleaned, but if you catch it yourself make sure to clean it up.
Step 2
Using a medium to large size skillet, pour in enough oil for frying (approximately 1/2 inch), and turn on medium heat.
Step 3
While the oil is heating up, pour bread crumbs into a shallow bowl, pour the flour into another shallow bowl, and mix together the egg and water in a third shallow bowl.
Step 4
Take a piece of perch, rub in flour, then give it an egg wash and then cover it in breadcrumbs.
Step 5
Repeat for each piece of perch.
Step 6
Once your oil is ready to go, begin to fry your perch. You don't want to overcrowd the skillet. Place 4 or 5 pieces of perch in the skillet, fry on the first side for approx 3-4 minutes then flip and cook for 3-4 minutes.
Step 7
Once the perch is done, place on a paper towel first to absorb all the excess oil. Then serve with fries and tartar sauce, or in our households case ketchup!
