Pure soul food, this warming, easy chicken soup makes the most of leftover roast chicken. It's a simple soup recipe, so really relies on the quality of the stock

Inexpensive and quick to prepare, these delicious sweet potato röstis work brilliantly with a salad, as a burger filling or as a lunch box snack. To make this vegan, swap the mayonnaise for vegan mayonnaise.

Got 20 minutes, a pound of ground beef, and some broccoli on hand? You are so lucky: You have the core of this easy Ground Beef &amp; Broccoli Stir Fry recipe all ready to go, the next time you need a quick weeknight dinner idea.

20 minute Ground Beef & Broccoli Stir Fry

beef

soy sauce

Tbsp brown sugar

tsp minced garlic (about 4 cloves)

cornstarch

tsp sesame oil

ginger

1/4-1/2 tsp crushed red pepper

rice

green onions (chopped (optional))

Start the rice cooking so that it’s ready for serving, if you don’t have pre-cooked rice handy. (Cooking rice will add a few minutes to the meal; the beef and broccoli part itself, however, takes just 20 minutes.)

Brown ground beef in a large skillet over medium-high heat until just cooked through, breaking it into bite-sized pieces as you go, but not crumbling. Drain the fat and return the beef to the pan.

While the beef is cooking, combine the sauce ingredients and chop your broccoli. Stir the broccoli and sauce into the skillet with the browned ground beef.

Continue to stir fry the beef and veggies over medium-high heat for about five minutes until broccoli is crisp-tender and sauce has thickened, stirring occasionally.

Serve your beef &amp; broccoli stir fry over cooked rice, topped with optional chopped green onion and/or sesame seeds.

A simple salmon pasta that’s ready in under 15 minutes. This recipe makes two generous servings or three lighter meals. It’s also very easy to double up.

Based on two servings, each serving provides 869 kcal, 37g protein, 58g carbohydrates (of which 5g sugars), 52g fat (of which 21g saturates), 7g fibre and 1.2g salt.


Salmon and broccoli pasta 

150 grams/5½oz dried pasta, any kind

This fresh-tasting vegetable pasta is ready in about 15 minutes and is perfect for a quick healthy lunch or dinner.

150 grams/5 ounces whole wheat pasta,

spinach leaves (around 75 grams/2½oz)

Okonomiyaki are traditional Japanese fritter-like pancakes that are great for using up a head of white cabbage. Serve with okonomiyaki sauce, Japanese mayonnaise or your favourite hot sauce.

20-Minute Beef And Broccoli Noodle Stir-Fry Recipe by Tasty

¾ lb flank steak, thinly sliced

½ medium yellow onion, thinly sliced

green onion, sliced

Place the ramen noodles in a large bowl (discard the seasoning packets or save for another use) and pour the boiling water over them. Let sit for 6 minutes, stirring every now and then to break up the noodle blocks. Drain and rinse under cold water. Set aside.

In a small bowl, combine the garlic, cornstarch, sesame oil, lime juice, and soy sauce. Stir well, then set aside.

Place the broccoli in a large, microwave-safe bowl and microwave for 1½ minutes, until soft. Set aside.

Heat 1 teaspoon of olive oil in a large, nonstick pan over high heat. Add the steak to the pan and toss with 2 tablespoons of the reserved sauce. Cook until browned, about 2 minutes. Remove from the pan and set aside.

Heat another teaspoon of olive oil in the pan, then add the onion. Cook, stirring often, until browned, about 4 minutes.

Add the broccoli and cook until lightly browned, about 2 minutes. Remove from the pan and set aside.

Add the remaining teaspoon of olive oil to the pan, then add the noodles and the remaining sauce. Cook, stirring constantly, until the noodles soak up the sauce. Return the cooked vegetables and steak to the pan and stir to distribute.

Transfer the noodles to a serving dish and garnish with green onions, cilantro, and sesame seeds, if using.

Quick peanut and chilli noodles

100 grams/3½oz dried wholewheat noodles

peanut butter (around 3 tbsp)

tbsp grated fresh root ginger

tbsp tamari or soy sauce

Seared New York Strip Steak Recipe by Tasty

new york strip steaks, room temperature (1 in thick 2.5 cm)

kosher salt,

unsalted butter, cold

shallot, thinly sliced

Liberally season the steaks on both sides with salt and pepper.

Heat the canola oil in a large oven-proof skillet over medium-high heat. Add the steaks and sear for 3–4 minutes, until a golden brown crust forms. Flip the steaks and sear for 1–2 minutes on the other side, then add the butter, shallot, garlic, and thyme to the pan. Baste the steaks with the butter and continue cooking for 2 more minutes.

If the steak isn’t cooked to your liking, transfer to the oven and cook for 3–5 minutes, or until it reaches your desired temperature.

Transfer the steaks to a cutting board and let rest for 10 minutes, then slice and serve.

A one-pot comfort food dream with savory sausages, a rich curry gravy, and lightly cooked vegetables. I like to serve this sausage curry over mashed potatoes but it would be just as good over rice or noodles.

Sausage Curry

oil (for frying)

curry powder

all-purpose flour

Heat pan.

Heat oil in a large skillet, over medium high heat.

Fry sausage.

Add sausage slices and cook for about 3-4 minutes per sides or until browned and cooked through.

Fry onion.

Add oil, if needed and the onion and carrot. Cook for about 5 minutes, stirring, until browned and starting to soften.

Fry garlic.

Add the garlic and cook for about 30-60 seconds, or until fragrant, not browned.

Melt butter.

Make roux.

Add the flour and curry powder and stir them into the melted butter. Stir everything in the pan together and cook for a  minute or two, cooking the flour and the curry powder.

Add stock.

Add the chicken stock and soy sauce, and bring to a boil. Turn the heat down to medium low, and add the peas. Simmer for 3 minutes or until peas are heated through.

Add Cream.

Add the cream and heat for a minute or two.

Serve.

For a creamy curry in under 10 minutes, add this super simple curry sauce to stir-fried chicken, lean meat, fish or seafood, mushrooms or vegetables.
