Beef Tenderloin Steaks with Peach Whiskey Sauce

unsalted butter

½ large peachpeeled and chopped

shallot

dark brown sugar

cider vinegar

whiskey

Worcestershire sauce

½ teaspoon Maggi® Granulated Beef Flavor Bouillon

Melt butter in large saucepan over medium heat. Add peach; cookstirring frequentlyfor 2 minutes. Add shallot; cookstirring frequentlyfor 2 minutes. Add sugarvinegarwhiskeyWorcestershire saucebouillon and pepper; cook for 6 minutes or until thickened.

Puree with immersion blender or regular blenderleaving mixture a little chunky. Keep warm.

Preheat grill. Season steaks with salt and pepper. Grillturning halfway through cooking timefor 6 to 8 minutes or until desired degree of doneness.

Let stand for 5 minutes. Serve with Peach Whiskey Sauce.

Prepara un caramelo con el azúcar y el agua, vierte en un molde. Reserva.

Prepara un caramelo con 1 Taza de azúcar y ¼ Taza de agua, vierte en un molde, deja enfriar.

Para acaramelar el molde.

Aparte lleva al fuego 2 Tazas de agua junto con el arroz, la sal, la canela y la nuez moscada, deja cocinar hasta que el arroz este blando.  Retira del fuego, deja refrescar.

Modo de Preparo

Licua el arroz reservado junto la Leche Evaporada CARNATION® UHT, la Leche Condensada LA LECHERA®, la mantequilla, la ralladura de limón, la vainilla y los huevos.

Vierte esta mezcla en un molde acaramelado, tapa, lleva al horno en baño de maría, cocina por 1 hora o hasta que al introducir un palillo este salga limpio. Retira del horno deja refrescar, desmolda, reserva.

Aparte lleva al fuego ¼ Taza de agua junto con ½ Taza de azúcar y las pasas, cocina hasta formar un almíbar ligero, retira del fuego, deja refrescar y sirve con el flan reservado.

cold filtered water ((or equal to weight of your shot))

pull espresso shot

Pull a shot of espresso. If you’re like me, you already brew on a coffee scale, but if not, weigh out your finished espresso in grams.

pour over ice, add saline

While still hot, pour espresso into an 8 ounce glass filled with ice, and stir until chilled. If using saline, add 3 drops and stir to cut back on bitterness.

add water, stir, and serve

 Using a kitchen scale, add an equal amount of water to the weight of the espresso shot you used. Stir until the Americano is chilled, then serve.

Only if using an espresso machine

sweeten, add milk

Sweeten with your favorite sweetener and a splash of milk or half and half.

Optional Step

Great tip with sourcing coffee from local cafes, that’s definitely the way to go. The saline also makes a very big improvement too!!
