Preheat oven to 375 degrees F. Line 12 muffin cups with paper liners. Set aside.

In a large bowl, stir together sugar, oil and eggs. Add pumpkin, applesauce and vanilla. Sprinkle baking soda, baking powder and salt over top. Stir until well blended.

Stir in flour, cinnamon, nutmeg, cloves, allspice and ginger; be careful not to over-mix.

Divide batter evenly among prepared muffin cups. Sprinkle coarse sugar on top. Bake for 15-20 minutes, or until a toothpick inserted in a muffin comes out clean.

Preheat the oven to 350 degrees F. Lightly grease 10 wells in a standard 12-cup muffin tin with nonstick spray or line with paper liners.

In a large bowl, mix together the applesauce, honey, eggs, coconut oil, and vanilla. In a separate bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, allspice, nutmeg, and sat.

Add the flour mixture to the bowl with the wet ingredients and stir just until combined. The batter will be a little lumpy. Gently stir in the rolled oats and any other desired mix-ins.

Divide evenly among the muffin cups, filling each almost to the top. Sprinkle the tops with coarse sugar, if desired. Bake for 18 to 22 minutes, until a toothpick inserted into the center comes out clean. Remove from the oven and place the muffin tin on a wire rack to cool for 10 minutes, then gently remove the muffins from the pan (run a butter knife around the edges if the muffins are sticking) and let them cool completely on the wire rack.

Applesauce Crumb Muffins

Big, moist, fluffy Applesauce Muffins are made with more wholesome ingredients than you&#39;ll find in typical bakery-style muffins! These muffins have a soft, moist interior with a crunchy and sweet cinnamon-sugar topping. 

Healthy Applesauce Muffins

(8 grams) cornstarch

fine sea salt

apple pie spice (Note 1)

(172 grams) applesauce (sweetened or unsweetened -- Note 2)

(117 grams) vanilla

(50 grams) melted coconut oil

(90 grams) light brown sugar, (lightly packed)

apple pie spice ((or use ground cinnamon))

(45 grams) light brown sugar (not packed)

PREP: Preheat the oven to 350 degrees F (176 degrees C). Coat 12 cavities of a muffin tin with nonstick spray and lightly flour. Do not use muffin liners as these muffins will stick to them. Set aside. Melt the coconut oil in the microwave-- after melting, set aside to cool to room temperature. Remove the Greek yogurt and egg from the refrigerator so they can come to room temperature.

DRY INGREDIENTS: In a large bowl, add in the flour, cornstarch, baking soda, salt, apple pie spice, and cinnamon. Mix until combined.

WET INGREDIENTS: In another bowl, combine the applesauce, room temperature egg, Greek yogurt, cooled coconut oil (don&#39;t add it in hot or even warm!), vanilla extract, brown sugar. Whisk until well combined.

COMBINE: Mix the wet and dry ingredients until JUST combined. Over-mixing yields denser muffins.

BAKE: Fill up 10 to 11 muffin cavities evenly with the mixture -- each cavity will be a little over 3/4ths the way full. You should use all the batter on 10 to 11 cavities so fill them pretty full. We typically get 10 full muffins from this recipe. Fill any empty cavities of the muffin tin halfway up with water to ensure even baking. Bake for 17-23 minutes or until a fork when inserted in the center comes out clean.

COOL: Remove and allow to cool for a few minutes before removing the muffins from the tin. After cooling about 5 minutes, use a spoon to coax the muffins out and onto a wire cooling rack. Let muffins cool to warm on wire cooling rack.

TOP MUFFINS: In a small bowl, toss together the apple pie spice or cinnamon and brown sugar. In another small bowl add the melted coconut oil. Dip the warm muffins in the melted coconut oil and then dip them in the sugar mixture. Spoon extra sugar mixture on top and press it into the muffin. Repeat for all the muffins.

STORAGE: Once completely cooled, store the muffins in an airtight container at room temperature. Applesauce Muffins are best eaten within 2-3 days. To freeze/thaw: Cool muffins completely before wrapping and freezing. To freeze: Wrap muffins individually in plastic wrap and then place in large freezer bags. To thaw: Set out at room temperature, or heat frozen muffins in the microwave.

cups (245 grams) whole wheat flour (spoon & leveled)

(58 grams) old-fashioned whole rolled oats

teaspoon baking soda

teaspoon baking powder

teaspoon salt

(320 grams) unsweetened applesauce, at room temperature*

2 large eggs,

cup (80 milliliters) milk (dairy or non dairy), at room temperature

teaspoon pure vanilla extract

(110 grams) raisins*

Preheat oven to 425°F (218°C). Spray a 12-count muffin pan with nonstick spray or use cupcake liners. If using cupcake liners, spray the liners because when warm, these muffins stick.

Whisk the flour, oats, cinnamon, baking soda, baking powder, and salt together in a large bowl until combined. Set aside. In a medium bowl, whisk the applesauce, eggs, oil, maple syrup, milk, and vanilla together until combined. Pour the wet ingredients into the dry ingredients, stir a few times, then add the raisins. Fold everything together gently just until combined and no flour pockets remain.

Spoon the batter into liners, filling them all the way to the top. Top with oats and a light sprinkle of coarse sugar, if desired. Bake for 5 minutes at 425 then, keeping the muffins in the oven, reduce the oven temperature to 350°F (177°C). Bake for an additional 15-16 minutes or until a toothpick inserted in the center comes out clean. The total time these muffins take in the oven is about 20-21 minutes, give or take. (For mini muffins, bake 11-13 minutes at 350°F (177°C) the whole time.)

Allow the muffins to cool for 5 minutes in the muffin pan, and then transfer to a wire rack to continue cooling or enjoy warm.

Muffins stay fresh covered at room temperature for a few days, then transfer to the refrigerator for up to 1 week.

Pre-heat oven to 400F (200C), grease and flour a 12 medium size muffin tin.

In a medium bowl whisk together the flour, cinnamon, baking powder, baking soda and salt.

In a large bowl whisk until combined the melted cooled butter, eggs, Applesauce and sugars.

Add the dry ingredients into the wet ingredients and mix just until combined, stir 15-16 turns only. The batter will be a bit lumpy but that is fine.

Spoon into the prepared muffin pan and sprinkle with cinnamon sugar . And bake for 10 minutes, then reduce heat to 350F (180C) and continue to bake for 10-15 minutes. Test for doneness with a toothpick, if it comes out with 2-3 crumbs attached or dry they are done.  Let cool for about 10 minutes then move to a wire rack to cool completely. Enjoy!

Preheat the oven to 350 degrees Fahrenheit.

Place all ingredients in a blender. Blend everything on high for a minute or two until a smooth batter forms.

Place 10 muffin cups into a muffin tin and pour the batter divided evenly between the cups. Sprinkle the tops with extra oats and gently press them down (sprinkle a little sugar and cinnamon to the tops if you&#8217;d like).

Bake for about 25 to 30 minutes until a toothpick comes out clean. Remove from the muffin tin and allow them to cool a few minutes before serving. Store refrigerated or frozen.

Love these! They are so easy and tasty. I never use a blender and I also use quick oats and they still turn out great. I add raisins and nuts, and use flax for eggs.  So good warm with some Earth Balance spread.

These muffins are easy and fabulous!  I added 1/3 cup unsweetened coconut because I've found that it improves the texture of GF muffins.  After blending, I also stirred in 1/3 cup of dried cranberries.  On the tops I pressed finely chopped candied ginger.  The results were 12 excellent muffins!  I was surprised by the full tablespoon of vanilla, which seemed like an unusually large amount, but it seemed fine.  Thanks for the great recipe!

I went apple picking crazy last year and made batches of homemade applesauce. A friend of mine sent me this recipe and it has become a staple in our house for the past year! EVERYONE that has eaten one of these LOVES them! I use organic oats from a local farmer in town and instead of brown sugar I replace with coconut. THANK YOU for this!!!!!

Can you substitute anything for the maple syrup?

This is one of the BEST muffin recipes I have ever made. Consistently moist and delicious. I added a half cup of dried tart cherries and they are simply outstanding. I make them about every two weeks as they disappear pretty quickly. Thanks for this wonderful, healthy and easy recipe.

These muffins are amazing! I reduced the maple syrup to 1/4 cup since I like my muffins on the less sweet side and they turned out great. The applesauce and raisins not only add flavor, moisture, and texture but also sweeten the muffin. The second time I made these muffins I was out of raisins, so I decided to add about two cups of blueberries instead and, well, that was a really great decision. Overall, these muffins are fluffy, wholesome, moist, and delicious!

While being healthy these muffins are not sweet enough. My main pet peeve is that sweets are too sweet! However I cannot taste the applesauce distinctly and they are very Bland

These were very tasty. I made half the recipe and did a 60/40 whole wheat to white flour mix, used canola oil and a mix of white and brown sugar. I'll definitely make them again, but maybe add some walnuts next time just to add protein.

I really like these muffins and make this recipe often. I substitute avocado oil for the coconut oil. I have heard that it is healthier and it is flavorless which I prefer. Also by using the avocado oil I don’t have to worry about my other ingredients being room temperature. I just throw in all of the ingredients straight from the refrigerator and I have never had a problem with the recipe.

These applesauce muffins are one of my favorite muffin recipes out there. Comes together in minutes and is pretty easily adaptable. Since I rarely ever have maple syrup in the house, I subbed about 40g of brown sugar which was plenty sweet enough. I've also made them with monkfruit sweetener with success. Plus, the whole wheat flour and oats make these a welcome addition to my breakfasts. They're wonderful plain, though perhaps next time I'll add some apples or nuts. I did a 1/2 white and 1/2 wheat flour mix. Then topped them with a cinnamon oat streusel crumble before baking. Very nice.

I've made this several time and I love it. I use my mom's homemade canned apple or pear sauce if I have it on hand and it makes it even more delicious. I also keep this recipe on hand when I am doing a sugar-lite diet occasionally. I throw in half a cup of chocolate chips when I want my kids to enjoy them with me.

Apple Oatmeal Muffins make a great breakfast or quick afternoon snack.  Filled with apples, cinnamon, and oatmeal, then topped with an easy oat streusel, these apple muffins are an easy grab and go breakfast.

Apple Oatmeal Muffins

all-purpose flour

oatmeal

milk or apple cider

vanilla

apple

Tablespoons all-purpose flour

Tablespoons brown sugar

Tablespoons butter

Preheat oven to 400 degrees F.  Spray a 12 count muffin tin with cooking spray or line with paper liners and set aside.

In a large bowl, combine the flour, oats, sugar, cinnamon, baking powder, baking soda, and salt.

In a separate bowl, whisk together the eggs, milk, applesauce, oil, and vanilla.  

Make a well in the center of the dry ingredients and add the wet ingredients, stirring just until combined.  Fold in the chopped apple, then divide evenly between the 12 muffin cups.  

Combine all of the streusel ingredients together in a small bowl, then sprinkle over each muffin.  Bake the muffins for 15 to 20 minutes until a toothpick inserted into the center of the muffins comes out clean.  

Perfectly spiced and just sweet enough, these Applesauce Muffins are a yummy breakfast or snack. We like these on their own, topped with nut or seed butter, or even with a smear of cream cheese. See what your littles like!

Stir together the applesauce, butter, milk, egg, and vanilla in a medium bowl.

Add the flour, oats, sugar, baking powder, baking soda, cinnamon, and salt and gently fold together.

Fill prepared muffin tin to the edge of each cup. Bake for 16-20 minutes or until lightly browned around the edges and cake tester inserted into the center comes out cleanly.

(You can also bake in a 12-cup standard muffin pan with about 1/4 cup batter in each cup for 22-24 minutes or until a toothpick comes out cleanly.)

Remove from oven, let cool for about 2 minutes in the pan, run a paring knife around the edges if needed, and remove to cool on a wire rack. (Or sort of just tilt in the pan to allow air under the muffins.)

Serve warm or at room temperature.
