Best baked cod recipe out there! Prepared Greek style with a few spices and a mixture of lemon juice, olive oil and lots of garlic. Bakes in 15 mins!

Mediterranean Baked Cod Recipe with Lemon and Garlic 

1.5 lb Cod fillet pieces (4-6 pieces)

garlic cloves,

parsley leaves

lemon juice

tbsp Private Reserve extra virgin olive oil

tbsp butter

all-purpose flour

tsp coriander

tsp sweet Spanish paprika

tsp cumin

salt

tsp black pepper

Mix lemon juice, olive oil, and melted butter in a shallow bowl. Set aside

In another shallow bowl, mix all-purpose flour, spices, salt and pepper. Set next to the lemon juice mixture.

Pat fish fillet dry. Dip fish in the lemon juice mixture then dip in the flour mixture. Shake off excess flour. Reserve the lemon juice mixture for later.

Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add fish and sear on each side to give it some color, but do not fully cook (about a couple minutes on each side) Remove from heat.

To the remaining lemon juice mixture, add the minced garlic and mix. Drizzle all over the fish fillets.

Bake in the heated oven for until it begins to flake easily with a fork (10 minutes should do it, but begin checking earlier). Remove from heat and sprinkle chopped parsley.

Serving suggestions: Serve immediately with Lebanese rice and this Mediterranean chickpea salad or this traditional Greek salad.

I’ve tried a few different  cod recipes this past month. This is by far the best. Flavorful, moist, with a crunchy outer coating, it is deeeeeelicious, easy to make and quick. Major yum!!! I highly recommend!

Delicious, I live in Florida and didn't want to put on the oven. Used tilapia and finished in the sauce covered in too of the stove. Still wonderful.

This recipe is a keeper.  It was quite good.  The recipe itself is easy, to follow, especially after watching the video.  I substituted almond flour for regular flour because that's all I had on hand!  Also, i sprinkled zest from the lemon I juiced and sprinkled that over the fish before serving.

Tasted superb and easy to follow recipe. Was great with roasted rosemary and olive oil baby pototoes.

Cajun Seasoning

Preheat oven to 400 degrees.  In a 9x13 inch baking dish add the cod and sprinkle with salt and pepper

To make the Cajun Garlic Butter Sauce:  In a small bowl whisk together the melted butter, olive oil, garlic and cajun.  Spread evenly over the fish.

Bake for about 15 minutes or until the fish is opaque and flakes easily.

I made this with Whiting since my monger was out of cod.  Great recipe, super simple.  My family loved it.  I didn’t have rice so I used some angel hair with garlic and oil and pepper flakes. Hands down this is the best recipe for fish I have ever cooked! The seasonings are perfection! I doubled the coating amounts and the lemon sauce amounts - next time I will triple because they are so delish!  I used Whole Foods frozen cod (365 WF brand) and the portions were perfect!

Lemon Butter Baked Cod {The Best!}

unsalted butter (softened)

First, preheat your oven to 400 degrees F. Then, in a small bowl, mix butter, garlic, paprika, basil, salt and pepper. Set aside.

Take out 4 (6 ounce) fresh cod fillets and pat the extra moisture off of them using a paper towel. If they are frozen, make sure to thaw them out completely.

Then generously season the top and bottom of each fillet with salt and pepper.

Place the seasoned cod fillets into a small deep baking dish then evenly distribute the butter mixture on top.

Place a slice of lemon on top of each cod fillet and bake in the oven at 400 degrees F for about 14-15 minutes or until the cod is at least 145 degrees F in the center of the fish. A good way to tell your cod is fully cooked is when it is opaque and easily flaked with a fork.

Garnish the baked cod with 2 tablespoons of freshly chopped parsley. Serve with a side of vegetables, pasta, or rice.

Preheat your oven to 400F/200C. Place the cod in a baking dish.

Lay the lemon slices both on top and under the cod filets.

Baked Cod with Tomatoes, Basil, Garlic and Lemon- a fast and easy weeknight dinner that is healthy and delicious!

Baked Cod with Burst Tomatoes 

olive oil,

red wine vinegar, or sherry vinegar

shallot, sliced

garlic cloves, rough chopped

pepper

cherry or grape tomatoes

lemon – zest (set aside) and lemon slices

salt, pepper and Aleppo chili flakes

basil leaves

Pour 3 tablespoons olive oil and vinegar into a 9 x13 inch baking dish.  Scatter the shallots and garlic. Add the tomatoes, salt, pepper and lemon slices and toss. Roast 10 minutes. Give the tomatoes a good shake.

While tomatoes are roasting, pat the fish dry and brush with a little olive oil and sprinkle with salt and pepper and Aleppo chili flakes. Nestle the fish in the baking dish,  between the tomatoes.

Bake the fish for  8-10 minutes then give the pan a good shake, jostling the tomatoes a bit.  Scatter with lemon zest. Bake 3-4 more minutes or until fish is cooked through to your liking.

When done, add the torn basil leaves, tossing them with the warm tomatoes with tongs so the basil wilts slightly.   Then garnish each piece of fish with a few wilted basil leaves.

This was so delicious and beautiful! And dead simple. I’ve made it twice so far. I even love eating the slightly roasted lemon slices. I serve it with steamed zucchini. This is going into our regular rotation!

Substituted salmon for cod.  Simple and tasty, served it at a party as a second heavier entree and it worked well.

Made this tonight for the 1st time, PERFECT! I followed the instructions as given (maybe I added a little more garlic 😉) and the whole family loved it. Even my son who hates cooked tomatoes ate the whole thing! He said these were the only kind of cooked tomatoes he’d ever eat. Woah.. Perfectly cooked fish, light and flaky. Very good.  I’d recommend piercing the tomatoes before cooking.  Since I didn’t have fresh basil, I sprinkled the cod with crab seasoning.

So glad I found this dish makes the fish so much more enjoyable and definitely going in my folder to use again. I did sautéed potatoes and courgette to go with it, the perfect match.

Made this tonight as just what I needed to use available ingredients. It was very tasty and can be altered accordingly.

Unfortunately this dish didn’t do it for me. I followed the recipe to a tee. I felt like the Cod was fairly bland, it just tasted like whatever I seasoned it with (so basically, salt, pepper, chili flakes, and lemon). It definitely was healthy and looked beautiful, but the flavors weren’t there for me. Any suggestions? Or is cod just simply a more mild fish?

Went to supermarket snd there was a pack of reduced Atlantic cod so Just made this I used 3 large old tomatoes chopped which I had in and dried basil which I had it was absolutely delicious my mouth is still zinging! Simple Baked Cod 

Parmesan Baked Cod is mildly flavored cod topped with Parmesan cheese, paprika and parsley, then roasted to perfection. An easy, tasty dinner that’s quick to make and perfect for busy weeknights! 

Parmesan Baked Cod

Parmesan cheese

Panko breadcrumbs* (optional, for extra crispy fish)

parsley

extra virgin olive oil or avocado oil

(6 ounce) cod fillets

Preheat the oven to 400ºF (205°C). Line a baking sheet with parchment paper or foil. Alternatively, a glass dish can be used for baking the fish.

In a shallow bowl, mix together the Parmesan, Panko breadcrumbs (if using) paprika, parsley and salt (if using). Drizzle the cod with olive oil (rubbing it into the front and back of the fillet), then dredge the fish in the cheese mixture, pressing it in lightly with your fingers. Transfer to the baking sheet pan. Top cod with any leftover cheese mixture.

Bake until the fish is opaque in the thickest part, 10-15 minutes. Serve with the lemon slices.

Parmesan Crusted Cod

One dish meal! Baked cod recipe with lemon butter and vegetables ready in 30 minutes! The cod fillets are tender flaky and oven baked to perfection, plus easy!

Baked Cod With Herb Lemon Butter Sauce

olive oil (divided)

½+ ¼ tsp coarse sea salt

zucchini (dice to rounds, about 2 medium zucchini)

carrots (diced to small cubes)

tbsp unsalted ghee

tbsp tahini (or pure sesame paste)

tsp lemon zest (about 1 whole lemon, save the lemon

parsley leaves (leaves only no stems)

cilantro leaves (leaves only no stems)

tbsp finely chopped chive

¼ tsp coarse sea salt (or

ground black pepper (or to taste)

Season

Pat dry the cod and place them in a 12-inch round casserole skillet (or dish) that’s oven safe. Season the fish with 2 tbsp olive oil, ½ tsp salt, and a few rounds of black pepper.

Place the sliced zucchini around and between the fillets. Don’t cover the fillets so the fish can cook evenly. Add the diced carrots. Sprinkle ¼ tsp salt and 1 tbsp oil over the vegetables.

Send it to the oven, uncovered, in the middle rack for 20 minutes. The fish is cooked when the center internal temperature reaches 145°F (63°C), or until the fish is opaque and flakes easily with a fork.

Make

In the meantime, make the herb butter. Combine all the ingredients from butter to pepper in a small bowl. Use a fork to mash and combine well.

Combine

As soon as the fish is out of the oven, while it's still hot, drizzle with 1 more tbsp of olive oil. Add about 1 tbsp of the herb butter on top of each cod fillet. Cover the pan for 5 minutes to allow the butter to melt.

Serve

Drizzle with lemon juice and serve with sliced lemon wedges on the side. Serve immediately.
