CHOCOLATE CHIP BANANA BARS

bananas (about 1 2/3 cup)

brown sugar

milk

eggs

flour

tsp baking soda

tsp salt

cinnamon

mini chocolate chips (divided)

Heat oven to 350 degrees F. Spray a 15×10.5? pan with non-stick spray.

Peel bananas and mash well. Stir in brown sugar, oil, milk and eggs until combined. Add in dry ingredients and stir. Fold in 1/2 the chocolate chips.

Spread the batter into the prepared pan and sprinkle remaining chips on top. Bake 18-22 minutes, until a wooden toothpick inserted in center comes out clean. Cool completely and cut into squares.

Yields 24 bars.

This is an easy banana bread recipe that gives perfect results every time. Be sure to use really ripe bananas - the blacker the better.

In a large, microwave-proof bowl, combine the milk and melted butter. Microwave for 40 seconds, until the milk mixture reaches 110˚F (45˚C). Add the yeast, then let sit for 10 minutes.

Add the granulated sugar, salt, mashed bananas and stir.

Add 3½ cups (435 g) of flour, ½ cup (60 g) at a time, stirring between each addition.

Transfer the dough to a floured surface and knead for 3 minutes, adding more flour ¼ cup (30 g) at a time if the dough is sticking to your hands or the surface. Form the dough into a ball.

Add the oil to clean large bowl and place the dough in the bowl. Cover with a kitchen towel and let rise for in the refrigerator for at least 3 hours, or overnight, until doubled in size.

Once the dough has risen, roll it out to a ¼-inch-thick (6-mm) rectangle about 18x12 inches (20x30 cm).

Make the filling by mixing the melted butter, granulated sugar, and cinnamon together in a small bowl.

Spread the filling evenly over the dough. Roll up the dough and slice into 15 1½-inch (4-cm) thick slices (discard the ends).

Make the caramel sauce: In a small saucepan over medium heat, combine the butter, brown sugar, salt, vanilla, and honey. Keep stirring to prevent the sugar from sticking to the pan. Bring to a gentle boil, then remove the pan from the heat.

Pour the caramel sauce into a 9x12-inch (23x30-cm) baking dish and sprinkle the walnuts on top of sauce. Arrange the rolls in the dish so there are 3 rows of 5 rolls.

Cover with plastic wrap and let the rolls rise for 15 minutes, in a warm place.

Remove the plastic wrap and bake the cinnamon rolls for 40 minutes, or until light golden brown.

Let cool for 20 minutes, then invert the rolls onto a serving platter. Leftover cinnamon rolls can be stored up to 5 days in the refrigerator. Reheat in the microwave or oven.

Chocolate tahini pudding with tahini cream and date molasses

grams/1¾oz tahini,

grams/1¾oz full-fat Greek-style yoghurt,

60 grams/2¼oz plain flour (or gluten-free flour)

¼ tsp fine sea salt

250 milliliters/9fl oz double cream

date molasses, for drizzling

This subtly scented ice cream is found in South East Asia and often in the UK too. The no-churn version in this recipe goes really well with the sweet tatin, but will also go further, leaving enough for a few extra desserts.

397 grams/14 ounces tin condensed milk

500 milliliters/18fl oz double cream

cardamom pods, seeds removed and crushed

4–5 bananas, sliced into 2cm/¾in coins

Pour the sweetened condensed milk into a baking dish. Cover with aluminum foil and set in a larger baking dish. Fill the larger dish with hot water until it reaches halfway up the sides of the smaller dish.

Place in the oven and cook for 90 minutes. Check the water level occasionally, making sure that it reaches halfway and refilling as necessary.

Carefully remove the baking dish from the hot water bath and let cool to room temperature. Whisk the mixture (now it’s dulce de leche!) until smooth.

Reduce the oven temperature to 350˚F (180˚C).

In the bowl of a food processor, combine the graham crackers and melted butter. Pulse until crackers are finely ground and the mixture resembles wet sand.

Grease a 9-inch (22 cm) tart pan with nonstick spray. Add the graham cracker mixture to the tin and press evenly to cover pan completely.

Bake crust for 5 minutes, until golden and fragrant. Transfer to a wire rack and let cool to room temperature.

Spread the dulce de leche in the cooled tart crust, using a flexible spatula to smooth it into an even layer. Cover and refrigerate for at least 4 hours or up to overnight, until set.

In a large bowl, beat the heavy cream until soft peaks are just beginning to form. Add the sugar and beat until soft peaks form.

Remove the pie from the refrigerator. Scatter the banana slices over the dulce de leche. Top with the whipped cream, spreading evenly to cover bananas, and garnish with chocolate shavings.

Banana Brownies are a delicious banana dessert you are sure to love! The chewy, fudgy, dense texture of a brownie with dreamy banana flavor!

Preheat oven to 350

In a large glass bowl, melt the butter and white chocolate about one minute, stirring every 20 seconds until melted.

Stir in the sugar.

Add mashed bananas, eggs, salt, and vanilla and stir until well combined.

Add the flour and stir until incorporated.

Spread batter into a 8" square pan and bake 15-20 minutes or until toothpick inserted into the center of the banana brownies comes out clean.

Cool completely before cutting.

Store covered at room temperature for one day, or refrigerated for up to 5 days.

150 grams/5½ oz digestive biscuits (about 10)

75 grams/2¾oz light muscovado sugar

x 397 grams/14 ounces full-fat condensed milk (see tip)

These easy, healthy vegan flapjacks use a mixture of mashed bananas and coconut oil instead of traditional butter, but keep the classic addition of golden syrup for a bit of extra sweetness. If you’re avoiding refined sugar, swap the golden syrup for equal parts maple syrup.

Each serving provides 240 kcal, 5g protein, 29g carbohydrate (of which 14g sugars), 10g fat (of which 6g saturates), 5g fibre and 0.2g salt.

Banana Cream Pie Recipe

cornstarch, divided

bananas, peeled and sliced into 1/2" rounds

8-10 mini Nilla wafers

Place ingredients into a mixing bowl and stir together until fully combined.

Pour crust mixture into a 9 inch pie dish and evenly press mixture into the bottom and sides of the dish.

Refrigerate for 1 hour, until crust is firm.

Line bottom of chilled crust with a layer of banana slices and set aside.

Place milk, sugar, 3 tablespoons cornstarch, and salt into a saucepan and place over medium heat. Whisk mixture until smooth and bring to a simmer, occasionally stirring with a wooden spoon until thick enough to coat the back of the spoon, 5 to 6 minutes.

In a small bowl, whisk together remaining tablespoon cornstarch and egg yolks until mixture is smooth.

Remove 1 cup hot milk from the pot and whisk into the yolks (in a mixing bowl) in a very slow and steady drizzle, making sure not to scramble the yolks.

Lower heat to medium-low and pour tempered yolk mixture back into the pot and stir together until smooth.

Cook the mixture for 2 to 3 more minutes, before removing from the heat and stirring in the butter and vanilla. Stir until butter melts and is evenly incorporated into the pudding. Mixture should be very thick.

Place pot of pudding directly into an ice bath (to stop the cooking process), stirring occasionally until slightly cooled, 10 to 25 minutes.

Pour pudding into prepared crust and spread into an even layer and refrigerate between 2 hour and 6 hours (until filling has set and pie is cold) and up to 24hours.

Preheat oven to 350°

Spray a 9 x 9 inch pan with cooking spray, set aside

In a medium sauce pan, combine butter and chocolate chips. Over medium-low heat, melt together, stirring occasionally. When melted, set aside to cool.

In a large bowl combine the mashed bananas, sugar, vanilla and eggs. Mix Well.

Stir in flour and salt until just combined.

Pour all but 1/4 cup melted chocolate into the banana mixture and stir.

Pour the batter into your prepared pan and drizzle remaining 1/4 cup melted chocolate on top, and swirl it into the batter.

Bake 25-30 minutes until the center is set and a toothpick comes out clean.

Brownies will be very dense.

Cool completely and cut into squares
