This easy chili recipe is one of our favorite bean recipes! It&#x27;s quick to make and it freezes well.

Bean Recipes: Pinto Bean Chili

kidney beans (drained and rinsed)

water or broth

chipotle peppers

corn kernels (fresh

Avocado or Guacamole, Greek yogurt, jalapeños, cilantro, or Pickled Onions

Heat the oil in a large pot over medium heat. Add the onion, a few pinches of salt and pepper, and stir. Cook until the onion is translucent, 5 minutes, then add the garlic and red pepper. Stir and cook until soft, 5 to 8 minutes, turning the heat down as needed.

Add the tomatoes, beans, water, chipotles, adobo sauce, corn, salt, and a few grinds of pepper. Cover, reduce the heat to low, and simmer for 25 minutes, stirring occasionally, until the chili has thickened.

Stir in the lime juice and season to taste. Serve with desired toppings.

Turn 2 tins of tuna, assorted beans and some hard-boiled eggs into a nutritious, tasty and fast side salad.

Return beef to the pan. Stir in water, salt, black pepper, thyme, sage, bay leaves, beef broth and beans. Bring to a simmer. Cover and allow to simmer for at least 1 1/2 to 2 hours, until beef is tender.

Discard bay leaves. Salt and pepper to taste.

Lemony White Bean Soup With Turkey + Greens

carrot,

¾ teaspoon ground cumin, plus more to taste

red-pepper flakes,

Heat a large pot over medium-high for a minute or so to warm it up. Add the oil and heat until it thins out, about 30 seconds. Add onion and carrot, and sauté until very soft and brown at the edges, 7 to 10 minutes.

Meanwhile, rinse the greens and pull the leaves off the stems. Tear or chop into bite-size pieces and set aside.

When the onion is golden, add tomato paste, 3/4 teaspoon cumin and 1/8 teaspoon red-pepper flakes to the pot, and sauté until paste darkens, about 1 minute. Add turkey, garlic, ginger and 1 teaspoon salt, and sauté, breaking up the meat with your spoon, until turkey is browned in spots, 4 to 7 minutes.

Add stock and beans, and bring to a simmer. Let simmer until the soup is thick and flavorful, adding more salt if needed, 15 to 25 minutes. If you like a thicker broth, you can smash some of the beans with the back of the spoon to release their starch. Or leave the beans whole for a brothier soup.

Add the greens to the pot and simmer until they are very soft. This will take 5 to 10 minutes for most greens, but tough collard greens might take 15 minutes. (Add a little water if the broth gets too reduced.)

Stir herbs and lemon juice into the pot, taste and add more salt, cumin and lemon until the broth is lively and bright-tasting. Serve topped with a drizzle of olive oil and more red-pepper flakes, if desired.

Brazilian Black Beans

Ingredients:

black beans

For the sofrito:

minced white onion

parsley finely chopped (no stems)

kosher salt and fresh cracked pepper

tbsp extra virgin olive oil

Soak bean over night. Discard water.

In a pressure cooker combine soaked beans, ham hock and bay leaves and add enough water to cover beans at least 3 inches, about 6 cups.

Bring to a boil, then cover and lock the lid. Cook 45 minutes in a pressure cooker on medium-low heat.

After 45 minutes shut heat off and wait for the pressure to come out of the pot before removing the lid.

Meanwhile, in a large saute pan add oil; saute onion, garlic, and parsley on a medium heat. Add salt and pepper to taste and cook until onions are translucent, about 10-15 minutes.

Add onion mixture to the beans and cook uncovered 20-30 more minutes, or until beans have a thick consistency.
