This hearty vegetable and white bean soup recipe is healthy, easy to make, and tastes fantastic. It’s also vegan when a vegan friendly broth is used! Since vegetables vary by seasonality, feel free to swap or add different vegetables for the ones listed below. Both cooked or canned beans can be used in this recipe. When using canned beans, we prefer to drain and rinse them before adding to the soup.

Seriously Good White Bean Soup

olive oil

onion (1 medium)

carrot (4 to 5 carrots)

celery (2 to 3 stalks)

tomato paste

garlic (4 cloves)

black pepper

fine sea salt,

white beans, drained and rinsed or substitute 3 cups cooked beans

stock chicken stock

thyme thyme

bay leaves

(4.5 ounces) small dried pasta

spinach

lemon

Just made this soup the other night with kale and OMG!  My husband and I both loved it!  It was surprisingly good with so few ingredients.  I cooked my own beans in the pressure cooker so I added the thyme, bay, garlic powder and dehydrated onion there.  Then I added the water I cooked the beans in to the broth.  So flavorful!  Definitely a keeper!  Thank you for sharing!

I saw this recipe pop up in my afternoon email. It was enough to inspire me to get up and make it rather than just another salad for dinner.  I was not disappointed! I made it as written with just a small change at the very end.  Rather than lemon slices, I squeezed a little fresh lemon just before serving and crumbled some feta on top.  It is very similar to the classic Greek bean soup. This one is going in my regular soup rotation. The hot pepper flakes added just the right kick of heat. This wonton soup is the perfect, quick weeknight dinner. Even though it comes together in just 30 minutes, it tastes out of this world and is so satisfying.

Wonton Soup Recipe

oz low-sodium chicken broth

water

garlic

wontons

oz shiitake mushrooms

baby bok choy

tbsp sesame oil

tbsp low-sodium soy sauce

green onion

Boil Water

Combine the water and chicken broth with fresh pressed garlic. Bring it to a boil.

Add Wontons

Toss Bok Choy

Add Mushrooms

Add in sliced shiitake mushrooms. Turn the heat to medium-high and let the soup simmer for about 15 minutes or until the wontons float to the top.

Add Sauce

Add in the soy sauce and sesame oil. Remove from heat.

Garnish

Garnish with green onions and serve right away. Enjoy!

This classic bean soup recipe is smoky and irresistibly satisfying! It's quick and easy in just over 30 minutes.

Classic Bean Soup

yellow onion, small diced

carrots,

celery ribs, diced

garlic cloves, minced

tomatoes

navy beans*, drained (or substitute cannellini beans

kidney beans, drained

vegetable broth

smoked paprika

cumin

fennel seeds

salt

Dice the onion, carrots and celery. Mince the garlic.

In a large pot or Dutch oven over medium heat, sauté the onion, carrots, and celery for 5 to 7 minutes, until the onion is translucent. Add the garlic and cook for 1 minute.

Add tomatoes, drained beans, vegetable broth, smoked paprika, cumin, fennel seeds (crushing the fennel seeds with your fingers as you add them), and kosher salt. Simmer for 15 minutes**. Taste and adjust seasonings if desired. Serve warm: leftovers keep well refrigerated for up to 3 days or frozen up to 3 months.

Return beef to the pan. Stir in water, salt, black pepper, thyme, sage, bay leaves, beef broth and beans. Bring to a simmer. Cover and allow to simmer for at least 1 1/2 to 2 hours, until beef is tender.

Discard bay leaves. Salt and pepper to taste.

Red Bean Soup

Olive Oil (, see note 1)

Onion

Garlic Cloves (, see note 2)

Whole Caraway Seeds (, see note 3)

Vegetable Stock ((500 milliliters), see note 5)

Parsley

Sour Cream (for Serving, optional)

Heat oil in a medium pot. Add minced onion and saute until translucent (on low-medium heat). Add minced garlic and caraway seeds. Saute for a minute before adding drained beans.

Add red beans, stock, parsley and increase the heat. Cover with a lid and bring to a boil. Now, reduce the heat to low and simmer for 5 minutes.

Puree until smooth. Taste it and add more seasoning, if needed.

Enjoy!

Vegan Black Bean Soup

garlic (minced)

red bell pepper

oregano

salt (or

(15-ounces each) black beans (rinsed and drained (or about 4 cups cooked black beans))

(14.5 ounces) diced tomatoes

avocado

Sliced green onion

tomato

lime juice

Hot sauce

tortilla chips

Vegan sour cream

In a soup pot over medium heat, sauté the onion and garlic in 1/4 cup water until soft and translucent, about 5 to 6 minutes.

Add the red bell pepper and sauté 2 to 3 minutes until starting to soften.

Add the cumin, oregano, smoked paprika and salt and sauté another minute or two until the spices are fragrant.

Add the black beans, tomatoes and vegetable broth. (Start with 3 cups of broth, you can add more later if you like a thinner soup). Increase heat to high to bring to a boil, then reduce heat to medium-low and simmer 15 to 20 minutes.

Using an immersion blender, purée as much as the soup as you like (I do about 1/2). Alternately, you can carefully transfer 1/2 of the soup to a blender, purée, and add back to the pot. Add the other cup of broth if you like a thinner soup.

Serve hot with the toppings of your choice.

LOVE this recipe! First time I made it I only had 2 cans of black beans, so I subbed in a can of white northern.  No cumin so I subbed in Coriander.  Today I am out of black beans, so guess what?  3 cans of white northern.  I've added spinach once and left out the bell pepper before too. Point being is that this is such a fabulous basic recipe, if you follow the general portions and guidelines, it's hard to mess up. I also love that it requires no oil!  I usually sub water for oil anyway, but I really liked that this recipe leaves the oil out to begin with!   
I follow a plant based diet, but my husband eats a regular diet ... AND he LOVES this soup no matter what ingredients it's had.  This recipe is a KEEPER! 
I have also made it with an immersion blender and with a traditional blender.  While the results were the same, I won't make it again unless I have my immersion blender at hand because of the mess.

This was so good &amp; easy to make! I subbed a half tub of fresh salsa for the diced tomatoes- yum!! I didn’t have paprika, but I did add cayenne. It was spicy and perfect. I will definitely make this again.

Easy Black Bean Soup

Thick, smoky, and satisfying, this ham and bean soup recipe is a perfect meal for a chilly day!

Bean Soup {Slow Cooker, Stovetop or Instant Pot}

beans beans

carrots, (peeled and diced)

celery, (diced)

onion, (diced)

chicken broth or vegetable broth

lb. cooked ham, diced ((about 3 cups total))

(14.5 ounce) can petite diced tomatoes, (not drained)

Place beans in a large pot or bowl. Cover with water 2 inches above beans and soak for 8 hours (or overnight). Drain beans.

Heat olive oil in a large stock pot or Dutch oven over medium-high heat until oil shimmers. Sauté carrots, celery, onion and garlic until starting to soften, about 8 to 10 minutes. Stir in drained beans, broth, ham, salt, tomatoes, and bay leaves. Bring to a boil; cover; reduce heat to low, and simmer (covered) for 2 - 2 ½ hours (or until beans and vegetables are tender). Remove bay leaves; serve.

STOVETOP:

Place beans in a large pot. Cover with water 2 inches above beans and soak for 8 hours (or overnight). Drain beans.

Transfer soaked beans to slow cooker insert.

Heat olive oil in a large stock pot or Dutch oven over medium-high heat until oil shimmers. Sauté carrots, celery, onion and garlic until starting to soften, about 8 to 10 minutes. Transfer vegetables to the slow cooker.

Stir in broth, ham, salt, tomatoes, and bay leaves. Cover and cook on HIGH for 4-5 hours or on LOW for 8-10 hours, or until beans and vegetables are tender. Remove bay leaves; serve.

SLOW COOKER:

Place beans in a large pot. Cover with water 2 inches above beans and soak for 8 hours (or overnight). Drain beans. Set aside.

Turn the Instant Pot to “Sauté” function. Add oil and heat until oil shimmers. Sauté carrots, celery, onion and garlic until starting to soften. Turn off the pot.

Add soaked beans, broth, ham, salt, diced tomatoes, and bay leaves. Cover with the lid and seal to lock. Press the manual pressure cook button and set the timer to 20 minutes.

Let the pressure release naturally for 10 minutes and then move the valve to “venting” to release the rest of the pressure. Remove the lid; remove bay leaves; serve!
