Roasted Beet Goat Cheese Salad

avocado, sliced

goat cheese, crumbled

c. chopped toasted walnuts

c. extra-virgin olive oil

c. balsamic vinegar

maple syrup

Dijon mustard

Great simple salad and perfect dressing for the beets. This recipe is a keeper!

This salad is really, really good. When I roast my beets, I brush them with olive  oil, then add some chopped fresh rosemary, salt and pepper, and close up the foil packet.  The dressing is really nice— it doesn’t separate.  It’s so thick that it’s better to serve alongside the salad rather than to add to the salad and toss.

This was delicious, definitely going to put in my favourite list of salads 
however my dressing was quite dark and it didn’t look like the picture,

There’s a reason I’ve been making this easy tuna salad week after week for years. It’s healthy and delicious and made with the simplest of salad ingredients that you’ve probably nearly always got in your fridge. Try it – I don’t think you’ll be disappointed!

Our favourite easy tuna salad

lettuce (or similar fresh green leaves)

tuna

tomatoes (chopped)

cucumber (sliced)

beetroot ((canned

cheese

avocado

carrot (grated or finely sliced (optional))

onion ((raw))

walnuts (crushed)

extra virgin olive oil

balsamic glaze

bread salt

mayonnaise

Start by placing the fresh green leaves in the bottom of 2 big wide bowls.

Divide the tuna between the 2 bowls, then add all the other ingredients (apart from the walnuts and onions) next to each other in little piles.

Scatter the onion over the tuna and the walnuts over all the ingredients in the bowls.

Drizzle over the olive oil and balsamic glaze.

Serve with the toasted bread and mayonnaise (if you like).

Easy tuna salad

A chicken chopped salad recipe that's tangy, filling, and super healthy. This one's perfect for meal prep.

Chicken, Pepper & Cucumber Chopped Salad

Chicken Breasts

Tbsp Kalamata Olives

Big Bunch of Basil (50 grams)

Jarred Roasted Red Peppers

Shelled Pistachios (15 grams)

Cucumbers

Tbsp Red Wine Vinegar

Tbsp Olive Oil

Tbsp Cottage Cheese

Preheat your oven to 180°C. Season your chicken breasts generously with salt and pepper. Place your breasts onto a baking tray and get them in the oven for 25 mins. Allow them to cool once cooked – the salad doesn’t need to be warm.

Chop up the basil, the roasted red peppers, cucumbers, pistachios, and chicken into even-sized pieces. Combine in a bowl before topping with kalamata olives and the dressing. Toss vigorously. 

Serve with a dollop of cottage cheese on each portion and enjoy.

Pickled Green Chillies

Tbsp Capers

Good Quality Tinned Tuna

Boil your green beans in water until soft, drain, and then allow to cool.

Chop and discard the heads off the pickled guindilla chillies. Add your beans to a chopping board along with your tuna and chillies and roughly chop them up.

Add all of your chopped ingredients to a bowl and squeeze in the juice from your lemons. Add in a good glug of olive oil and season generously with salt and pepper. Serve and enjoy!

I am not a huge salad eater, but this is one salad I can&#039;t get enough of. It is so yummy and full of flavor and texture. The berry and citrus combination is so yummy, and the salad dressing is beyond delicious.

Citrus Berry Salad Recipe

baby spinach leaves

clementine oranges

raspberries

Feta cheese crumbles

1½ Tablespoons balsamic vinegar

Combine spinach leaves, oranges, raspberries, blackberries and strawberries in a large bowl.

Top your salad with chopped walnuts and feta cheese crumbles.

In a medium size bowl, whisk together orange juice, olive oil, balsamic vinegar, and honey until fully incorporated.

Pour the salad dressing over the salad before serving and toss to coat.

The dressing was a little too orange juicy for my taste, but the rest of the salad was incredible!

Deviled Egg Potato Salad Recipe

Place eggs in a large pot over medium-high heat and cover with water. Bring to a boil then place lid on pot and remove from heat. Let the eggs stand in the hot water for 15 minutes, then place the eggs in a bowl of cold water. Once cool, peel the eggs and set aside.

Place cubed potatoes in a large pot and cover with water. Bring to a boil over medium-high heat and boil for 15-20 minutes, or until tender. Drain and rinse in cold water until cool; set aside.

Cut the eggs in half, remove the yolks and place them in a large mixing bowl.

Coarsely chop the egg whites and set aside.

Mash the egg yolks with a fork and add mayonnaise, mustard, relish, salt and pepper and mix until combined.

Fold in hardboiled eggs, cooked potatoes, diced celery, and green onions and mix until incorporated.

Sprinkle paprika on top for garnish, cover and refrigerate until serving.

I got this recipe for my mother-in-law. It's exactly the same thing as you have. But she taught me to bake the potatoes. And my family doesn't like sweet relish so I use dill relish other than that exactly the same love this potato salad

Chop up the basil, the roasted red peppers, cucumbers, pistachios, and chicken into even-sized pieces. Toss together in a large bowl with kalamata olives.

Divide the salad between Tupperware containers with a dollop of cottage cheese in each box and pop them in the fridge. Keep the dressing separate – either pour a little over in the morning or stash it in a little pot inside your lunch box to add just before eating.
