Beef Bourguignon in the Instant Pot has never been quicker or tastier! All done in about an hour, the beef is seared and the vegetables are sauteed in rendered bacon fat, then pressure cooked in a red wine and beef stock until the beef is melt-in-your-mouth tender.

Instant Pot Beef Bourguignon

bacon,

tbsp (2 g) garlic, minced

(35 g) all-purpose flour

(240 mL) red wine*

(480 mL) low-sodium beef broth

(120 mL) tomato sauce

tsp better than bouillon beef base (or 1 beef bouillon cube)

salt and freshly cracked black pepper

Set your Instant Pot to saute mode adjusted...

Set your Instant Pot to saute mode adjusted to medium heat (the middle light). Fry the bacon in the pot until somewhat crisp and the fat is rendered out. Use a slotted spoon to transfer the cooked bacon to a plate and set aside.

Add the cubed chuck to your Instant pot...

Add the cubed chuck to your Instant pot in batches so that you don't overcrowd the pot, and sear 3-4 minutes, using tongs to turn the meat and sear all sides. If the beef doesn't pull away, do not force it. When the brown crust is formed, it will release from the Instant Pot. Remove each batch of beef to a large, clean bowl once seared. Set aside.

Add onions, carrots, and mushrooms to the pot....

Add onions, carrots, and mushrooms to the pot. Add a drizzle of vegetable oil if needed so the vegetables don't burn. Stir on occasion to ensure all the vegetables get cooked for about 3 minutes, or until the onions are turning golden. Add in chopped herbs and garlic, stir in and let cook for a minute until garlic is fragrant. Add in flour, stir it in well, then let that cook for a minute or two to get the raw flavor out.

Slowly add in red wine, beef stock, beef...

Slowly add in red wine, beef stock, beef base, to the pot, scrape any brown bits off the bottom and sides of the pot and into the liquid. Simmer and reduce for about 5 minutes.

Add the bacon and beef back into the Instant Pot. Make sure to also add in all the accumulated juices from the beef as well. Cover the Instant Pot with its lid and set it to Manual for 45 minutes.

Once done, let it naturally release for 10...

Once done, let it naturally release for 10 minutes (do not touch the vent at all, allow the Instant Pot to depressurize) then carefully switch valve to VENT and quick release until the steam stops. Once the float valve drops, carefully remove the lid.

Set to SAUTE again, on low, and allow...

Taste, then season with kosher salt and black...

Taste, then season with kosher salt and black pepper to taste. Serve hot over mashed potatoes, egg noodles, or crisp, toasted bread.

Beef Bourguignon (Beef Burgundy)

800 grams/ 1.6 lb chuck beef (,

carrots

onions

bay leaf (, fresh (sub: dried))

thyme

milliliters/ 25 oz pinot noir or other red wine ((Note 3))

tbsp oil (, olive, canola or vegetable)

salt

tsp pepper

mushrooms (, halved (quarters if large))

50 grams/3 tbsp unsalted butter

garlic (, minced)

tomato paste

tbsp flour (, plain/all purpose)

beef stock (low sodium)

tsp salt

tbsp chopped parsley (, for garnish)

Marinate beef: Place the Beef Marinade ingredients in a large, non-reactive ceramic dish or ziplock bag. Marinate overnight in the fridge (minimum 12 hours, maximum 24 hours).

Strain liquid into a bowl, reserve marinade. Separate the beef, carrots and onion.

Reduce wine: Pour red wine into a saucepan and bring to a boil over medium high heat. Simmer vigorously, skimming off any impurities that rise to the surface, until reduced by half. Set aside.

Marinate beef:

Preheat oven to 180°C / 350°F (160°C fan).

Dry beef: Line a tray with paper towels, spread beef out, then pat dry with paper towels.

Season beef: Sprinkle beef with 3/4 tsp salt and 1/2 tsp black pepper.

Brown beef: Heat 2 tbsp oil in a large, heavy-based, oven-proof pot over high heat. Add 1/3 beef and brown aggressively all over. Remove into bowl, then repeat with remaining beef, adding more oil if needed.

Fry bacon: Add bacon and cook for 3 minutes until golden. Add to bowl with beef.

Sauté mushrooms: Add mushrooms and cook for 5 minutes, or until golden. Remove into a new bowl.

Sauté onion: Add a bit of extra oil if needed, then cook onions for 5 minutes or until there are nice golden patches. Add to bowl with mushrooms.

Sauté carrot: Add butter into pot. Once melted, add carrot and cook for 3 - 4 minutes until there are golden patches. Add garlic and cook for a further 1 minute.

Tomato paste: Add tomato paste and cook for 2 minutes.

Flour: Add flour and cook for 2 minutes.

Add wine and stock: While stirring, slowly pour in beef stock – this helps the flour dissolve lump-free into the stock. Then add wine and mix until flour mixture is dissolved and mostly lump-free (Note 6).

Add beef into pot: Add beef, bacon, thyme, bay leaf, 1/4 tsp salt and pepper into the pot, then stir well.

Brown beef and vegetables:

Oven 1 hour: Bring to a simmer, then cover and transfer to oven for 1 hour. (Note 7)

Mushrooms and onion: Remove from oven, stir in mushrooms and onion.

Oven 1½  hours: Cover with lid and return to oven for 1½  hours, or until beef is &quot;fall-apart tender&quot;.

Adjust salt: Remove from oven, taste sauce and add salt if needed. (Note 8 - important!)

Leave overnight (recommended): If time permits, leave the stew overnight before serving because as with all stews, it gets better with time! Reheat gently on a low stove.

Serve over mashed potato – Essential for mopping up every drop of that amazing sauce!

Slow-cook:

Beef Bourguignon is a French classic for a reason. A hearty slow cooked stew that’s packed with flavour, this dish is perfect for either batch cooking for the family or as a dinner party recipe. When cooking up beef recipes, you can add plenty of seasoning – the red meat can stand up to strong ingredients. Shallots and bacon create a rich base, while a splash of brandy provides a subtle sweetness. When it comes to seasoning, don’t hold back – we’ve used minty thyme, fragrant bay leaves, spicy black pepper and bouquet garni with marjoram, basil and oregano. Leaving it to simmer makes sure the sauce and meat is thoroughly infused – serve with creamy mashed potato to soak up the sauce.

Pre-heat the oven to 180°C, 350°F, Gas Mark 4.

Coat the steak with the flour. Heat oil in a saute pan. Add the shallots and bacon and fry over a brisk heat until browned. Remove from the pan and place in a casserole dish. Add the meat to the pan and fry until browned on all sides. Then transfer to the casserole.

If using brandy, pour it into the casserole and set alight. When the flame dies, add the wine to the pan and bring it to the boil and simmer for 2 minutes, stir it into the casserole with the stock, puree, Garlic Granules, Thyme, Pepper, Bay Leaf and Bouquet Garni. Cover the casserole, place it in the oven and cook for 1¼ hours. Add the mushrooms and cook for a further 45 minutes or until the meat is tender. Taste and adjust the seasoning. Discard the Bay Leaf and Bouquet Garni before serving.

g (3 c. à soupe) de beurre, ramolli

45 ml (3 c. à soupe) d’huile d’olive

500 ml (2 tasses) de bouillon de boeuf

échalote française, pelée

clou de girofle

feuille de laurier

carottes, pelées et coupées en dés

ml (2 c. à soupe) d’huile d’olive

ml (2 c. à soupe) de persil plat ciselé

Placer la grille au centre du four. Préchauffer le four à 180 °C (350 °F).

Dans un petit bol, mélanger le beurre et la farine. Réserver le beurre manié.

Dans une grande casserole allant au four à feu moyen-élevé, dorer la moitié des cubes de viande à la fois, dans l’huile. Saler et poivrer. Réserver sur une assiette. 

Dans la même casserole, dorer l’oignon. Ajouter de l’huile au besoin. Ajouter l’ail et cuire 1 minute. Déglacer avec le vin et laisser mijoter 5 minutes. Ajouter le bouillon et le beurre manié. Porter à ébullition en remuant constamment au fouet. Ajouter la viande, l’échalote piquée du clou de girofle et la feuille de laurier. Saler et poivrer. Couvrir.

Cuire au four 1 h 30. Ajouter les carottes et poursuivre la cuisson à couvert de 30 à 45 minutes ou jusqu’à ce que la viande se défasse à la fourchette. Retirer l’échalote, le clou de girofle et le laurier.

Dans une grande poêle à feu moyen-élevé, dorer les lardons dans l’huile. Ajouter les champignons et poursuivre la cuisson jusqu’à ce qu’ils soient bien dorés. Ajouter l'ail, le persil et poursuivre la cuisson 1 minute. Verser dans le mijoté. Rectifier l’assaisonnement.

Garniture

Congeler le mijoté tiédi dans des contenants hermétiques ou dans des sacs de plastique à fermeture hermétique pour congélation. Déposer les sacs à plat sur une plaque. Une fois qu’ils sont congelés, vous pourrez les empiler.

J’aimerais adapter cette recette pour 40 personnes… (résidence personne âgées) d’après vous est-ce que je dois faire la recette 7 fois tout simplement dans la rôtissoire ?

Bon, sans plus...avec tous les supers commentaires que j’avais lu avant de faire la recette, je m’attendais à quelque chose de fantastique. Soit les gens qui ont écrit les commentaires n’ont jamais mangé de bœuf bourguignon, soit vous gardez seulement les commentaires avec 4 et 5 étoiles.
Malheureusement, je ne referai pas votre recette...j’en essaierai probablement une nouvelle afin d’en goûter une autre...peut-être sera-t-elle...ma...bonne!

Délicieux! Ajouter les carottes après 1 heure. Un Bourgogne pour le vin rouge servi sur un nid de pommes de terres pilées (avec babeurre et non du lait). Un petit délice chaleureux durant cette saison froide d’hiver…

Je l'ai refait encore cette année pour mon souper toute seule. Je sais que ça être super, servi sur des nouilles aux oeufs.

Bonjour à l’équipe Ricardo, j’ai fait la recette et malheureusement le bœuf était tellement difficile à mastiquer…à noter que j’ai doublé la recette en conservant le même temps de cuisson, donc double de « liquides  » et j’ai utilisé un plat « creuset » allant au four, est-ce que c’est pour cela que je n’ai pas bien réussi !

Vraiment un plat réconfortant! On peut très bien substituer le bœuf par du porc (épaule de porc) coupé en cubes, les autres ingrédients demeurent les mêmes. Ou faire moitié bœuf, moitié porc. C’est délicieux et la visite a raffolé du mélange de viandes. Ai servi avec une bonne purée de pommes de terre, brocolis et un pain belge! Simplement excellent! Je double la recette pour avoir des repas prêt à l’avance. Réchauffé, c’est aussi délicieux. 
J’ai donc suivi la recette à la lettre, en la doublant!

Huile d'olive

Dégraisser et détailler la viande en morceaux de 2cm environ (ou demander au boucher).

Faire mariner au moins 2h la viande avec le vin, le bouquet garni, un peu d'huile d'olive, sel et poivre (idéalement une nuit)

Détailler le lard fumé en lardons et blanchir 30 secondes dans l'eau bouillante. Égoutter, réserver.

Dans une cocotte, faire chauffer un peu d'huile d'olive et de beurre. Faire dorer les lardons , puis réserver. Dans la même cocotte, bien faire dorer la viande sur chaque face, puis réserver.

Dans la même cocotte, faire revenir les légumes quelques minutes (ajouter huile d'olive et beurre si besoin).

Déglacer avec un peu de marinade et gratter les sucs du fond de la marmite.

Ajouter la viande et les lardons. Mélanger le tout puis verser le reste de marinade et ajouter le bouquet garni puis la gousse d'ail en chemise.

Porter à ébullition, baisser le feu, couvrir et laisser mijoter au moins 3h00 en écumant régulièrement si besoin.

Ajouter de l'eau si besoin. En fin de cuisson, ajouter le carré de chocolat.

Degrease and cut you meat in 2cm chucks (or ask to your butcher). Cut also the bacon in 2cm square.

Marinade for at least 2 hours the beef with the red wine. the bouquet garni, a drizzle of olive oil, salt, pepper (ideally overnight).

Blanch the bacon 30 secondes in boiling water. Set aside.

In a large casserole, heat a drizzle of olive oil with a knob of butter. Brown the bacon, then set aside. In the same casserole, brown the beef on all sides, set aside.

Deglaze with a bit of marinade, scrap the juice with a wood spoon.

Add the beef and the bacon. Mix it all together and pour the rest of the marinade. Add the bouquet garni and the unpeeled garlic.

Bring it to boiling point then urn down to low heat and let it simmer for at least 3 hours (skim if needed, add water if needed).

At the end of cooking, add the square of chocolate and mix.

Chacun a sa recette de boeuf bourguignon! Mais vous avez été nombreux à me demander ma recette, alors aujourd’hui je la publie. Je vous donne ma version que je trouve extrêmement savoureuse. Cette recette n’est absolument pas figée, comme la plupart des plats salés. Vous pouvez y ajouter votre touche personnelle. Je vous invite d’ailleurs à laisser dans les commentaires vos petits trucs et astuces. Comme beaucoup de plats en sauce, celui-ci sera meilleur s’il est préparé la veille! 

Bœuf Bourguignon

Kg paleron

g beurre

petit verre de cognac

cl bourgogne rouge

cl bouillon de boeuf

c. à soupe farine

lardons

oignons grelots

400 g champignons de paris

sel, poivre

Préparer le paleron. Enlever les parties dures…

Puis le couper en morceaux.

Placer la viande dans un récipient, ajouter le verre de cognac.

Puis le vin rouge.

Laisser macérer au moins trois heures ou alors une nuit au frais.

Lorsque la viande est prête, bien l’essorer dans du papier absorbant, en prenant soin de garder la marinade!! 

Faire fondre 25g de beurre dans une cocotte qui pourra aller au four.

Faire dorer la viande sur feu très vif.

Laisser cuire jusqu’à ce que le jus s’évapore et que la viande se colore.

Enlever la viande de la cocotte.

Puis y ajouter les 25g de beurre restant et la farine.

Laisser dorer sur feu un peu plus doux.

Ajouter la marinade.

Puis le bouillon de boeuf. On peut ne pas mettre le bouillon et ne mettre que du vin comme on le voit souvent, mais je préfère mon boeuf bourguignon préparé de cette façon. 

Porter à ébullition. Lorsque la sauce bout, remettre la viande dans la cocotte. Saler et poivrer.

On peut ajouter également les pieds des champignons de paris, bien nettoyés.

Et enfin le bouquet garni.

Fermer le couvercle puis mettre à four doux (150 degrés) pendant au moins deux heures. On pourra arrêter à ce moment la cuisson si l’on décide de poursuivre le plat le lendemain.
