Combine

In the bowl of a mixer, combine cream cheese and butter; mix well.

Boursin Potato Salad

Yukon Gold potatoes

water

white vinegar

salt, divided

mayonnaise

sour cream

mustard

black pepper

red onion

celery

dill pickles

hard boiled eggs, peeled and rough chopped

dill

Peel and cut potatoes into 3/4-inch chunks. Place in large pot with 6 cups of cold water. Add 1 1/2 teaspoons salt. Bring to a boil.

Add vinegar. Boil for 10-12 minutes or until potatoes can be easily pierced with a fork.

Drain well. Allow to cool for 10 minutes. Pat dry with paper towels before adding to other ingredients.

Combine Boursin, mayonnaise, sour cream, black pepper, 1/4 teaspoon salt, and mustard in a medium bowl.

Transfer potatoes to a large mixing bowl. Add Boursin/mayo mixture, onion, celery, and pickles. Stir until just combined.

Add eggs, dill, and chives. Gently combine. Reseason to taste. Chill until ready to serve.

Creamy, delicious baked butternut squash pasta made with an entire puck of Boursin cheese. This baked pasta recipe is seriously so delicious, plus it packs in veggies from butternut squash and cherry tomatoes. 

Baked Butternut Squash Pasta with Boursin Cheese

cherry tomatoes

butternut

dry white wine

garlic

starchy pasta water

Preheat the oven to 400ºF.

Add cherry tomatoes, butternut squash, and onions to a 9x13-inch casserole dish. Pour white wine and olive oil over all of the vegetables and toss until all of the ingredients are coated. 

Cut the tip or the end of the garlic head off exposing the garlic coves  (leaving the root end intact so all the cloves stay together) and place the head of garlic onto the casserole dish. Sprinkle everything with salt and pepper. Toss. 

Next, place a puck of Boursin into the middle of the casserole dish and then bake the entire dish at 400ºF for 20 minutes. After 20 minutes, flip the head of garlic over and then bake for an additional 20 minutes. 

Meanwhile, bring a large pot of salted water to a boil and add pasta. Cook the pasta until it is cooked to al dente. Before pouring the pasta into a strainer, remove 1 cup of starchy pasta water from the pot and set it aside. Strain pasta and set aside. 

Remove the butternut squash dish from the oven and use a fork or mixing spoon to smash the Boursin, tomatoes, and butternut squash until it forms a creamy sauce.

Add 3/4 cup of pasta water to the casserole dish and mix. Then, add the cooked pasta to the casserole dish and mix until the pasta is coated in sauce. 

Serve butternut squash pasta with freshly minced chives and Boursin cheese crumbles. 

My recipe for Crispy Potato Zucchini Cups is loaded with potatoes, zucchini and cheese. They are so good, they’ll be gone before you know it!

Crispy Potato Zucchini Cups

zucchini, (grated)

potato, (peeled + grated)

eggs, (lightly beaten)

parmesan

flour (of choice)

almond flour

mozzarella, (shredded)

scallions, (chopped)

tsp each Italian herb seasoning, garlic powder, onion powder + salt

tsp pepper

Preheat oven to 375℉ (or 190℃). Grease or line your muffin tray.

IMPORTANT: You must squeeze out the zucchini shreds VERY WELL. For the Potato Shreds, pat them dry well.

In a large bowl lightly beaten your eggs and then add in almond flour, parmesan, flour, seasonings and mix until just combined. Fold in your zucchini, potato, scallions and mozzarella. I had to use my hands to fully incorporate everything.

Evenly distribute the mixture to your muffin tray. Bake for 20-25 minutes or until golden brown on top.

Cheesy Creamy Zucchini Parmesan Soup

Tbsp Olive Oil

Onion (Chopped, 112 grams)

tsp Garlic (Minced)

Chopped Zucchini (620 grams)

Chopped Carrots (128 grams)

Low Sodium Vegetable or Chicken Broth

Water

tsp Italian Seasoning

Salt

½ tsp Black Pepper

Almond Milk

Shredded Parmesan (60 grams)

Heat a large pot or dutch oven over medium-high heat, pour oil and fry onions and garlic for about 2 minutes until translucent.

Add zucchini, carrots, broth and water. Bring to a boil, reduce heat to medium, cover and simmer until vegetables are soft and cooked, about 20 minutes.

Blend soup with an immersion blender, or transfer to a blender, blend, and return to heat.

Add almond milk, Italian seasoning, salt and pepper, and stir.

Turn off heat, add in shredded Parmesan cheese and stir.

Top with some parsley, more cheese and serve with bread for dipping!

Creamy Chicken and Broccoli Bake

broccoli florets ((4 small crowns))

oz baby bella mushrooms

1.75 lbs boneless skinless chicken thighs

garlic powder + onion powder (to taste)

cottage cheese

eggs

oz Boursin Cheese ((or cream cheese))

salt + pepper, (to taste)

mozzarella

Preheat oven to 375℉. In a large pot, par boil your broccoli florets for 2 minutes, drain and set aside. In a large skillet over medium high heat, add in the oil and sauté the mushrooms for 4-5 minutes and set aside.

Rinse and pat dry the chicken thighs and cut into bite sized pieces; season with salt, garlic powder and onion powder and mix together. Cook the chicken for 8 minutes or until golden brown on both sides.

In a mini food processor pulse together cottage cheese, eggs, 3 tbs olive oil, Boursin cheese, salt and pepper and blend until smooth.

Sauce:

In a 9x13 inch baking dish first add in the broccoli, then the mushrooms and chicken and spread out evenly. Next EVENLY pour the sauce on top of the chicken and then sprinkle the mozzarella cheese on top. Bake for 30 minutes or until golden brown on top.

This was a massive hit in our house! I forgot to buy mozzarella for the recipe, so I used the cheddar I had in the fridge, and it still turned out fantastic. I’ve shared this recipe with seven or eight people already, lol.

Unwrap Boursin cheese and place in the center of the plate.

Top it off with 1 tbsp of honey then proceed to add the nuts and chives.

Bangers and Mash, drenched in the most delicious quick and easy onion gravy is probably one of the most delicious meals any night of the week! I made this recipe quick and easy, so you can enjoy it with your family without breaking a sweat. I used prepared mashed potatoes from Costco, but if you&#39;d like to make homemade mashed potatoes here is a delicious recipe from my grandmother you can try: Grandma’s Homemade Mashed Potatoes. So many people send me messages asking how to make gravy and tell me they just can&#39;t get it right. So, I am giving you explicit directions within the blog on how to make the easiest recipe that is going to turn into the exact consistency every time you make it. And added bonus once you pop your bangers and mash in the oven, you are going to start your gravy and by the time your bangers and mash are done your gravy will also be ready to smother those bangers and mash! I used smoked chicken apple sausages, however you can use any smoked sausage you prefer to make this dish your own. Alright enough said, let&#39;s make it!

Easy Bangers and Mash

oz package prepared mashed potatoes

butter

½ a wheel of Boursin caramelized onion and herbs (or any flavor boursin cheese)

chicken apple sausages (you can use any type of sausage)

oz shredded whole milk mozzarella cheese

tbsp butter

black pepper (to taste)

tbsp flour

oz envelope of Lipton onion soup mix

tbsp worcestershire (or to taste)

To make the bangers and mash, grease a baking dish and add in the prepared mashed potatoes. Smooth it out so that it is an even layer. Next, evenly sprinkle the cubes of butter over the mashed potatoes. Take the boursin cheese, break it up into pieces, and evenly sprinkle it over the mashed potatoes. Then, shake over some cracked black pepper. Now, add your sausages over the mashed potatoes (make sure they are spaced out so the sausages aren't touching each other). Lastly, sprinkle in some shredded mozzarella cheese.

Bake that in the oven at 410°F for 30 - 35 minutes. Flip the sausages halfway through the cooking time so they can get browned on both sides.

While that's baking it's time to make the easy onion gravy! To a pot add in butter, sliced onions, and cracked black pepper (to taste). Saute that on a medium heat for about 8 - 10 minutes or until the onions become lightly golden. Then, add in the chopped garlic and saute it for another 2 minutes (don't burn the garlic).

Then, shake in the flour and whisk continuously for about 2 - 3 minutes. Now, pour in the water and the onion soup mix, bring the pot to a boil, and whisk it continuously for about 1 - 2 minutes. Once the pot comes to a boil, lower it to a simmer, and shake in the worcestershire sauce. Whisk that continuously for another minute and then let it simmer on low for about 3 - 5 minutes. Then the gravy is done!

Serve the onion gravy over your bangers and mash. Enjoy!

Boursin cheese (I like the garlic herb flavor)

Prep (Optional)

Let the Boursin come to room temperature for 15 minutes. (Optional &#8211; this just makes it easier to spread, dip, and eat.)

Spread Cheese

Grab a pretty plate or platter &#8211; even just a nice dinner plate will work. Use the back of a spoon to press the Boursin onto the plate in an even layer.

Add Toppings

Top with the pistachios. Drizzle with hot honey.

Serve with crackers or apple slices. I like to throw a small spoon on the plate to make it easier to spread the dip on the crackers. It&#8217;s so good!

I made this for our Father’s Day dinner last night, and it was incredible! I tried Mike’s hot honey once and it was too hot for me, so I made my own – two ingredients and amazing!
