Pan-Fried Beer and Onion Bratwurst

bratwurst sausages

Tbsp unsalted butter ((or use olive oil, vegetable or corn oil))

onion

Belgian ale ((or any dark, malty beer of your choice))

Preheat a cast iron pan over a medium-high heat. Add the butter and let it melt and start to turn light brown. The temperature should be about 325-350F at this point.

Sear bratwurst for about 3 minutes per side, until it achieves deep golden brown color.&nbsp;

Add the onions and the beer, turn the heat to high and bring to a boil.

Once the liquid is boiling, reduce heat and continue cooking, flipping the sausages and stirring the onions, until the internal temperature of the sausages reaches 160F. Cook uncovered to let the liquid reduce and intensify its flavor.

Remove bratwurst from heat and serve hot, on a bun, or with you favorite side dish.

Air Fryer Brats

Johnsonville Bratwurst (uncooked) ((5 count))

hot dog or bratwurst buns

favorite condiments (mustard, ketchup, onions, sauerkraut, relish and/or peppers)

Preheat air fryer at 375 degrees Fahrenheit. Place lace your raw bratwurst in the basket or tray in a single layer. Do not overlap!

Cook for 7 minutes. Turn bratwurst over. Cook additional 7 to 8 minutes or until fully cooked to internal temperature of 160 degree Fahrenheit.

Serve immediately with buns and your favorite toppings (if desired).

Oven baked bratwursts

Bratwursts (1 package)

Preheat oven to 425°F.

Line one baking sheet with parchment paper.

Place bratwursts on the parchment paper with space between them.

Bake for 10 minutes.

Flip bratwursts and bake additional 10 minutes, or until internal temperature reaches 160°F.

Pull out of the oven, cover with foil and let rest for 5 minutes.

Oven-Baked Bratwurst

Oven Baked brats and potatoes with some yummy veggies too!

Brats &amp; Spuds Sheet Pan Dinner

Brats

Lager

Garlic Cloves (minced)

lbs Fingerling Potatoes

Red Onion (sliced)

Red Bell Pepper (sliced)

Green Bell Pepper (sliced)

Baby Bella Mushrooms (sliced)

tbsp Avocado Oil

Salt

tsp Coarse Black Pepper

tsp Parsley

tsp Garlic Powder

Prepare all of the ingredients. Preheat oven to 425deg.

Add brats, garlic cloves and beer to bowl and let marinade for 30 minutes.

In a bowl, combine potatoes, half of oil, and seasonings. Toss to coat. Pour contents into a mostly single layer on a large baking sheet. Place in oven for 30 minutes (while brats are marinating).

In the same bowl, add remaining oil, onions, bell peppers and mushrooms. Toss to coat. After 30 minutes of baking, remove potatoes from oven and cover with veggie mixture.

Remove brats from beer, and add, evenly spaced, on top of potato &amp; pepper mixture. Place in oven and cook for and additional 30 minutes.

Smoked brats are a delicious lunch or dinner idea you can make in your pellet or electric smoker this week! If you haven't smoked sausage yet, try this!&nbsp;

Smoked Brats

Preheat your smoker to 350 degrees. We used hickory pellets to make these, apple works well too.&nbsp; If you want a longer smoke set to 225.

Place your raw brats on your grill grate and close lid. After 15 minutes lift lid and flip each one over on to the other side.&nbsp; If you set to the lower temp then flip after 1 hour.

Smoke for an additional 15 minutes. Remove and serve!&nbsp; Lower temp takes a total of 2 hours.

Homemade German Bratwurst Recipe

pork

300 g veal

g kosher salt

g white pepper

marjoram

g caraway

ginger

g nutmeg

g water

Grind meat through 3/16” (3 mm)  plate.

Whisk the egg whites.

Mix the ground meat and all ingredients together.

Stuff into 32-36 mm hog casings forming 4” (10 cm) links.

Keep in a refrigerator or freeze for later use.

Ninja Foodi sausage is a great dinner! Using fresh or frozen brats or sausage links you can make them tender on the inside with that snap on the outside!

Ninja Foodi Sausage

Pour 1.5 c water into your Foodi. Place air fryer basket inside pot, spray inside with non stick spray, and put sausage links inside. Close pressure cooker lid and steam valve and set to high pressure for 5 minutes.

Quick release when done and remove lid. Spray links with olive oil and close air crisp lid. Set to air crisp, 400 degrees for 8 min flipping halfway through so both sides get browned.

Remove and eat as you&#x27;d like.

Beer Braised Beer Brats

LEM Backwoods 32-35 mm Natural Hog Casings

lb pork

LEM Backwoods Bratwurst Seasoning

oz New Belgium Fat Tire Amber Ale

yellow onions, sliced

(1 stick) butter

House of Q House Rub

fl oz (3 bottles) New Belgium Fat Tire Amber Ale

Kansas Flavor Jalapeño Mustard

Soak the LEM Backwoods 32-35 mm Natural Hog Casings in room temperature water for 45-60 minutes. Rinse the insides of the casing by running water through them. Store in the refrigerator.

To make the sausage, whisk together the LEM Backwoods Bratwurst Seasoning and Fat Tire. Combine with the ground pork. Mix well in the bowl of a stand mixer with the paddle attachment until the mixture becomes tacky and holds together.

Transfer to a sausage stuffer. Place the casings on the horn. Tie off the end and stuff the sausage in one long spiral. Don’t stuff too full. You need to leave room for twisting the individual links. Tie off the other end of the casing. Measure the length of one link (about 6”) and pinch the casing. Measure another link. Pinch again. Twist the link between the two pinches. Repeat the “pinch, pinch, twist” process until all links are formed.

Preheat your Yoder Smokers YS640 pellet grill to 400°F, set up for direct grilling with GrillGrates. Place a Lodge Logic 7 quart dutch oven in the cooker to preheat. When the pan is hot add the butter and onions and season with House of Q House Rub. Cook 10-15 minutes, covered, stirring occasionally, until the onions are softened.

Add the bratwursts and 3 bottles of Fat Tire. Cook uncovered until the internal temperature of the sausages reaches about 140°F, about 20 minutes.

Transfer the brats to the GrillGrates and grill to achieve grill marks on all sides. Remove from the grill when the brats have color and the internal temperature reaches 165°F.

Serve on toasted buns with the onions from the beer braise and Kansas Flavor Jalapeño Mustard.

New Belgium Fat Tire Beer Brats

Smoked Brat Burgers are simple to prepare and ready for sauerkraut, mustards, pickles, and melty cheese. Formed into brat patties, the seasoned pork is smoked and seared on the grill. Grab your favorite buns and beer, it’s time to grill.

Smoked Brat Burgers

bratwurst,

pepper,

Onion buns or rolls

sauerkraut

Dill pickles

mayonnaise

Dijon mustard

horseradish

fresh dill, chopped

pickle juice

Take a sharp knife and run it down the casing lengthwise. Open up the meat and remove it from the casing, adding it into a mixing bowl. Combine all of the meat from the bratwurst and form into patties about 1/2&#8243; thick, pressing a small indent in the center. Place the patties on parchment or wax paper lined on a baking sheet, and chill in the fridge for about 20 minutes.

Prepare the horseradish Dijonnaise by mixing all ingredients together. Season to taste and chill in the fridge until needed.

Preheat the smoker or grill for indirect cooking. I recommend a charcoal grill if possible, as you&#8217;ll be searing the burgers at the end. Set up a cool side with the warm coals on the other, aiming for around 275-300°F internal temperature. Add wood chunks or chips for additional flavor.

Smoke the brat burgers. Sprinkle some ground black pepper on the top and place them on the grill, away from the coals. Cook for about 30-45 minutes until they are around 145-150°F internal temperature.

Sear the burgers. Move them over the coals and sear for about 2-3 minutes per side until done. Be careful of flare-ups from the pork fat. 

Add the cheese if using, and move the burgers back to the cool side to allow the cheese to melt for a minute.

Assemble the burgers with the Dijonnaise, sauerkraut, and pickles. Crack a beer and enjoy!

This tasty recipe for making your own homemade German style bratwurst is sure to be a hit with guests at your next BBQ and grilling cookout. With a silky smooth texture and perfect snap from the casing, these classic bratwursts are perfect for the grill and put the mass produced store bought versions to shame.

Prep. Before making sausage, please familiarize yourself with best practices as described in our article on The Science Of Sausage Making.

Slice the meat and fat into cubes removing gristle and sinew. Place it on a plate or pan in the freezer, along with the grinder parts that will contact the meat. Leave it there for about 20 minutes until it is firm but do not let it freeze. This makes grinding easier.

Grind it with a 1/4&quot; (6.3 mm) die. Mix in the other ingredients. To get the right classic brat texture, transfer the mix to a food processor and pulse till smoothly emulsified.

Pinch off a small piece of the sausage and cook it in a frying pan let it cool and taste to see if the seasoning is to your taste. Brats are almost always served as links, but if you wish, nobody will arrest you if you form it into patties, meatballs, or skinless tubes. At least not outside of Wisconsin.

Cook. You can then grill or smoke it, or store it in the fridge for about 5 days or in the freezer for about a month.

There are few ways to make a summer afternoon more enjoyable than a cookout hosted by someone who knows how to grill brats to perfection. These tips will help you host your next cookout like a pro!

How to Grill Brats to Perfection

Light charcoal and spread it evenly across the bottom of one-half of the grill. If using propane, light burners only on one side of the grill.

Place grill grates over the charcoal and oil grates with paper towel soaked in vegetable oil to prevent sticking.

Place brats on grates directly over charcoal and grill on each side until browned. If the casing bursts or burns move brats further from the coals to reduce cooking temperature.

Turn the brats every couple of minutes to prevent burning, moving them further away from the hot coals if needed, and cook brats for 15-20 minutes or until internal temperature reaches 160 degrees. Cooked brats are firm to the touch.

Keep bratwursts warm in a Brat Bath until ready to serve.

Serve on buns with onions, sauerkraut, and brat sauce.

How to Cook German Sausage ~ Oma's Grilled Bratwurst

Prep and cook the sausages according to the full recipe.

Dill Pickle and Brat Soup, made in the crock pot, or not. This soup is a delicious surprise, with smokey brats, tangy dill pickles, and tender potatoes all in a light sour cream broth. 

Dill Pickle and Brat Soup

extra virgin olive oil

carrot (grated)

dill pickles

red potatoes (skins on, cut in 1/2 inch dice)

chicken broth

Worcestershire sauce

garlic (minced)

dill (chopped)

sour cream

flour

Salt & pepper (to taste)

dill

pickles

Coat the bottom of a heavy pan with olive oil and saute the onion and carrot for about 5 minutes, or until the onion has softened.

Add the rest of the ingredients, up to but not including the sour cream, and bring to a simmer.  Cover and simmer for about 15 minutes, or until the potatoes are tender but not mushy.

Mix the flour and sour cream together until completely combined, and stir in to the soup.  Season to taste with salt and pepper, and cook for a further few minutes.

Serve garnished with sprigs of dill and thinly sliced pickles.

CROCK POT METHOD:  Put everything in the crock pot up to, but not including the sour cream, etc. Let it cook on low for 4 hours.  Stir in the sour cream and flour mixture, and cook for another hour until smooth and slightly thickened.

Such a totally different tasting recipe!  It is excellent!  Takes me back to my German roots. I will say that it took ALOT of chopping.  Think the next time I will drag out my food processor for some of it. I imaging it will be more flavorful the next day too!
