I can’t rate the exact recipe since I only had 1/4 cup pan drippings and changed the broth to chicken as the drippings were from roasted chicken. I also added 1/8 tsp more of the xanthan per another review. It tasted very good! Even my picky adult daughter asked me to always make it this way. 
A tip for the XANTHAN GUM: Mix it with the Worcester, garlic, salt, pepper and add some of the hot drippings from the pan. (Use a glass measuring cup and just scoop the liquid)  Whisk immediately. Continue adding more hot liquid. It’ll become paste. When it’s no longer clumpy add to the pan and continue to whisk away.

This recipe was excellent! The only modification was I cut the recipe in half, used bacon drippings, and added a little garlic salt/parsley mix. Yummy! In the end, I did also add another shake of xanthem gum to get the thickness right. As a gravy lover, this recipe will be a staple.

When it melts sear the beef in batches to form a brown crust, remove to a plate, and continue searing the remaining beef. Add the onions and switch to a wooden spoon. Sauté them for 1 minute, scraping the bottom of the pot to make sure no brown bits are left stuck on.

Cook on manual high pressure for 35 minutes. Once the stew is cooked allow natural pressure release for 10-15 minutes. This gives the meat a chance to really soak up all those flavors. Click the ‘sauté’ setting. Dissolve the cornstarch with 2-3 tablespoons of water and add that to the instant pot once the liquid starts bubbling. Allow the sauce to thicken, about 1-2 minutes, stir to combine. If the gravy becomes too thick, you can add a couple more tablespoons of water to thin it to your desired consistency. Adjust salt and pepper to preference and serve over mashed cauliflower, mashed potatoes, rice, or egg noodles.

Once all of the broth has been incorporated, add the Worcestershire sauce, salt, pepper, garlic powder, and onion powder. Adjust the heat to maintain a simmer, and simmer for about 5-7 minutes, stirring occasionally.

Pro Tip: Refrigerate the meatballs for 15 minutes after rolling them to help them stay together during cooking.

Set olive oil aside and gently mix remaining meatball ingredients in a large bowl until just combined, don’t overmix or the meat will become tough. Roll into 1+1/2 inch meatballs.

Heat olive oil in a large nonstick skillet over medium heat. Brown 5-6 meatballs at a time for about 2 minutes on each side. (Leave extra room around each so that you can easily roll them over to cook on the reverse side.) Remove and set aside on a plate. Repeat for all meatballs.

Reduce heat to medium. Add any oil/drippings from the meatball plate back to the pan and melt a Tablespoon of butter. Add the sliced onions and let them soften and even caramelize a bit, about 15 minutes. Stir often.

Add the chicken broth, beef broth, beef bouillon, onion powder, garlic powder, and Worcestershire sauce to the skillet. Stir to combine.

Use a silicone spatula to work any brown bits on the bottom of the pan into the sauce. If a darker color is desired, add 2-3 drops of Kitchen Bouquet browning and seasoning sauce.

Combine the cold water and corn starch in a small Tupperware with a lid. Shake to combine.

Bring gravy to a boil. Slowly whisk in cornstarch mixture until desired thickness is obtained. Decrease to medium low. Continue to whisk to ensure that it blends in smoothly.

Prepare the Gravy

Add the meatballs back to the skillet and heat for about 10 minutes to allow the meatballs to finish cooking through. Garnish with parsley and serve over mashed potatoes.

Preheat a large cooking pan oven medium heat. Melt butter and add onions, salt, and sugar. Mix very well until onions are evenly seasoned. Let onions cook until all softened, mixing from time to time.&nbsp;

Pour in white wine and let it cook for 2-3 minutes.&nbsp;

Mix beef stock, tomato sauce, white wine vinegar, pressed garlic, thyme, salt, and paprika in a mixing bowl and pour it into the pan with onions.&nbsp;

Stir carefully and let it simmer for 5-7 minutes. Take off heat.&nbsp;

French Onion Sauce:

Preheat the oven to 300°.

Use two long sheets of aluminum foil to place them in the bottom of a roasting pan side by side but overlapping. Make sure the roasting pan fits the brisket nicely, not too bit and not too small.

Spread 1/3 of the sauce and onion in the bottom of the pan, on the foil. Place brisket on top of the onions, fat cap up.&nbsp;

Spread remaining French Onion sauce over the brisket and close the foil around the brisket to create a pocket. If the brisket is large, you may need to cover with another sheet of foil on top and tuck it under.

Place in the oven and cook for about 6 hours.&nbsp;

Open the foil and cook for another 45-60 minutes uncovered.&nbsp;

Take the roasting pan out of the oven and take the brisket out of the pan and onto a cutting board. Loosely tent with a sheet of foil and let the brisket rest for about 15 minutes before slicing.&nbsp;

Use a sharp knife to slice across the grain when ready.

Brisket:

Pour all onions and sauce out of the roasting pan and into a sauce pot.&nbsp;

Mix cornstarch with some cold beef stock and stir it into the sauce.&nbsp;

Bring the sauce to simmer over medium heat and cook it until thickened, stirring often.&nbsp;

Take it off heat and spoon it over sliced brisket and potatoes when serving.

Gravy:
