Add uncooked brown rice to the Instant Pot or other pressure cooker. Pour in the water, stock or broth and stir to combine. Seal the lid of the Instant Pot and select 15 minutes on high pressure.&nbsp;

Allow the Instant Pot to release pressure naturally. Remove the lid to the Instant Pot and fluff the brown rice with a fork.&nbsp;

Serve the brown rice or transfer to an airtight container and store in the refrigerator for up to a week or the freezer for 3 months.&nbsp;

coriander/cilantro leaves

dill leaves

lemon juice

tbsp extra virgin olive oil

Dijon mustard ((Note 3))

black olive slices

Other topping options: feta, parmesan, nuts (Note 4)

Place Dressing ingredients in a jar and shake well to combine.

Place Salad ingredients in a big bowl. Drizzle over Dressing, toss well.

Transfer to serving bowl. If using Halloumi, pile on top.

How to Cook Perfect Brown Rice on the Stove

Rinse the rice in a mesh strainer—if you aren’t in the mood, skip it.

combine the rice and water in a pot and bring to a simmer

Combine the rice, water, salt, and butter (if using) in a medium saucepan and bring to a simmer, uncovered, over medium-high heat.

Reduce the heat so that the rice stays at a low simmer, and cover the pot. Simmer without lifting the lid of the pot for 45 minutes. Lift the lid and see if the rice is tender and the liquid has been absorbed. If so, remove the pan from the hat, leave the lid on , and let it sit for 10 minutes. If not, and it seems like the rice isn’t quite tender but the water is gone, add a few tablespoons more water or broth and let it cook for another minute or so. If there is just a tiny bit of liquid left, just leave it while you let the rice rest for 10 minutes – and it should absorb.

Easy Spanish Style Rice

13.5 oz canned diced tomatoes with chilis

Drizzle oil in a deep dish pan. Heat up the pan over medium high heat. Add diced onions and cook until softened and slightly translucent. Add garlic followed by the mixture of smoked paprika, ground cumin, chili powder, oregano, salt and pepper. Mix everything together and cook over the heat.

While everything is cooking, rinse your rice until the water runs clear. Then add the rice to the pan and mix together. Make sure the onions, garlic and spices are evenly distributed throughout the rice.

Add the diced tomatoes and broth. Bring the pot up to a boil and then lower it to a simmer. Cover and cook until the rice has absorbed all of the liquid, approximately 30 minutes.

Fluff the rice with a fork or spoon and serve while hot! Optional: add cilantro, or your favorite fresh herb, and a squeeze of lime.

An easy dinner that takes only 30 minutes to make! It's healthy and delicious!

Deconstructed Stuffed Peppers

bell peppers (chopped, any color bell pepper will do)

onion

oz turkey

chili powder

cumin

salsa

sour cream

In a large pan or dutch oven set over medium heat, brown the turkey and onion until the turkey is fully cooked. Drain and discard any excess fat.

Add the garlic, cumin, and chili powder. Stir to combine.&nbsp;

Add the chopped bell peppers and cook until semi-soft about 5 minutes. 

Add the cooked rice and salsa. Stir to combine. Add salt and pepper to taste.

Serve with sour cream, cheese, avocado, cilantro. Or whatever you like!

Heat olive oil in a medium pot over medium-low heat, saute onion for 8-10 minutes. Add garlic, cumin and cinnamon. Cook another minute.

Add brown rice and lentils, cook for 2 minutes, stirring frequently. Add salt and 3 1/4 cups water.

Bring to a boil, cover and reduce heat to a simmer and cook for 40-45 minutes.

Using a strainer, rinse the rice under cold water, then drain it completely. (Here’s why.)

Boil the rice using the “Pasta Method”

In a saucepan over high heat, bring the water to a boil. Add the rice and stir. Continue to boil uncovered until tender, with the water bubbling rapidly, for 20 minutes. Start tasting at 18 to 20 minutes: if the rice is tender, remove the heat. If not, keep cooking 5 to 10 minutes more until the rice is tender. (All rice types and brands are slightly different, so you’ll have to adjust according to the specific rice. Ours is usually done in around 18 to 25 minutes.)

Steam the rice

Pour the rice into a strainer, then return it to the pot. Cover the pot and allow the rice to steam for 5 minutes. Uncover and fluff the rice with a fork. Stir in the salt.

In a large deep frying pan, heat a glug of oil and add the onion. Fry for 5 minutes, then add the spices. Fry for a further 2 minutes, then add the rice. Cook, stirring regularly with a wooden spoon, for 3-4 minutes, then add 200ml of the stock. Allow the stock to be absorbed, then add half of the remaining stock and simmer for 15 minutes. Add the remaining stock, then simmer for 10 minutes until nearly tender. Stir in the peas, spinach and yogurt. Simmer for 5-10 minutes more until the rice is tender and the veg are cooked.

Meanwhile, bring a pan of water to the boil. When the rice has 10 minutes of cooking time left, drop the eggs into the water and boil for 5 minutes. Remove them from the pan, run under cold water and peel once they’re cool enough to handle. (Alternatively, poach the eggs until cooked to your liking.)

When the rice is cooked, taste and season, then stir in the coriander, flaked salmon and lime juice. Top with the halved soft-boiled eggs.
