unsalted butter

brown sugar

tbsp honey

tsp pumpkin pie spice

water

In a skillet over medium-high heat, add butter, brown sugar, honey, pumpkin pie spice, and water. Bring to a boil, stirring occasionally.

Add carrots to skillet and let carrots, stirring occasionally, for 6-8 minutes or until tender.

Increase heat to high and cook until liquid is reduced, stirring occasionally, about 5-7 minutes.

Serve immediately.

Place the carrots in a large pan. Add 1 cup of water to the pan. Bring to a simmer and cook the carrots for 8-10 minutes or until tender.

Drain the water from the pan and return the pan to the stove over medium heat. Add the brown sugar, butter, salt and pepper.

Cook for 2-3 minutes or until butter and sugar have melted and carrots are coated in the glaze. Sprinkle with parsley and serve.

Pounds Carrots (peeled)

Balsamic Vinegar

Tablespoons Olive Oil

Tablespoons Brown Sugar

Salt

Pepper

Parsley (Optional)

Preheat oven to 425 degrees. Wash and peel carrots and trim off edges if desired.

Cut each carrot into three pieces and then cut each piece in half so there is a flat side. Lay carrots, flat side down in a metal baking sheet with sides.

In a small bowl whisk together balsamic vinegar, olive oil, and brown sugar. Start with 2 tablespoons brown sugar and if you prefer sweeter carrots, add more to taste.

Pour vinegar mixture over the carrots and gently tip the pan side to side so that the mixture gets under the carrots.

Sprinkle with salt and pepper and then roast for 15-20 minutes or until balsamic mixture has thickened and carrots are a deep golden brown and tender. Garnish with some parsley. Serve immediately.
