Bruschetta with Tomato and Basil, one of my favorite way to use up my summer tomatoes is with this simple appetizer or side dish.

Bruschetta with Tomato and Basil

plum tomatoes (diced)

garlic (minced)

onion

tbsp extra virgin olive oil

tbsp balsamic vinegar

olive oil spray

basil leaves (chopped)

kosher salt

black pepper

oz baguette bread

garlic

Combine tomatoes, chopped garlic, red onion, vinegar, oil, salt, pepper, and basil.

Set aside.

Slice bread into 1/2 inch thick slices.

Place on a tray and spray lightly with olive oil.

Toast bread under broiler, until golden, watching closely not to let it burn.

When bread is toasted, rub each piece with whole garlic clove.

Place bread on a platter and top with tomato mixture.

Serve immediately or the bread will become soggy.

Follow our simple recipe to prepare the perfect bruschetta, ideal for a light lunch or to serve up as an aperitivo at an Italian dinner party.

Our Classic Bruschetta Recipe

½ red onion, finely diced

tomatoes, roughly chopped

garlic cloves, crushed

basil leaves, roughly torn

milliliters balsamic vinegar

4tbsp extra virgin olive oil

Salt and black pepper,

ciabatta baguette

Combine the onion, tomatoes, garlic and basil in a large bowl. Mix them together but try not to let the tomatoes disintegrate too much. 

Pour in the olive oil and balsamic vinegar and season with a little salt and pepper. Place the mixture in the fridge to chill for about an hour. 

When you’re ready to serve your bruschetta, slice your ciabatta diagonally into 8 or 12 equal pieces. Toast them under the grill so that they lightly brown on both sides. Divide the tomato mixture between the slices evenly and serve on the freshly toasted bread. Buon appetito!

An easy garden fresh bruschetta recipe combining sun ripened tomatoes, sweet basil, and garlic all served on toasted baguette slices with a drizzle of balsamic glaze.

Easy Bruschetta with Balsamic Glaze

tomatoes

salt

basil leaves

red wine vinegar (or balsamic vinegar)

olive oil

baguette

extra virgin olive oil

balsamic vinegar

brown sugar

Combine tomatoes and salt in a bowl.  Let sit for 20-30 minutes.  Drain tomato juice. Add garlic, basil and pepper; stir gently to combine.  Drizzle with vinegar and olive oil; stir gently to coat.  Let sit for 20-30 minutes at room temperature.

Preheat oven to 400 degrees.  Brush both sides of the bread with olive oil.  Place on a parchment covered baking sheet.  Bake for 5 minutes and then flip toasts and bake for 2-3 minutes or until golden brown.

Combine balsamic vinegar and brown sugar in a small saucepan over medium heat. Bring to a low boil and simmer for 10 minutes; stirring occasionally.  Remove from the heat and let cool for a few minutes.

Assemble by spooning the tomato topping on to the toasted baguette slices.  Place on a serving platter and lightly drizzle with the balsamic glaze.  For best results serve promptly.

I did use a store bought balsamic glaze because I wanted to try it and, although I love balsamic vinegar, I do not like how it smells in the house after reducing it on the stovetop.

Bruschetta Recipe

extra virgin olive oil (divided)

Roma tomatoes (diced (465 grams))

basil leaves (thinly sliced (10 grams))

In a small skillet, heat 2 tablespoons of olive oil and the garlic over medium-low heat until the garlic is very fragrant, about 2 to 3 minutes. (Do not brown the garlic.) Remove from heat and transfer to a medium mixing bowl to cool for a few minutes.

To the cooled garlic oil, stir in the tomatoes, basil, vinegar, salt, and pepper. Let marinate for at least 30 minutes and up to 4 hours.

Preheat the oven to 400°F. Lightly brush both sides of the baguette slices with the remaining 1 tablespoon of olive oil and place on a baking sheet in a single layer. Toast the bread until golden brown, about 12 minutes, turning halfway through baking.

Top the toast baguette slices with the marinated tomatoes and serve immediately.

Easy Garlic Bread Bruschetta Recipe

Italian bread, (1/2-inch thick)

garlic, (cut in half)

parmesan cheese

basil

garlic, (minced)

salt and fresh ground pepper, (to taste)

balsamic glaze, (optional, for topping)

Preheat oven to 400˚F.

Line a baking sheet with parchment paper or foil.

Using a pastry brush, brush each slice of bread with olive oil; transfer slices to prepared baking sheet, oiled-side down.

Toast bread in the preheated oven for 8 to 10 minutes. Keep an eye on the bread so it doesn’t burn.

Remove from oven; rub the cut side of the garlic cloves over each slice of toasted bread. Set aside.

Transfer diced tomatoes to a mixing bowl.

To the tomatoes, add cheese, basil, and garlic; stir.

Season with salt and pepper.

Add oil and balsamic vinegar; mix until thoroughly combined.

Taste salad and adjust accordingly.

Divide up the salad over the toasted bread slices, add just a drizzle of balsamic glaze over the top, and serve!

Mix tomatoes, basil, garlic and cheese until each bite has a sufficient amount of each. Add more if necessary. Toss in salt and pepper,red wine vinegar and stir. Add olive oil. Should be nice and shiny. Let sit in refrigerator to allow flavors to mingle. Enjoy!

To make bruschetta bread, hollow out a loaf of french bread. Spoon in the bruschetta and top with an extra 1/2 cup of shredded parmesan cheese. Bake in a 450 degree oven for about 10 minutes, until cheese is melted and bread is toasted. Cut and enjoy.

For pasta, prepare noodles according to package (I like angel hair pasta). Grill chicken with salt and pepper. Slice into thin strips. Heat bruschetta in microwave for about 2-3 minutes, until warmed. Serve over warm pasta with chicken strips and extra parmesan cheese. Enjoy!
