This hearty and savory cabbage roll casserole combines the flavors of rich tomato sauce with cabbage, beef, and cheese. Without the hassle of making traditional cabbage rolls, the casserole version is perfect for any weeknight dinner!

Cabbage Roll Casserole

28 ounce can diced tomatoes, (undrained)

Start by chopping the onion. Put the 2 lbs. of ground beef in a large skillet. Add the chopped onion, 3 minced garlic cloves, 1 teaspoon of paprika, ½ teaspoon thyme, and 1½ teaspoons of salt to the skillet and cook over medium heat until no longer pink. Drain the fat in a colander and set aside.

Next, add ½ of the can of tomato sauce, the 28 ounce can of diced tomatoes, 1 cup water, and ½ can of tomato soup to the skillet with the cooked ground beef.

Add the ¾ cup of uncooked rice to the skillet and mix well until heated through, about 10 minutes. Set aside.

Cut the cabbage into 4 wedges and remove the core. Chop the cabbage into large bite sized pieces.

From there, layer ½ of the beef and cabbage roll sauce mixture in the crock pot. Then layer ½ of the freshly chopped cabbage.

After the layering is complete, combine the remaining ½ can of tomato soup, remaining ½ can of tomato sauce, and ⅓ cup water into a large bowl.

Stir to combine and then pour the mixture over the top layer of cabbage. Put the lid on the crock pot.

Cook on low for 4 hours or just until rice is done. Once done, turn Crock Pot off, sprinkle mozzarella cheese on top and let sit 10 minutes to set and melt cheese. Add additional salt and pepper to taste.

Lazy Cabbage Roll Casserole With Ground Beef

ground beef (or mixed ground meat)

(15 oz) chopped tomatoes (in liquid)

green cabbage

carrot (medium grated)

mozzarella (grated)

Dill or parsley

In a medium skillet or dutch oven pot, over medium-high heat add 2 tablespoons of olive oil. Once oil is hot, saute onion for about 1 minute before adding carrot. Cook the mixture for 1 minute.

Add the beef breaking it apart with a spatula. Cook until meat is browned and no longer pink. I prefer using lean meat but if you have lots of liquid, drain it first before moving to the next step.

Into the same skillet add black pepper, sugar, salt, sweet paprika, cajun, tomato sauce, and chopped tomatoes. Stir until combined. Reduce the heat to medium-low and simmer for 10 minutes.

While the mixture is simmering, preheat the oven to 350 degrees Fahrenheit. Spray an 8x11 inches or 2 quart baking dish with cooking oil.

Remove the skillet from heat and transfer the beef mixture to a deep pot or large dutch oven. Stir in cooked rice and taste for salt and black pepper. Set aside.

Cook the cabbage. Wipe the skillet or pot (same as what you used for beef) clean with paper towels and heat the remaining 1 tablespoon of oil over medium heat.

Once cooked, transfer half of the cabbage into the baking dish. Top with beef rice mixture. Repeat with one more cabbage and beef layer. Blend/even out the top layer and sprinkle with mozzarella cheese.

Cover with aluminum foil and bake for 20 minutes.

Remove the foil and bake for another 20 minutes until the cheese is nicely melted.

If you want, you can use the broil setting (towards the end, 1-2 minutes) in your oven to brown the cheese slightly. Serve with fresh dill, parsley, and a dollop of sour cream on top of the cabbage casserole.

Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.

Heat 12-inch nonstick skillet over medium-high heat. Add beef and onions; cook 8 to 10 minutes, stirring to break up chunks, until beef is brown. Remove from skillet; drain and set aside. Wipe out skillet.

In same skillet, melt butter over medium-high heat. Stir in coleslaw mix, garlic, salt and pepper. Cook 1 to 2 minutes, stirring frequently, until wilted. Stir in tomato sauce; heat to simmering. Remove from heat. Stir in beef mixture and rice. In small bowl, beat eggs and whipping cream; stir into mixture in skillet. 

Spoon mixture into baking dish. Cover with foil. Bake 22 to 24 minutes or until heated to 165°F in center of casserole. Top with parsley; serve with sour cream.

Cabbage Roll Casserole (Unstuffed Cabbage)

I love Cabbage Rolls, but somehow I am not able to roll them right.I can do what I want, they would always fall apart.

onion (sliced)

- 1 head cabbage (chopped)

rice (uncooked)

chicken stock

salt (pepper, garlic powder)

shredded cheese (1 tablespoon for each serving)

Preheat your oven to 350°F

Cook your rice according to package directions

Cut cabbage in stripes

Brown your beef and half of the onion in a skillet

Transfer meat and onions to a big bowl

Mix in the cabbage, tomato sauce, remaining onion, cooked rice, salt, pepper and garlic until well combined

Transfer mixture into a 9 inch baking dish, pour chicken stock over it

Bake for 30 minutes, take out and stir

(if there isn't enough liquid anymore, refill with 1 more cup of chicken stock)

Bake for another 30-40 minutes

Right before serving top with 1 tablespoon of shredded cheese

Preheat the oven to 350 degrees Fahrenheit. Lightly spray a 9x13-inch casserole dish with nonstick cooking spray.

In a large skillet over medium heat, add 1 tablespoon olive oil, 1 ½ pounds lean ground beef, and  ½ cup minced onion. Cook until the meat is no longer pink and the onion is softened.

Season

Add 2 cloves minced garlic, 2 teaspoons dried Italian seasoning, ½ teaspoon dill, 1 teaspoon salt, and ¼ teaspoon pepper. Stir and cook for 30 seconds.

Stir

Add 24 ounces marinara sauce,  1 (14-ounce) can diced tomatoes with juice, and 2 cups cooked rice. Stir until combined and continue to cook until warmed through.

In a large pot, add 2 tablespoons butter and 6 cups roughly chopped cabbage. Cook on high heat until the cabbage is barely wilted and browned.
