This simple tuna curry bowl is made with pantry/freezer staples and comes together in less than 20 minutes so it’s perfect for a quick and healthy weeknight meal! Paleo, grain-free, gluten-free and low-carb.

Tuna Curry Bowl with Cauliflower Rice

coconut oil

ginger

garlic,

Tablespoon yellow curry powder

15 coconut milk (regular or lite)

Tablespoon coconut aminos

lime juice

cayenne

turmeric

black pepper

16 oz bag frozen stir-fry veggies

oz bag frozen cauliflower rice,

green onions (greens only), chopped

cilantro, chopped

cashews, chopped

sriracha (optional)

Heat coconut oil in a large skillet over medium high heat. Add ginger and garlic and sauté until fragrant, about 3-4 minutes. Add stir-fry veggies and cook for another 3-4 minutes. Stir in spices (curry powder, turmeric, cayenne and black pepper) and then add coconut milk, coconut aminos, and lime juice into the skillet as well.

Continue stirring and bring mixture to light boil. Reduce heat and stir in tuna. Cook additional 1-2 minutes until just heated through. Serve tuna curry over cooked cauliflower rice. Garnish each portion with green onion, cilantro and cashews. Top with sriracha (or your favorite hot sauce) and enjoy!

Edamame, tuna and ginger fritters recipe

(240 grams) podded frozen edamame, roughly chopped

can tuna

coriander leaves, finely chopped

pickled

white onion, thinly sliced

eggs, lightly beaten

(35 grams) plain flour, sifted

(80 milliliters) extra virgin olive oil

Lebanese cucumbers, sliced lengthways

Toasted sesame seeds, wasabi, Kewpie mayonnaise & soy sauce, to serve

Fabulous flavour beyond just canned tuna thanks to the anchovies, the freshness of lemon and tangy capers. The oil from the can of tuna is used as the sauce so don&#39;t be tempted to use tuna in brine!

spaghetti (, or other thin long pasta)

tbsp cooking salt (,

285 grams/ 10 oz (approx) canned tuna

garlic (, finely minced)

anchovy (, minced (Note 2))

tsp baby capers ((or finely chopped pickles))

tbsp parsley (, finely chopped (ok to skip))

lemon

tbsp lemon juice ((sub 1 tbsp apple cider

tsp cooking/kosher salt

tsp black pepper

Cook pasta - Bring 3 litres / 3 quarts of water to the boil with the 1 tablespoon of salt. Cook pasta per the packet time minus 1 minute. Just before draining, scoop out ~1 cup pasta cooking water, then drain the pasta.

Sauté aromatics - In the same pot, heat the reserved oil from the tuna cans over medium heat. Add the garlic, anchovies and chilli flakes. Cook and stir for 1 minute.

Toss pasta - Add the pasta, capers and 1/3 cup of reserved pasta water. Toss using 2 spatulas for 2 minutes.

Add tuna - Turn off the heat. Add tuna, parsley, lemon zest, juice, salt and pepper. Toss gently to mix through - try to keep some tuna chunks.

Serve immediately!

Drain the tuna.

In a large mixing bowl, combine the tuna with all of the ingredients except for the raw eggs.

Taste and adjust seasonings.

Add the beaten eggs and mix well together.

Form into 5 equal patties.

In a cast iron or a non-stick pan, add the oil and saute the patties over medium heat.

Cook until golden brown, about 3-4 minutes per side.

Serve immediately with lemon wedges and garnish with chopped parsley (optional).

425 grams/ 15 oz canned tuna in oil

grams/ 3.5 oz Danish feta ((Note 2))

tbsp extra virgin olive oil

tsp cooking / kosher salt

Pita bread pockets (, warmed, cut in half)

Dressing - Put all the ingredients EXCEPT the water in a jug just large enough to fit the head of a stick blender. Blitz until smooth. Add water 1 tsp at a time until it&#39;s a thick drizzle-able consistency (don&#39;t dilute flavour too much).

Salad - Place all the salad ingredients EXCEPT the feta and tuna in a large bowl. Pour over the dressing, toss. Crumble feta in, toss (it will smear - we like!). Add the tuna and gently toss, trying to keep some chunks rather than it all crumbling into tiny pieces.

Serve in bowls with spoons for digging in! Tuck warm pita pockets on the side, or use the tuna salad to stuff inside the pita (it&#39;s sooooo good!).

Open and drain the tinned tuna, and set aside.

In a medium bowl, mix the cream cheese, sour cream, onion, parsley, red pepper and salt.

Add the drained tinned tuna to the mixture and fold it gently using a fork.

Transfer the tuna dip to a serving bowl or rimmed plate.

Top with fresh capers and place in the fridge until you&#39;re ready to serve.

Easy Creamy Tuna Dip

(4.5 oz) cream cheese (at room temperature)

Greek yogurt

curry powder

(6.5 oz) tinned tuna

Beat the room temperature cream cheese in a large bowl with a spoon until soft. (You can use a hand mixer or stand mixer instead if you prefer.)

Add the yogurt, curry powder, salt and black pepper and mix well.

Gently stir in the tuna. Leave some larger pieces of of tuna if you want a chunkier dip, or keep mixing to break up the tuna for a smoother dip.

Check for seasoning and serve.

Will keep in an airtight container in the fridge for up to 2 days.
