Mashed Cauliflower is essentially a creamy cauliflower puree that makes a delicious low-carb or Keto alternative to mashed potatoes.

Mashed Cauliflower

cauliflower

garlic

1% buttermilk

salt and pepper

salted butter (plus optional more for serving)

Steam or boil cauliflower and garlic until soft.

Drain the cauliflower, then add buttermilk, butter, salt, pepper and purée with an immersion blender. (If you don&#x27;t own a hand blender, you should consider getting one. It is one of my most used gadgets in my kitchen, you&#x27;ll wonder how you ever lived without it!) A regular blender would work fine as well.

I made this with Morning Star ground crumbles (season to taste with salt, pepper, onion powder, paprika) and subbed vegetable broth for chicken broth. I still used milk, cream cheese, and regular cheddar as we eat dairy but you could sub plain almond milk, add a little xantham gum for thickness, vegan cheese, and almond flour to make it vegan.

Wonderful. This was made for me (yes!) and there was extra cheese on top. I will make this myself one day.

Love love love! Shepard Pie is one of my favorites and this provides a wonderful Low carb version. I omit corn & peas. Do include diced turnips, celery, carrots, onions. Check your carb charts- these are all good! I add to fat by adding butter to cauliflower and whipping cream rather than milk. If I’m feeling crazy, may add some spinach or diced cabbage. Total carbs in this are great - cauliflower is recommended as sub for potatoes.

We love this! Awesome comfort food with less carbs! Already made this many times. Great for large families, just double everything. I leave the flour out. Celiac. For the picky eaters you can always substitute the veggies with other veggies. I used celery in mine and left out the corn.

Really loved this, I used a frozen bag of minced cauliflower from Costco, which I could not get creamy with using the potato masher.   I ended up putting all the ingredients for the cauliflower topping in my blender, and it turned out super creamy and delicious!  This was also a hit with all three of my picky eater children!

Amazing!! I swapped the ground beef for ground turkey. Didn’t drain and still added the broth. Added poultry seasoning for an extra touch.  Had to use an immersion blender to get the mashed potato consistency. What a hit!

Use 2 heads of cauliflower, otherwise, top is too thin.

Excellent meal!  My husband is Type 2 diabetic & he can enjoy this without the guilt!  He ranks this as one of his favorites & I concur.

We Love This Low Carb Shepherds Pie

Mashed cauliflower makes a fabulous stand in for potatoes in this classic French side dish. Elegant and keto-friendly Duchess Cauliflower!

Keto Duchess "Potatoes"

cauliflower florets

water

cheddar cheese

coconut flour

salt

tsp pepper

tbsp butter, melted

In a large saucepan over medium heat, combine the cauliflower, garlic, and water. Bring to a boil, then reduce the heat and simmer 5 to 8 minutes, until the cauliflower is can be easily pierced with a fork.

Remove from heat and drain in a siever or colander for a few minutes. Preheat the oven to 350F and line a rimmed baking sheet with parchment paper. Lightly brush the parchment with oil.

Place the warm cauliflower and garlic cloves in a food processor or high powered blender. Add the cream cheese and cheddar and blend until smooth. Add the egg yolks, coconut flour, salt, and pepper and blend again until smooth.

The mixture should hold peaks when you stick a spoon into it, similar to frosting or whipped cream. If it doesn&#039;t, add a bit more coconut flour to thicken it.

Transfer the mixture to a piping bag fitted with an open star tip (about 1/2 inch wide at the tip). Pipe into swirls about 3 inches wide on the prepared baking sheet. You should get about 18 mounds.

Bake 10 minutes, then remove from the oven and gently brush the melted butter over the swirls. Return to the oven and bake another 8 to 10 minutes, until golden brown. Serve warm.

Cauliflower mashed potatoes topped with a simple mushroom gravy that comes together in less than 10 minutes.

Cauliflower Mashed Potatoes with Mushroom Gravy

butter

unbleached all-purpose flour

thyme ((chopped))

In a large saucepan, cover potatoes with water and bring to a boil. Reduce heat to a low boil and cook until a knife inserted slides off easily.

In the meantime, add the cauliflower to a strainer or veggie steamer and place on top of the potatoes in the saucepan to cook at the same time. Cover with a lid to steam.

Once both are soft and cooked through, transfer to a bowl and mash with a potato masher, adding salt and pepper and 1 Tbsp of vegan butter to season (amount as original recipe is written // use 1/3 total amount of butter if altering batch size). Set aside and cover to keep warm.

In a skillet over medium to medium-high heat, melt the remaining vegan butter (2 Tbsp as original recipe is written). Add the shallot and mushroom and cook for 10 minutes, stirring frequently. Cook until the mushrooms are soft and brown, and most of their liquid is evaporated.

Stir in the flour with a whisk and reduce heat to medium. Cook for another minute or two.

Slowly add veggie broth while whisking to reduce clumps. Then add in the thyme and whisk again.

Reduce heat to simmer and continue to stir until it reaches desired thickness – about 5-10 minutes. If it appears too thin, add a touch more flour and whisk. If it’s too thick, add more broth.

Season with salt and fresh ground black pepper to taste. Serve over cauliflower mashed potatoes. Store leftovers in the fridge in an air-tight container for up to a few days.

These Keto Cauliflower Mashed Potatoes are made with cauliflower, garlic, and vegan butter for a delicious vegan, gluten-free, and low-carb side dish at your next holiday meal. Made in under 20 minutes!

Instant Pot Cauliflower Mashed Potatoes

garlic, (peeled)

Chop the cauliflower into small, even-sized florets. In a large pot, bring 4 cups of vegetable broth to a boil. Add the chopped cauliflower and whole garlic cloves and boil for 15 minutes, until the florets are easily pierced with a fork.

Strain the cauliflower/garlic through a colander and transfer it to a blender or food processor. Add parmesan (if using), butter, and salt. Process until mostly smooth so that it resembles mashed potatoes. Add non-dairy milk, 1 tbsp. at a time, if needed. 

Serve immediately with freshly cracked pepper, chives, and melted butter. 

This Neeps and Tatties recipe is a fun way to add international flair to any meal. And the best part? There are just two ingredients!

Scottish Neeps and Tatties

½ lbs rutabaga (aka wax turnip, swede,

½ lbs potato (680 g)

To serve: butter, salt

Prep: Bring a large pot of water to a boil, then salt it well. Peel and roughly chop the rutabaga. Chop the potatoes (skin can stay on or you can peel - your choice). Keeping the veggies separate.

Cook Neeps: Carefully add the chopped rutabaga to a to the boiling water. Cover and cook for 15 minutes.

Add Tatties: Carefully add the chopped potatoes to the water with the rutabaga. Continue cooking for 15 more minutes, or until both the rutabaga and potato are fork-tender.

Mash: Roughly mash, leaving some pieces bigger than others. Add a few pats of butter and a sprinkle of salt. Serve hot!

Cook mashed cauliflower in the microwave according to the package.

Add contents to a bowl then whisk in butter, both cheeses, heavy cream, garlic powder and salt and pepper to taste.

This mashed cauliflower recipe is a delicious alternative to mashed potatoes. It&#x27;d be great for Thanksgiving, but note that it serves 3 to 4. If you&#x27;re feeding a crowd, scale the recipe up accordingly. Depending on the size of your food processor, you&#x27;ll likely need to work in batches.

Garlic Mashed Cauliflower

Bring a large pot of salted water to a boil. Add the cauliflower and boil until knife-tender, about 10 minutes. Drain and transfer to a food processor.

Puree the cauliflower with the butter, garlic, mustard, salt, and pepper. Season to taste and garnish with chives, if desired.

These Cauliflower &quot;Mashed Potatoes&quot; are a creamy vegetable side that&#39;s easy to prepare, and quick to make!

Cauliflower Mashed Potatoes

Cut the cauliflower heads down into florets, then steam or boil for about 8-10 minutes, until completely fork tender and soft.

You can also cook the florets in an , by adding 1/2 cup of water to the bottom, and placing the cauliflower florets on the steamer insert. Using high pressure, steam for 2 minutes.  

Let the cauliflower drain and cool, then squeeze in a kitchen towel to remove the majority of the water in the cauliflower. If you're in a hurry, I've had success with using tongs or rubber gloves to squeeze the cauliflower while it's still hot, just don't use your bare hands!

For a chunkier cauliflower mash, mix the cauliflower with the remaining ingredients by hand.

For a smoother texture, puree the squeezed cauliflower in a food processor with everything but the chives, for about one minutes, until smooth.

Mix in the chives if desired, or simply sprinkle on top to garnish. Enjoy!&nbsp;

Cauliflower mashed potatoes are the best alternative to regular mashed potatoes. It&#039;s effortless to make, low in calories, low in carbs and needs only 5 ingredients. It&#039;s very simple to transform it into a vegan or paleo-friendly recipe.

Easy Creamy Cauliflower Mashed Potatoes

cottage cheese

Unsweetened almond milk (as needed (optional))

Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves, drizzle with 1 tablespoon of olive oil, and wrap it in aluminum foil. Roast for 35-40 minutes or until the cloves are soft and golden. Let cool slightly before squeezing out the roasted garlic.

Bring a large pot of water to a boil. Add the cauliflower florets and cook for 10-12 minutes, or until fork-tender. Drain well and let cool slightly.

Place the cauliflower in a clean kitchen towel and squeeze out as much moisture as possible. This step helps achieve a thicker, creamier consistency.

In a food processor, combine the cauliflower, roasted garlic, cottage cheese (or Greek yogurt), remaining olive oil, salt, and pepper. Blend until smooth, scraping down the sides as needed. Adjust seasoning to taste.

If the mashed cauliflower is too thick, add a splash of almond milk until it reaches your preferred texture.

Serve hot with your favorite toppings, such as a drizzle of melted butter, fresh herbs, or grated parmesan cheese.

Colcannon is an Irish mashed potato dish mixed with greens and sometimes cabbage. This low-carb mash uses cauliflower in place of potatoes and added kale, which I have to say is really darn good!

Creamy Cauliflower Mash with Kale (Low-Carb Colcannon)

unsalted butter

kale

chopped scallions

fat free milk

kosher salt and pepper

Boil the cauliflower: Put the cauliflower in a medium pot and cover with cold water by at least an inch. Add salt, and bring to a boil.

Cook, covered until fork tender. 6 to 8 minutes. Drain in a colander (reserving some liquid if needed).

In the same pot, melt 1 teaspoon butter medium high heat and add the garlic and scallions, cook 30 seconds, add the kale, 1/4 tsp salt, cover and cook until wilted, 6 to 7 minutes.

In a blender, puree the cauliflower with milk, transfer to the pot with the greens and add 2 teaspoons butter, 1/4 teaspoon salt and pepper, keep warm.

To serve, transfer to a bowl and top with remaining teaspoon butter.

If this delicious meal has salt in it, why not salty butter? Can I use the hand blender thing?

Easy, healthy, and delicious. I served this as a side with our St. Patty’s Day meal. I did substitute margarine for the butter.

Prepared recipe fairly close to the recipe but added potato to the cauliflower plus a tablespoon of cream cheese. This was a very flavorful and satisfying mash. Served it with a side of pork tenderloin. Will make again.

Love Love Love!! Very creamy and tasty.  I doubled the garlic and used buttermilk instead of fat free milk, and it was a hit! Great permanent substitute to mashed potatoes.

This was a yummy as a side dish. I took the leftovers and added an egg, whole wheat flour and used my air fryer to make “potato patties”

Switched low fat milk with heavy whipping cream and it is 1 carb. Delicious recipe.

I made this but did half potato half caulflower and it turned out great!

I made this recipe twice.  The first time I followed the recipe exactly and it was so bland that I tried again with a few tweaks using sautéed onions in place of green onions, I added a touch of sour cream, more salt in addition to the milk however it still isn't great.  Next time I will probably switch out the chopped kale in lieu of spinach or ? because of the bitterness in the kale ( I used Trader Joe's chopped kale).  I think this recipe has a lot of potential but as it is written, it just isn't doing it for me.
