Low Carb Arroz Con Pollo Recipe

olive oil

onion

garlic (minced)

red pepper

chicken breast

tomato sauce

chicken broth

peas

red pimientos

oregano

cumin

Salt + pepper

Green Giant Riced Cauliflower ((12 ounces))

In a skillet, heat olive oil over medium-high heat. Add onion and cook until translucent about 1-2 minutes. Add garlic and sauté for about 30 seconds.

Next, add the red pepper and chicken breast. Cook for 5 minutes until chicken is almost cooked. (It will continue to cook as you add the rest of the ingredients)

Stir in tomato sauce, chicken broth, peas, pimientos, oregano, cumin, salt and pepper. Add&nbsp;Green Giant Riced Cauliflower and mix to combine.

Bring to a boil then reduce heat to medium. Simmer uncovered for 3-5 minutes until fragrant and chicken is cooked through. Serve and enjoy!

How to Make Cauliflower Rice - Easy Recipe!

cauliflower (washed)

salt and pepper (to taste)

Slice the cauliflower head in half and use a knife to remove all the florets. Cut some of the larger florets into smaller pieces so they'll fit within the chute of your food processor.

Insert the grater adapter into your food processor and start feeding the cauliflower florets through the top. Depending on the size of your food processor, you may have to empty it halfway through.

Heat the olive oil in a large pan and sauté the diced onion for a few minutes, until its translucent.

Add the cauliflower rice to the pan and sauté for another 5-7 minutes.

Season with salt and pepper and serve immediately.

Roasted cashews and cauliflower stand in for rice, in this paleo-friendly spiced salmon dish.

This quick and easy Indian-inspired skillet dish, is a low-carb take on Chicken Biryani, made with riced cauliflower in place of rice. It's also Keto, gluten-free and Whole30 compliant.

Cauliflower Rice Chicken Biryani

NeverAny! Fresh ABF Chicken Breasts (cut into 1 inch chunks)

salt

ginger

garlic

garam masala

turmeric

chili powder

lemon juice

Carlini Ghee Clarified Butter

green chili pepper (sliced)

(6 cups frozen Season’s Choice Plain

cilantro

lemon wedges (for serving)

Season the chicken with 1 teaspoon salt, ginger, garlic, 1/2 teaspoon garam masala, chili powder, 1/4 teaspoon turmeric and lemon juice.

In a large skillet over high heat, add 1 teaspoon ghee. Add half of the chicken and cook until browned, and cooked through, about 5 minutes stirring halfway.

Set aside and repeat with the remaining ghee and chicken. Set aside.

Add 2 teaspoons ghee to the skillet, reduce heat to medium-high and add the onion, cook until they become golden about 3 to 4 minutes.

Add the green chili, cauliflower rice, remaining 1 teaspoon of salt, 1/2 teaspoon garam masala and 1/2 teaspoon turmeric.

Cook, stirring until tender, about 6 minutes.

Stir in chicken and garnish with cilantro.

Serve with lemon wedges.

Skillet Cauliflower "Arroz" Con Pollo (Spanish chicken and rice) is a dish I grew up eating, and is pure comfort food to me. This low-carb version swaps the rice for veggies, which means larger portions with 85% less calories than rice!

Skillet Cauliflower "Arroz" Con Pollo

skinless (drumsticks on the bone)

red bell pepper

cilantro (chopped)

water

tomato paste

Sazon seasoning (store bought ore homemade)

oz bag Green Giant Riced Cauliflower Medley

green olives (1 tablespoon brine)

Season chicken with 1/2 teaspoon salt, 1/4 teaspoon garlic powder, 1/4 teaspoon oregano and black pepper.

Heat a medium skillet over medium-high heat, add 1/2 teaspoon of oil and sauté the chicken until browned on all sides, about 5 minutes. Remove chicken and set aside. Wipe the skillet.

Heat remaining 2 1/2 teaspoons oil in skillet, then add onions, peppers, garlic and cilantro. Sauté, stirring about 2 minutes. Add water, tomato paste, sazon, 1/4 teaspoon salt and return the chicken to the skillet. Cover and cook on medium-low heat 30 minutes, turning half way, until the chicken is tender and cooked through. Remove chicken to a plate.

Add the Green Giant Riced Veggies, increase heat to medium-high and stir well, return the chicken to the skillet, add the olives with a little of the brine (liquid) from the olive jar, cover and simmer until heated through, about 6 minutes.

Skillet Taco Cauliflower Rice

93% turkey

tsp kosher salt

garlic powder

tsp cumin

tsp chili powder

paprika

tbsp bell pepper (minced)

tomato sauce (1/2 can)

cauliflower

For the toppings:

avocado (1 small)

chopped cilantro

lettuce

jarred salsa

lime wedges

Over high heat, brown the turkey in a large skillet breaking it into smaller pieces as it cooks, about 5 minutes.

When no longer pink add 1 teaspoon salt and the dry seasoning and mix well.

Add the onion, pepper, water and tomato sauce and cover.

Simmer on low for about 15 minutes.

Remove the cover and add the cauliflower, add 1/4 teaspoon salt and cook until tender, about 8 minutes.

Transfer to a plate and serve with avocado, lettuce, salsa and lime.

Skillet Cheesy Chicken and Veggie "Rice" made with riced broccoli and cauliflower, sauteed chicken and cheddar cheese. It's so fast and easy to make!

Skillet Cheesy Chicken and Veggie "Rice"

lb boneless (skinless chicken breast, cubed small)

black pepper (to taste)

riced cauliflower and broccoli

reduced fat sharp cheddar

Season chicken with 1/4 teaspoon kosher salt, garlic powder and black pepper, to taste.

Heat a large nonstick skillet over high heat. When hot add 1/2 teaspoon oil and add half of the chicken.

Cook 2 to 3 minutes on each side, until no longer pink in the center and browned on the edges. Set aside.

Repeat with remaining chicken.

Add the remaining 1/2 teaspoon of oil, onion and garlic and cook over medium heat about 2 minutes, until soft. Add the riced vegetables (frozen), 1/4 teaspoon salt and pepper and cook 5 to 6 minutes, until heated through.

Return the chicken to the skillet, top with the cheese and cover.

Cook low heat until the cheese is melted, about 2 to 3 minutes.

A quick, healthy and flavorful dish made with cauliflower rice, feta, mushrooms and thyme.

cremini mushrooms (sliced

onion (diced)

garlic (chopped)

cauliflower rice (fresh or frozen (does not need to be thawed if frozen))

chicken or vegetable stock (low sodium)

feta cheese (crumbled)

thyme

black ground pepper

In large skillet heat olive oil.

Add mushrooms and onion, sauté until onions are translucent. About 3-4 minutes.

Add garlic, cauliflower rice, salt and pepper.

Saute until cauliflower is slightly tender. About 5 minutes.

Add stock and thyme.

Continue to cook until cauliflower rice is fully tender and most of the liquid has been absorbed. About 5 minutes.

Add feta and taste. More salt? pepper? thyme?.

Garnish with additional thyme and a bit more feta if desired.
