Roasted Cauliflower Salad with Lemon Tahini Dressing

Preheat the oven to 400ºF. Chop the cauliflower into small florets and place them on a large baking sheet. Slice the red onion into 1/4-inch strips and place them on the baking sheet. Drizzle the cauliflower and onions with olive oil and season with a pinch or two of salt and pepper. Toss the cauliflower and onions until coated in oil, salt, and pepper.

Roast the cauliflower and onions in the preheated oven for 20 minutes, then stir, return them to the oven, and roast for an additional 10-15 minutes, or until the cauliflower is tender and browned on the edges. Let the cauliflower cool slightly.

While the cauliflower and onions are roasting, make the lemon tahini dressing. Add the tahini, water, lemon juice, garlic, cumin, cayenne, and salt to a blender. Blend until smooth, then refrigerate until ready to serve.

Drain and rinse the can of chickpeas. Add them to a skillet along with the olive oil, smoked paprika, cayenne, and a pinch of salt and pepper. Stir and cook the chickpeas over medium heat for about five minutes, or until they sizzle and become slightly crispy. Remove the chickpeas from the heat.

Pull the parsley leaves from their stems and roughly chop the leaves into small pieces (about 1.5 cups loosely packed, once chopped).

To build the salad, combine the roasted cauliflower and onions in a bowl with the spiced chickpeas and chopped parsley. Drizzle the lemon tahini dressing over top, and toss to combine. Serve warm or cold.

Make the dressing first, so the flavors have time to blend. In a jar or bowl, combine the olive oil, red wine vinegar, Dijon, garlic powder, Italian seasoning, salt, pepper, and Parmesan. Whisk the ingredients together or close the jar and shake until combined. Set the dressing aside.

Remove the leaves and stem from the cauliflower, then chop it into very small florets (about the size of a grape). Place the chopped cauliflower in a large bowl.

Drain the black olives and remove the banana peppers from the jar. Add both to the bowl with the cauliflower.

Dice the red bell pepper and finely dice the red onion and parsley. Add them to the bowl.

Pour the prepared dressing over the salad, then toss to combine. Refrigerate the salad for at least 30 minutes to allow the flavors to absorb. Stir again just before serving. This salad gets better as it refrigerates and the cauliflower has more time to marinate. Always stir just before serving to redistribute the flavors.

Preheat oven to 220°C/425°F (200°C fan).

Toss cauliflower with oil, salt and pepper. Spread on tray, roast 20 minutes, turn, then roast for a further 5 to 10 minutes until the edges are golden brown and the cauliflower is cooked through. Don&#039;t let it get overcooked, sad and soggy!

Transfer to bowl and let cool for 20 minutes.

Roast Cauliflower:

Turn oven down to 160°C/320°F (140°C fan). Spread hazelnuts on tray then roast for 5 minutes until they smell amazing.

Cool slightly, then roughly chop (most skin will naturally fall off).

Toast Hazelnuts:

Place hazelnuts, parsley and celery into the bowl. Sprinkle over cinnamon, allspice, salt and pepper. Drizzle with olive oil, maply syrup and vinegar. Toss gently with hands or rubber spatula.

Plate up: Taste, add more salt or pepper if needed. Transfer to serving bowl. Scatter over pomegranates. Serve at room temperature.

Roast the cauliflower. Preheat the oven to 425°F and line a large baking sheet with parchment paper. Toss the cauliflower florets with drizzles of olive oil and pinches of salt and pepper and roast for 20 to 25 minutes, or until browned around the edges.

In a medium bowl, toss the arugula and roasted cauliflower with a drizzle with olive oil, a squeeze of lemon, and a pinch of salt. Spread onto a platter and drizzle ⅓ of the tahini sauce on top. Sprinkle on the lentils, the pickled onions, pine nuts, apricots, and olives. Drizzle with the remaining tahini dressing (or as much as you like) and top with microgreens, if using. Season to taste and serve.

Amish Broccoli Cauliflower Salad

broccoli (chopped)

cauliflower (chopped)

avocado mayonnaise

apple cider vinegar

stevia powder (or more to taste)

Steam broccoli and cauliflower for a couple minutes to crisp tender. Drain and cool slightly.

In small bowl, combine mayonnaise, sour cream, apple cider vinegar, and stevia to form a dressing.

In large bowl, blend broccoli, cauliflower, bacon and dressing until well combined. Chill and serve.

Spring Detox Cauliflower Salad

chili powder, salt, and pepper

apple, sliced thin

shallot, sliced thin

parsley and mint, chopped

juice and zest of one lime

Preheat oven to 400 degrees. Place chickpeas on a baking sheet lined with parchment. Drizzle with olive oil and sprinkle with chili powder, salt, and pepper to taste. Roast for 20-30 minutes until crispy and browned.

Cauliflower Prep

Working in batches, run the cauliflower florets through a food processor until you get &#8220;rice&#8221; &#8211; it should take about 20-30 pulses.

Dressing

Shake up all the ingredients in a jar, or whisk together. Taste and adjust.

Assembly

Toss everything together. That&#8217;s it!

this is, ahem, yummy! i didn't want to pay $1.70 for a single avocado, but i didn't miss it. the chickpeas didn't quite crisp as much as i would've liked in 30 min., but they were still a nice addition. thanks for this easy, light, quick recipe!

Cauliflower Detox Salad

Roasted Butternut Squash and Cauliflower Salad with Lemon-Honey Vinaigrette is a colorful and flavorful meal.  Try it tonight!

Roasted Butternut Squash and Cauliflower Salad with Lemon-Honey Vinaigrette

butternut squash, peeled, seeded and cut into 1-inch cubes

whole head cauliflower,

Olive oil

Salt and pepper

tsp sumac

oz chopped kale

oz baby spinach

Dijon mustard

tbsp honey

Salt and Pepper

oz goat cheese, crumbled

pine nuts

almonds

walnuts

tbsp black raisins

Spread the cauliflower florets and the cubed butternut squash on one large lightly-oiled baking sheet. Season with salt, pepper and sumac. Drizzle lightly with olive oil. Roast for 45 minutes, or until done and well caramelized (If needed, broil ever so briefly to get more char).

Meanwhile prepare the lemon-honey vinaigrette. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt and pepper.

In a salad bowl, mix the kale and spinach together with 2 tbsp of the lemon-honey vinaigrette. Transfer to a serving platter.

Pour the remaining vinaigrette over the roasted butternut squash and cauliflower; carefully toss to coat.

Now add the roasted butternut squash and cauliflower on top of the kale and spinach mixture. Garnish with the goat cheese, nuts and raisins. Enjoy!

Roasted vegetables always put a smile on my face but add this really special vinaigrette and I'd be in heaven. I'm going to make this very soon!

What a lovely recipe! The veggies get so sweet when roasted, and the simple sumac, salt, and pepper bring out their flavors without overpowering them. The vinaigrette is heavenly as well - very smooth and not too tart. I'm not sure how I'll enjoy the raw kale, but that's personal preference, and I think gently reheating will cause it to soften, which is how I like it.

whole family loved it.  substituted romaine for kale, feta for goat cheese, and aamchur for sumac.

Curried Cauliflower, Grape &amp; Lentil Salad

Tbsp melted coconut oil ((or water))

Tbsp curry powder ((or store-bought))

tsp sea salt

Tbsp green curry paste ((or store-bought, though fresh is best))

Tbsp tahini

maple syrup

salt and black pepper

spinach

lentils

grapes

Fresh cilantro ((optional))

Preheat oven to 400 degrees F (204 C). Line a baking sheet (or more as needed) with parchment paper.

Add cauliflower to a mixing bowl and toss with coconut oil (or water), curry powder, and sea salt. Transfer to baking sheet and roast cauliflower for 20-25 minutes or until golden brown and tender.

Prepare dressing by adding green curry paste, tahini, lemon juice, maple syrup, salt, and pepper to a mixing bowl and whisking to combine. If needed, thin with water until pourable.

Taste and adjust flavor as needed, adding more green curry paste for a stronger curry flavor, tahini for greater thickness, lemon juice for acidity, or maple syrup for sweetness.

Assemble salad by adding lettuce to a serving platter or bowl. Top with lentils, grapes, and cooked cauliflower and serve with dressing. Optional: garnish with fresh cilantro.

Best served fresh. Store leftovers in airtight container for 3-4 days. Store dressing separately for up to 1 week.
