Make the curtido: In a large bowl, combine the cabbage, onion, and carrots. Pour the boiling water over the vegetables and toss. Let sit for 10 minutes, then drain.

In a liquid measuring cup or small bowl, combine the vinegar, oregano, and salt. Pour over the slaw and toss to coat. Once thoroughly mixed, transfer the curtido any any leftover liquid in the bowl to an airtight jar or container.

Chill for at least 20 minutes in the refrigerator, or chill overnight for best results.

Make the chicharrón: Heat the vegetable oil in a large pan over medium-high heat. Add the pork shoulder and salt. Cook for 15 minutes without disturbing. If the pork is browning too quickly, reduce the heat to medium. Turn the pork over and let cook on the other side for 10 minutes more, or until crispy and golden brown.

Transfer the pork to a food processor and add the tomato, green bell pepper, and onion. Pulse until a thick paste forms. The mixture should not be watery. Set aside.

Make the pupusa dough: In a large bowl, whisk together the masa harina and salt, then add the water. Use your hands to mix until the dough comes together with a clay-like texture.

Fill a small bowl with water and a bit of oil and set near your work station. You’ll wet your fingers with the mixture as you work to keep the dough from sticking to your hands.

Take a golf ball-sized portion of dough and roll into a ball, then flatten into an even round.

Fill the dough round with ½ tablespoon chicharrón paste, 1 teaspoon refried beans, and 1 teaspoon mozzarella cheese. Fold the dough over the filling until it’s completely sealed. Then, pat out the ball between your hands until flat. If the pupusa cracks, patch it with a bit of dough and a little oil. Repeat with the remaining ingredients.

Heat a large pan or griddle over medium heat. Brush with vegetable oil, then place 2-3 pupusas on the pan and cook for 2-4 minutes, or until the bottoms are golden brown. Flip and cook on the other side for 2-4 minutes more, until golden brown and warmed through. Repeat with the remaining pupusas.

We eat pancit, or noodles, always — but especially at birthday celebrations, where the length of the noodles is seen as a promise for an equally long life. Among our many pancit dishes, palabok is the richest. The sauce almost takes on the texture of an Italian ragù, with the meat slowly disintegrating into a thick gravy that’s stained reddish-gold by achuete (annatto). The toppings aren’t decorative, but a crucial part of the dish: a whole regiment of hard-boiled eggs and poached shrimp, plus a tumble of fried garlic and crumbled chicharron (puffed-up crispy pork skins).

Pancit Palabok (Rice Noodles With Chicken Ragout and Shrimp)

bone-in, skin-on split chicken breasts (about 2 breasts)

bone-in, skin-on chicken thighs

Kosher salt

shrimp (26/30 count), peeled and deveined

achuete annatto powder (3/4 ounce)

yellow onions, finely minced (about 3 1/2 cups)

celery stalks, finely minced (about 3 cups)

garlic cloves, finely minced

rice vermicelli noodles (ideally about the thickness of spaghetti,

scallions,

calamansi, halved,

A few tablespoons of crushed fried garlic

Add the chicken breasts and thighs to a large pot. Cover with about 8 cups water (the chicken should be fully submerged), add 3 tablespoons salt, and bring to a boil over high. Once the mixture comes to a boil, reduce heat to medium-low and simmer until meat is cooked through and can be ripped off the bone easily, about 40 minutes.

Transfer the chicken to a bowl to cool, and reserve the cooking liquid. Once the chicken is cool enough to handle, discard the skin. Tear the chicken into bite-size pieces and shred into thin strands. Discard the bones.

Meanwhile, prepare the shrimp: Bring 4 cups water and 1 tablespoon salt to a boil in a medium saucepan. Once it comes to a boil, add the shrimp and cook just until pink and tender, about 2 minutes. Pour into a colander, straining and discarding the liquid, then quickly transfer the shrimp to a large bowl of ice water just until chilled, about 2 minutes. Strain shrimp, transfer to a bowl and refrigerate until use.

Prepare the eggs: Bring a large saucepan of water to a boil over high with 1 teaspoon salt, and prepare an ice bath in a large bowl. Carefully drop in the eggs, one at a time, reduce the heat to a gentle simmer over low and cook, 9 minutes. Transfer eggs to the ice bath and let cool. Drain, then carefully peel.

Heat the oil over high until shimmering. Add the annatto powder and stir until toasted, slightly darkened and fragrant, about 1 minute. (The natural yellow food coloring dyes the oil a robust hue.) Add the onions, celery, garlic and 1 tablespoon salt, and cook, stirring occasionally, until softened, about 8 minutes. Deglaze with 4 cups reserved chicken stock.

Add the shredded chicken and simmer, constantly mashing the chicken with a whisk to promote shredding until the chicken has braised and disintegrates into fine threads, and the sauce has thickened, about 30 minutes. Add fish sauce and black pepper to season.

Line a large baking dish with banana leaves, if using. Add the cooked noodles to the dish, top with an even layer of warm chicken mixture, followed by most of the sliced scallions. Top with alternating rows of hard-boiled eggs (thinly sliced crosswise into rounds) and shrimp, squeezing about a half a lemon over the surface or calamansi juice if you have it. Then top with a crunchy mix of chicharron, fried garlic, a few more sliced scallions, a coarse crack of black pepper and remaining lemons or calamansi on the side, for serving.

Paso 1. Sancochar los frijoles durante 2 horas aproximadamente o hasta que ablanden en suficiente agua

Paso 2. Añadir sal al gusto, el comino y los trozos pequeños de chicharrón y continuar su cocción 15 minutos más

Paso 3. Picar finamente los ajíes, la cebolla, el pimentón y machacar los ajos

Paso 4. Sofreír hasta que estén tiernos en una sartén con un poco de manteca de cochino

Paso 5. Verter el sofrito en la olla de frijoles

Paso 6. Revolver y dejar que llegue a hervor, rectificar la sazón

500 g de carne molida de res.

En un sartén, hierve los jitomates con los chiles y el ajo.

Corta el chicharrón en trozos pequeños y muele el jitomate con los chiles.

Fríe en una olla la cebolla picada, vierte la salsa colada, deja freír. Añade el chicharrón con el cilantro, sazona y sirve.

Slice the porkbelly into 1 1/2 inch strips.

Place the pork belly pieces, skin side down on a work surface then make 1 inch crosswise cuts on each piece, being careful not to cut through the skin.

Place the strips into a bowl and rinse them with water. Drain out the water and add the mojo and salt to the meat. mix the meat to ensure the salt and mojo has been spread out. Cover and allow to marinate in the refrigerator for 2 hours.

Preheat your oven to 300 degrees.

Place the strips skin side up on baking rack inside of a baking sheet.

In a small bowl mix the juice from your lime and baking soda. Using a kitchen brush, brush the lime mixture over all of the skin. This ensures the skin crackles and crisps.

Place the meat in the oven for 90 minutes.

Set your oven to broil and watch the skin crackle. Once the skin has crisped to your liking, remove from the oven and serve. Do not look away as this requires all of your attention. Your pork can go from crisp to burnt in a few seconds.

The meat is wonderful! I used the Cuban mojo recipe from The Chef Show.  Had some difficulty getting the skin to crisp evenly. This is a fault of my oven and not the recipe. I think next time I’ll try my kitchen blow torch so I can control how the skin crisps.  Also considering cooking the meat on a charcoal grill.

Oh yeah. Our oven is broken so we use a toaster oven. Definitely going to tell my mom to buy some pork to make chicharon which we both love. I would have thought you flip it over. The rack definitely helps with the it bit soaking up the fat it lets out. Don’t have a rack but girl it will be on my must get list once we get the new oven. But not waiting till them to try your mom’s and you recipe. Que Rico!
