Super quick breaded chicken cutlets fried in a lemon butter sauce. These crispy cutlets are made without any egg or flour making them so quick and easy to whip up.

Breaded Chicken Cutlets With Lemon Butter

chicken breasts

(140 grams) fine breadcrumbs (,such as panko)

First, you need to bash your chicken breasts out thin or use pre-cut chicken cutlets from the supermarket for ease if they're available.

To bash the chicken, place one breast in between two pieces of cling film and beat it with a meat mallet or rolling pin until thin (around 1/4inch thick)

Add the breadcrumbs to a large plate and season with a good pinch f salt and pepper. Press each side of the chicken into the breadcrumbs firmly 2-3 times, repeat with all the cutlets.

Heat a good glug of olive oil in a large frying pan and when hot add the chicken cutlets. Once crispy and golden on one side turn them over and squeeze over lemon juice then add a knob of butter.

Continue to fry the cutlets until crispy and golden on both sides, remove and sit on kitchen paper or a draining rack for a couple seconds. Sprinkle with an extra pinch of salt.

Serve hot with salad or your favourite sides.

Heat oven to 400 degrees. Place cutlets between two pieces of parchment or plastic wrap. Using a kitchen mallet or rolling pin, pound meat to even 1/4-inch-thick slices.

Place flour, eggs and panko into three wide, shallow bowls. Season meat generously with salt and pepper. Dip a piece in flour, then eggs, then coat with panko. Repeat until all the meat is coated.

Fill a large skillet with 1/2-inch oil. Place over medium-high heat. When oil is hot, fry cutlets in batches, turning halfway through, until golden brown. Transfer to a paper towel-lined plate.

Spoon a thin layer of sauce over the bottom of a 9-by-13-inch baking pan. Sprinkle one-third of the Parmesan over sauce. Place half of the cutlets over the Parmesan and top with half the mozzarella pieces. Top with half the remaining sauce, sprinkle with another third of the Parmesan, and repeat layering, ending with a final layer of sauce and Parmesan.

Transfer pan to oven and bake until cheese is golden and casserole is bubbling, about 40 minutes. Let cool a few minutes before serving.

Pan-fried lemon chicken cutlets are drizzled with a lemon sauce infused with garlic. You'll be amazed that something this tasty can be ready in under 30 minutes!

Pan-Fried Lemon Chicken Cutlets

Arrange chicken cutlets in a single layer on a plate.

Combine flour, basil and thyme in a small bowl.

Sprinkle half of the flour mixture over the chicken and then turn over and sprinkle the rest over the other sides.

Swirl olive oil in a large pan.

Add 1 Tablespoon of butter to the pan and melt over medium-high heat.

Add chicken to pan and cook about 5-6 minutes on each side or until the outside is browned and the inside is no longer pink.

Remove chicken to a serving platter and keep warm.

Melt remaining butter in the pan.

Add chicken broth, lemon juice and garlic to the pan and stir to combine, scraping up brown bits.

Bring mixture to a boil and continue to boil until sauce has thickened slightly or about 3-4 minutes.

Spoon lemon garlic mixture over chicken and garnish with lemon slices.

In a bowl beat the eggs with milk, fine salt and ground black pepper. Set aside.﻿

With a sharp knife slice the chicken breast horizontally, trying to make chicken slices as thin as possible.

Place the chicken slices in the bowl with the beaten eggs and milk and set them aside to flavor, possibly in the fridge.

Make homemade breadcrumbs using stale bread, breadsticks, saltine crackers, taralli and slices of bread loaf as long as they are dry or toasted.

Place plenty of breadcrumbs on a plate then take the slices of chicken and bread them.

In a large frying pan, pour all the vegetable oil. Once the oil has become hot, dip the breaded chicken cutlets.

Once they are golden on both sides, take them out and dry them on a kitchen paper. Serve

Cut 1 medium lemon into wedges and set aside for serving. Cut 4 chicken breasts in half crosswise. Pound one piece of chicken at a time: Place between 2 sheets of plastic wrap and use the flat side of a meat mallet or the bottom of a small heavy-bottomed skillet to pound until about 1/4-inch thick. Repeat with remaining chicken cutlets. Season the chicken all over with kosher salt and black pepper. 

Place 1/3 cup all-purpose flour on a large plate. Beat 3 large eggs in wide, shallow bowl. Place 1 1/2 cups plain bread crumbs, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1/4 teaspoon kosher salt in a second wide, shallow bowl and stir to combine.

Working with 1 piece of chicken at a time, dredge in the flour mixture, then the eggs, and finally the bread crumb mixture, gently pressing the bread crumbs into the chicken so they stick. Place on a large plate or baking sheet.

Heat 1 1/4 cups canola oil in large cast iron or other heavy-bottomed skillet over medium-high heat until shimmering. Fit a baking sheet with a wire rack or line with paper towels.

Working in batches of 2, carefully add the chicken and fry until cooked through and lightly browned, 3 to 4 minutes per side. Transfer the chicken to the prepared baking sheet, keeping them in a single layer, and sprinkle lightly with flaky salt. Repeat frying the remaining cutlets, adding more oil to the pan as needed. Serve with the lemon wedges.

1.5 lbs Chicken Breasts (about 4) (skinless, boneless)

Tbsp Milk

¾ Cup Panko (or italian style panko)

To prepare the cutlets, pound each chicken breast to an even 1/4 inch thickness.

Next, rub the chicken with Italian seasoning, salt, pepper and olive oil. If time allows, marinate it for 1h to overnight. This will give you the most tender and moist chicken.

Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper. In a large bowl, whisk together the egg, milk, a pinch of salt and pepper.

In a shallow dish, combine the garlic powder, panko with parmesan and smoked paprika. Dip the chicken cutlets into the egg mixture, then dredge it into the panko mixture, lightly pressing to coat

Place the chicken onto the prepared baking sheet and spray with cooking oil spray. Bake in preheated oven for 15 minutes, then flip the chicken cutlets and bake for 5-8minutes more, or until golden and cooked through.

Sprinkle with fresh chopped parsley, and serve immediately.

These juicy chicken cutlets take less than 30 minutes to come together and that lemon butter sauce is simply divine!

Lemon Butter Chicken Cutlets

Slice the chicken breasts in half, season with salt and dredge in flour on both sides.

Heat the olive oil in a large pan, brown the chicken cutlets in the hot oil until golden for 5 minutes on each side.  After the chicken has been frying for a couple of minutes add the butter. This will add more flavor and colour to the chicken. You might want to do the frying  in batches. Then remove the chicken from the pan and keep it warm in an oven preheated to the lowest temperature while you are making the lemon butter sauce.

To the same pan add the minced garlic and let it cook over low heat for 30 seconds, then add the parsley, lemon juice, lemon slices and chicken stock, turn up the heat and bring to a boil, then lower the heat and simmer the sauce until it’s reduced in volume for a few minutes. Add salt and pepper to taste. Return the chicken back to the pan and spoon the sauce all over.

For the chicken:

Slice the chicken cutlets.  Arrange the baby greens in the center of the platter. Place the chicken, tomatoes, mozzarella, basil all round.

If making ahead, cover tight with plastic and keep chilled until ready to eat.

Or plate them individually if not making a platter, 1 piece chicken, 2 oz cheese and divide the salad.

Serve with 1 tablespoon vinaigrette (not included in n.i.).

Preheat the oven to 400°F. Place a wire rack on a baking sheet and brush or spray it with cooking oil, then set aside.

Prepare 3 separate dished. 1st with 1 cup all-purpose flour. 2nd with 2 whisked eggs. In a 3rd dish mix 1 cup Italian breadcrumbs, ½ cup grated Parmesan cheese, and 1 tbsp lemon zest.

Cut the chicken breasts in halves lengthwise. Cover them with plastic wrap and pound with a meat tenderizer until they are even thickness and about ¼-inch thick. Season them with salt and pepper from both sides.

Dredge each cutlet in flour, then beaten eggs, and then breadcrumb mixture. Place on a pre-greased wire rack. Spray the tops of the cutlets with some cooking spray, that will help to keep the tops crispy and get golden in color.

Bake at 400°F for about 15-20 minutes or until the internal temperature reaches 165°F.

Chicken Cutlets, Gnocchi and Kale with Creamy Mushroom Sauce

tbsp butter

1 clove, crushed

lb (450 g) chicken cutlets (see note)

½ lb (225 g) white mushrooms, sliced

½ cup (125 ml) dry white wine

(150 ml) 35% cream

2 (350 g each) fresh or vacuum-sealed gnocchi

In a large non-stick skillet over high heat, melt 2 tbsp of the butter until frothy with the sage and garlic. Add the chicken cutlets and cook for 2 minutes on each side until nicely golden. Season with salt and pepper. Set aside on a plate. Remove the sage and garlic from the skillet and compost.

In the same skillet, melt the remaining butter. Add the mushrooms and cook until browned. Deglaze with the wine and let reduce by half. Add the broth and cream. Bring to a boil. 

Add the gnocchi and simmer until the sauce starts to thicken. 

Add the kale and return the chicken to the skillet. Cook for 2 minutes longer, spooning the sauce over the chicken, until the kale is wilted and the gnocchi are tender. Add more broth to thin out the sauce, as needed. Adjust the seasoning.

Carefully slice each chicken breast in half lengthwise to create 2 cutlets. Use a meat mallet to pound the cutlets to an even 1/4 inch thickness.

Preheat oven to 200°F or turn on ‘keep warm’ setting. Line a sheet pan with a wire rack (optional). Plate the sheet pan in the oven.

Prepare the Chicken

Place the potatoes in a large pot and add enough cold water to cover them by 1 inch. Add 1 tbsp of salt to the water. Bring the water to a simmer over high heat, then reduce the heat to medium and simmer for about 15 minutes, or until the potatoes are fork tender.

Drain the potatoes in a strainer and set the strainer over the hot pot to evaporate the excess water. Put the potatoes back in the pot, and reduce the heat to low. Add the garlic and butter. Mash the potatoes until they are nearly smooth.
