30 Minute Chicken Fajita Salad with fresh veggies, chipotle chicken, creamy avocado then topped with a zesty Chimichurri Dressing. This Chicken Fajita Salad is one flavorful dinner recipe that's sure to please any crowd.

Chicken Fajita Salad

chicken breast

garlic powder

dry cilantro

yellow pepper, juilienned

red pepper, julienned

pickled red onion

avocado, sliced

cherry tomatoes, halved

red wine vinegar

lime juice

In a small bowl, add smoked paprika, garlic powder, ground cumin, dry cilantro, sea salt, chipotle chili powder and black pepper. Mix to combine.

Season both sides of the chicken breast with spice mixture. Set aside.

Heat large skillet to medium high heat. Add 1 tablespoon of grape seed oil to the pan and then add julienned peppers. Saute until slightly browned, about 4-5 minutes.

Remove from the pan and then add 1 tablespoon of grape seed oil and then immediately add the seasoned chicken breast. Sear both sides for 6-7 minutes, or until the chicken is no longer pink. Remove from the pan and let rest. Slice when the chicken has cooled down.

For the dressing: add garlic clove, fresh cilantro, red wine vinegar, lime juice, 1/4 teaspoon smoked paprika, red pepper flakes, salt and pepper to a small food processor or blender. Blend until the cilantro is finely chopped. Then add olive oil to the food processor and blend until the dressing combines.

To assemble the salad add green leaf lettuce to a large bowl (or four individual bowls), top with sliced chicken breast, sautéed peppers, pickled onions, cherry tomatoes and sliced avocado. Serve with chimichurri dressing on the side.

To make the fajita seasoning, mix together chilli powder, cayenne pepper, cumin powder, ground pepper and salt in a bowl and set aside.

Start by adding half the fajita seasoning, minced garlic, lime juice and 1/2 teaspoon salt to the chicken. Set aside for 10 minutes.

Heat olive oil in a pan and add the chicken to the pan and cook for 10-12 minutes till the chicken is cooked through and slightly crispy.

Remove the chicken on a plate, and add onions and bell peppers to the pan. Add the remaining fajita seasoning and stir fry for 3-4 minutes on high heat.

Meanwhile start cooking the quinoa. Start by washing it a few times in cold water. Add quinoa, two cups water and 1/4 teaspoon salt to a saucepan and bring it to a boil. Simmer and cook for 15-20 minutes till the quinoa is cooked through and soft and fluffy. Once the quinoa is cooked through, add lime juice and cilantro and mix.

Cilantro Lime Quinoa

To assemble the chicken fajita meal prep lunch bowls, divide quinoa evenly into the bowls. Divide the chicken and peppers on top. Let them cool slightly before placing the lids on top and refrigerating.

To serve, remove the lid on the containers and heat them in the microwave. Top with your favourite topping and enjoy!

Tex Mex Chicken Salad – a quick, simple and healthy lunch or dinner made with tender and juicy chicken, bell peppers and fresh lime.

Tex Mex Chicken Salad

For serving:

In a resealable small jar, combine all the ingredients for the seasonings. Seal and shake well. Reserve 1 1/2 teaspoons for the bell peppers.

In a large resealable bag, combine 2 tablespoons of olive oil, lime juice and 5 teaspoons of the fajita seasonings. Add the chicken to the bag and seal. Press the marinade into the chicken and allow to marinate while you prepare the vegetables (or chill in the refrigerator until ready to use).

Slice the the onions and bell peppers.

Heat 1 tablespoon butter in a large pan over medium-high heat. Add the onions and allow to cook for about 4-5 minutes, or until softened and fragrant. Add the bell peppers and sprinkle with the reserved 1 1/2 teaspoons of fajita seasonings. If you like the peppers with a nice crunch - cook for about 3-5 minutes. And if you like them softer, leave them on for about 2-3 minutes longer. Transfer to a plate and set aside.

Melt remaining 1 tablespoon butter on the same skillet and brown the chicken. Cook for 5-6 minutes, or until cooked through.

Arrange the lettuce in a large salad bowl or plate, top with chicken and bell peppers. Add sliced avocados, lime wedges and any other toppings of your choice.

Preheat the oven to 350°F.

To a large mixing bowl combine the chicken, rice, stir fry vegetables, diced tomatoes, chicken broth, and fajita seasoning. 

Add the cream cheese, sour cream, and half of the Mexican cheese. Stir well to combine. 

Pour into a 9x13 casserole dish. 

Cover and bake for 35 minutes. 

Uncover, sprinkle with remaining Mexican cheese and return to oven for an additional 10 minutes. 

Sprinkle with cilantro or more sour cream. 

This Chicken Fajita Pasta is fresh, bold and flavorful, and made in just one pan! Everything you love about fajitas, transformed into a delicious pasta dish.

Tablespoons oil ((vegetable or canola oil))

In a small bowl combine the fajita marinade ingredients.&nbsp;

Place the chopped chicken in one large ziplock bag, and the veggies in another large ziplock bag. Pour half of the marinade into each bag and toss them to coat. Refrigerate for 15 minutes, or up to a few hours.

When ready to cook, heat oil in a large skillet over medium-high heat. Once hot, add the chicken (discard any remaining marinade), and cook for 3-4 minutes. Flip chicken to cook on the other side until cooked through (about 165 degrees F). Remove to a plate and cover with aluminum foil. Add veggies and garlic to the pan and sauté for a few minutes, until tender. Remove to the plate with the chicken.

In the same skillet, add the broth, milk, diced tomatoes, uncooked pasta, and salt.

Stir to combine and bring to a boil. Once boiling, cover, reduce heat to medium-low, and cook for 13-15 minutes or until pasta is tender and liquid is mostly absorbed.&nbsp;

Add the chicken and veggies back into the skillet and stir to combine until heated through.&nbsp;

Serve immediately, topped with salsa and sour cream, if desired.

This Chicken Fajita Rice Skillet is filled with all the flavors of your classic fajitas but in a super quick and easy skillet meal!

Chicken Fajita Rice Skillet

red bell pepper (sliced)

green bell pepper (sliced)

rice (I use Jasmine rice)

pkg. Fajita seasoning mix* (found by the taco seasoning)

lime (juice of)

tsp salt

tsp black pepper

Sour Cream

Pico de Gallo

Avocado slices

Lime wedges

Shredded Cheese

Heat the oil in a heavy bottomed skillet (preferably not non-stick) over medium-high heat. Add the peppers and onions and cook, stirring occasionally until the peppers and onions are charred and blistered.

Add in the rice, tomato sauce, chicken broth, fajita seasoning, lime juice, chicken, salt and pepper. Stir the mixture, scraping any browned bits off the bottom of the pan and bring to a boil. Reduce heat to a simmer, cover and cook for about 16 to 18 minutes, until rice is tender.

Fluff rice with a fork or wooden spoon and serve with the optional fajita toppings. Enjoy!

Had so much liquid still in the pot but flavour was good!

Made this for dinner tonight.  No one else has come to the table yet.  It was soccer practice night.  I had leftover chicken in the fridge.  It had been marinated in McCormick's Mojito Lime and then baked in the oven.  I didn't measure the chicken.  It seemed more than two cups.  This is incredible.  I will definitely be making this again.  Hoping everyone else likes it.  If not, lots of yummy leftovers for me.  Now I want to try more of your recipes.  Thanks for this one.  :)
