Chickpea Salad Recipe

A very simple salad you can enjoy with just about any meal. This is made with canned chickpeas, fresh apple, carrots, and red onion in a bed of lettuce.

Easiest Vegan Chickpea Salad

green leaf lettuce

carrots

Tbsp red onion

apple cider vinegar

olive oil

tsp organic sugar

Wash &amp; chop the lettuce. Slice the carrots and red onion thinly (julienne). Drain the chickpeas. Cut the apple into ½&quot; cubes.

For the dressing: Add the dressing ingredients to a small jar and shake vigorously. Or, add them to a bowl and wisk. Shake or whisk until the sugar is dissolved. Add some freshly ground black pepper.

Combine the salad and dressing in a large bowl and toss to combine well. Can be eaten immediately. Best is if you cover and chill it for about an hour before serving.

This chickpea salad recipe is super easy and completely delicious; it takes only about 15 minutes to make, and there are so many ways to serve it — as a sandwich, appetizer, or dolloped into a lettuce leaf.

Sharon’s Chickpea Salad or Sandwich Spread

chickpeas (garbanzo beans, drained and rinsed)

carrots (shredded (about 2 medium carrots))

celery (finely chopped (1 large or 2 average-size stalks))

lemon juice (from about 1 lemon)

vegan mayonnaise (or as desired)

nutritional yeast (optional but highly recommended)

Mash chickpeas in a bowl with a potato masher until there are no whole chickpeas left. A potato masher works best but if you don’t have one, you can use a fork (or for the totally lazy, place the chickpeas in a food processor and pulse on and off until finely chopped).

Combine the mashed chickpeas with the remaining ingredients and mix together. Serve as suggested below.

Moroccan Chickpea Salad

quinoa

reduced-sodium chickpeas ((15 ounce cans), rinsed and drained)

baby arugula

pistachios

feta (omit to make vegan)

golden raisins

mint

lemon juice (about 1 small lemon)

Dijon mustard

maple syrup (or honey)

chili powder

salt

cinnamon

In a medium saucepan, cook the quinoa according to package directions.

While the quinoa cooks, place the chickpeas and carrots in a large serving bowl. In a small bowl or measuring cup (my favorite for easy pouring), whisk together the dressing ingredients: olive oil, lemon juice, Dijon, maple syrup, chili powder, salt, and cinnamon. Taste and adjust as desired.

Once the quinoa has finished cooking, fluff with a fork, then add to the serving bowl. Pour the dressing over the top, just until it is moistened, then stir to combine. Add the arugula (see recipe note if not eating all of the salad within a day or so) and stir again, adding a bit more dressing as desired. Sprinkle with the pistachios, feta, raisins, and mint. Enjoy immediately or refrigerate until ready to serve.

Place the chickpeas, parsley, bell peppers, cucumber, and feta in a large serving bowl.

In a small mixing bowl or large measuring cup, stir together the dressing ingredients: olive oil, red wine vinegar, garlic, oregano, salt and pepper. Drain the red onions and add them to the chickpea mixture, then pour the dressing over the top. Toss to combine. If time allows, let marinate in the refrigerator for 30 minutes, or enjoy immediately.

I made this a couple of weeks ago for a potluck and I can't stop thinking about it. I'm making it again on Friday. This may have to be a weekly thing.

I'm currently eating a bowl of this as I type this - 10/10 this recipe is SO GOOD! And I have to admit, I normally eat pretty unhealthily but I'm trying to change that, and this salad was calling my name so I made and DANGGGGGG, I made it with onion powder and garlic powder instead of fresh garlic and onion, and I added a lot of coriander, and accidentally too much red pepper flakes haha and drizzled it with tahini and BOY OH BOY is it good!

Super easy to make and so tasty. Lasted well for lunches through the week. Will be on regular rotation.
