Hot Chocolate Oatmeal is the MOST fun way to eat oatmeal!  This creamy, rich, and satisfying oatmeal is perfect topped with marshmallow, while still being a balanced breakfast. This chocolate oatmeal recipe will make the big and little kids happy!!

Hot Chocolate Oatmeal

milk

water

cocoa powder

maple syrup (use 1/3 cup if like really sweet)

oats (old fashioned)

salt

vanilla

marshmallows

Combine

Mix together the cocoa powder in 1/2 cup water until the cocoa powder is dissolved and smooth.

Cook

Add the cocoa powder mixture to a medium saucepan, along with the milk, remaining 1/2 cup of water, and maple syrup. Bring the mixture to a boil, while whisking frequently, to not scorch the milk.

Simmer

Stir in the oats and reduce heat to medium-low. Cook for 5 minutes or until the oats are thickened and creamy. Turn off heat.

Serve

Stir in vanilla and a dash of salt. Top with marshmallows if desired.

This double chocolate oatmeal is healthy enough to be breakfast and decadent enough to be dessert. One of my all-time favorites!

Double Chocolate Oatmeal

In a saucepan over high heat, place the rolled oats and salt. Cover with 3 cups water. Bring to a boil and cook for 3-5 minutes, stirring occasionally, adding ½ cup water as necessary as the mixture thickens.

In a small bowl, whisk 4 tablespoons water into the 4 tablespoons cocoa powder to form a smooth sauce. Add the cocoa sauce and the vanilla to the pan and stir until well combined.

Turn the heat down to low. Add the egg whites and whisk immediately and vigorously to get them fully incorporated. (If you go too slow or don’t whisk right away, you’ll get little chunks of egg whites in your oatmeal). The entire mixture should slowly take on a lighter color and fluff up a bit as the egg whites become incorporated and cook.

Add the sugar, flaxmeal, and cinnamon. Stir to combine. Remove from heat and serve immediately, topping with powdered sugar or chocolate chips if you want.

BTW, I made this after my run this morning. This is the first time I have ever enjoyed oatmeal! I'm trying to go vegan for a week, so I left out the egg whites and added a tablespoon of peanut butter. Thanks for sharing a great recipe!

Brownie Batter Oatmeal

old fashioned oats

Tablespoons all purpose flour

Tablespoon unsweetened cocoa powder

baking powder

milk (your preference)

Tablespoon honey or maple syrup

Tablespoon mini chocolate chips

Preheat oven to 325°F. Spray an individual sized ramekin with nonstick spray (aff link) and set aside.

In a small bowl, whisk together oats, flour, cocoa powder and baking powder.

Add milk, honey/maple syrup, oil and vanilla and stir until well combined. Fold in chocolate chips.

Transfer batter to prepared ramekin, top with a few more mini chocolate chips (just because!).

Bake for 15 minutes, depending on desired consistency.

Carefully remove from oven and serve immediately. Enjoy!

Spray a medium to large microwave-safe mug with cooking spray and inside combine all ingredients.

Microwave on high for 3 minutes.

Stir in and top with optional ingredients. I enjoyed my oatmeal with a Stevia packet, a splash of almond milk and fresh pomegranate seeds.

Best Ever Chocolate Oatmeal | SO Creamy!

(90 g) quick-cooking

cocoa or cacao powder

(475 ml) non-dairy milk

chia seeds

chopped chocolate or chocolate chips

Optional toppings: fresh fruit, nut butter, etc.

Dry Ingredients: 

add the oats, cocoa powder, and salt to a sauté pan or sauce pan over medium heat. Mix well until the cocoa is incorporated.

Wet Ingredients: 

add the milk, maple syrup, vanilla, and chia seeds to the pot. Bring to boil, then reduce the heat and simmer for 5 to 10 minutes, stirring occasionally, until the oats have reached your desired texture. Keep in mind that the oatmeal will thicken slightly as it cools.

Serve: 

divide the oatmeal into serving bowls, then top with chocolate and other toppings, as desired. This recipe is best enjoyed fresh, but leftovers can be stored in the refrigerator for up to 3 days. I recommend reheating the leftovers on the stovetop or in the microwave with a splash of water or non-dairy milk, as they will thicken slightly overnight.

You can’t really go wrong with chocolate and raspberry combination but I haven’t had much success when I paired the combo in a oatmeal…well, that was until I tried Caitilin’s recipe which truly resulted in the best ever chocolate oatmeal. Preheat oven and grease bowl.

Preheat the oven to 350 degrees Fahrenheit and grease a small ramekin with non-stick cooking spray.

Prepare flax egg.

Prepare the flax egg by mixing 1 tablespoon ground flaxseed with 3 tablespoons water. Stir, then let stand for 5 minutes to thicken.

Blend ingredients.

Add all ingredients to a high-speed blender and blend until smooth.

Peel the banana and place in the bottom of a saucepan. Mash it well with a fork.

Add oats, cacao powder, vanilla sugar, salt and peanut butter and mix well, to a paste.

Place over medium-high heat and bring to a simmer. Once it starts simmering, lower the heat to medium-low and stir constantly to avoid burning.

Cook for about 3 minutes, until thickened. Then take off the heat and serve immediately.

To serve, place in a bowl and top with blueberries, peanut butter, cacao nibs and milk.
