Oat Milk Creamer (Oat Cream)

tbsp coconut oil

salt

Add all of the ingredients to your high speed blender and blend for twenty seconds.

You may need thirty seconds if your machine isn't as powerful/high-speed.

Step 1. Blend

Filter the mixture through a fine-mesh sieve or nut milk bag. However, be careful not to squeeze or press the mixture, as that can encourage sliminess. Allow it to strain naturally.

Once strained, it's ready to use immediately or transfer to a jar and store in the fridge.

Place cocoa powder and coffee granules in a large mixing bowl. Set aside.

In a medium saucepan, add milk and half-and-half and heat to steaming.

Add sugar to milk mixture, and stir to combine. Return mixture to steaming but NOT boiling.

When mixture is hot, remove from heat. Add vanilla extract and almond extract and stir to combine.

Pour hot mixture into bowl with cocoa powder. Whisk to combine.

Transfer to a container with lid. Store in refrigerator, and shake before use.

Dairy-Free Coffee Creamer

raw almonds ((or raw cashews))

sea salt ((optional))

It’s important to soak the almonds (or cashews) to soften them, reduce phytic acid, and make a creamier, easier-to-digest nut milk. We prefer soaking overnight, covered in cool water with a pinch of salt (optional) — or covered in very hot water with a pinch of salt for 1 hour if you’re in a hurry.

Once soaked, drain and rinse almonds and transfer to a high-speed blender along with 2 cups filtered water (for creamer, I like a ratio of 1 part nuts : 2 parts water), 1 pitted medjool date (more for sweeter nut milk), and vanilla extract.

Blend on high for ~1 minute or until creamy and smooth. Then place a nut milk bag (or drape a clean towel or t-shirt) over a large mixing bowl and pour through the nut milk bag. Gather the edges securely and squeeze firmly until all of the liquid has been extracted and the pulp is left behind. You can either compost the pulp, make it into almond meal, or find some more creative uses for it here.

Store almond creamer covered in the refrigerator up to 4-5 days, or in the freezer up to 1 month. Perfect for use in hot or iced coffee, matcha, or tea.

Homemade Cinnamon Coffee Creamer

To the milk mixture, add the vanilla, cinnamon, and white sugar.

Made this last night.  Am enjoying it in my coffee now.  I didn't have half and half so I used evaporated milk. I put it in my blender and mixed it up.  Now this morning I was pleased with the taste.   But it needed just a little more sugar since I used cream instead of half and half.  I  will be making again.  Really is good.

I love adding a cinnamon to my iced coffee occasionally but it just sits on the top, so I decided to make a big batch of this with just the vanilla and then use some of it for a smaller batch with the cinnamon.  Soooo good!  The only changes I made were that I used only a teaspoon or two of vanilla and added the cinnamon to taste.  
It was also plenty sweet without the added sugar so I omitted that as well.  
I love that this recipe is so customizable to taste.  Definitely a keeper!

I used Cinnamon drop s that you  use for candy. 0ne or two drops or add to your taste. I didn't add sugar. Used skim milk blended with half n half and sweet milk. Ittlenless calories and the vanilla.  Find the drops in Walmart aisle for candy making. No more cinnamon settlling to bottom.

I used soy milk since my daughter buys it for me and works great since it's a thicker consistency also I highly recommend Saigon cinnamon you can find it at most grocery stores and online, the flavor is so amazing with a hint of natural sweetness, not your everyday cinnamon.

This is really good!  I am addicted to coffee mate cinnamon vanilla which is no longer available in my area despite what Nestle says.  This probably healthier in the fact that the only ingredients are milk, sugar, vanilla and cinnamon.  I used a heaping tsp of cinnamon and right away saw it sink to the bottom so next time will definitely try the cinn extract.  This has a stronger cinnamon flavor than coffee mate.  I didn't add the additional white sugar.  Tasted it before adding to my coffee and it was sweet enough, give me a straw!
