Corn Chowder. Thick and creamy, this hearty corn chowder is loaded with chunks of potato, ham, and tons of flavor! This soup is easy enough to make as a weeknight meal, and best of all can be made with fresh, frozen, or even canned corn, making it perfect all year round!

Corn Chowder

butter

onion (diced)

garlic (minced)

tbsp all purpose flour

corn (frozen

lb gold potatoes (diced 1/2 inch cubes)

tsp salt

¼ tsp ground black pepper

paprika

chicken broth (unsalted)

half and half ((or milk of preference))

In a large dutch oven or pot, melt the butter over medium heat.

Add the diced onion and cook until softened and translucent. Add the garlic and cook an additional 30 seconds.

Stir in the flour to make a thick paste. Allow this to cook for about 1-2 minutes, just to cook the flour.

Stir in the salt, pepper, and paprika. Pour in the chicken stock. Stir to combine.

Add the diced potatoes. Cook for about 10-15 minutes over medium heat.

Add in the corn and continue to cook for another 10 minutes, until corn is heated through and the potatoes are fork tender.

Turn off the heat and using an immersion blender blend up the soup to desired consistency. I prefer to leave some chunks of corn and potato in mine. The more you blend the thicker the soup will be. If you don&#x27;t have an immersion blender, you can remove about half of the soup carefully and blend in a blender or food processor. Then return to the pot.

After soup is blended, add in the ham. I prefer giving my ham a quick sear in a separate pan over medium high heat for about 5 minutes before adding to the soup. This is completely optional. If you skip this step, turn the heat back on the soup and let the soup cook longer to make sure the ham is warmed through.

Add in the half and half. Stir to combine.

Serve soup warm with a garnish of fresh chives, or parsley and a dash of fresh ground pepper.

Hearty Homemade Corn Chowder

bacon, diced

yellow sweet corn ((husks and silks removed))

lb. yukon gold or baby red potatoes

thyme

tsp smoked paprika

salt and black pepper,

half and half or heavy cream

Slice corn kernels off the cob and set aside.&nbsp; Take each ear of corn and hold it over a bowl.&nbsp; Use either the back of your knife or a spoon and scrape any remaining pulp and juice from the cobs.

Cook bacon pieces in large heavy bottomed pot (like a dutch oven) over MED heat.&nbsp; Cook about 5-8 minutes, or until bacon is crisp.&nbsp; Use a slotted spoon to remove to a paper towel lined plate and set aside.

Use a clean paper towel to absorb some of the bacon grease, reserving about 1 Tbsp of grease in the pot.&nbsp; Add butter and melt over MED heat.

Add diced onions and cook about 5 minutes, until soft and translucent.&nbsp; Add garlic and flour and cook about 1 minute, stirring often.

While whisking, pour in water and increase heat to MED-HIGH.&nbsp; Add in corn, potatoes, thyme, smoked paprika, and salt and pepper.&nbsp; Stir and bring to a low boil, then reduce heat to MED-LOW and simmer.

Simmer, stirring every so often, for 15-20 minutes, until potatoes are fork tender.

Use an immersion blender to blend about half the soup until smooth.&nbsp; Alternatively, remove about 3 cups of the soup to a blender and blend until smooth.&nbsp; Stir the blended soup back into the pot.

Add in half and half, reserved corn juice, and about half the chives.&nbsp; Stir in and heat through.

Serve sprinkled with remaining chives and cooked bacon pieces, if desired.

Very good base!  I added andouille and used Creole vs Cajun seasoning.  I used corn starch as replacement to flour as thickener.  Will reduce the amount broth to 3 cups next time since I want something thicker.

but will all said this recipe is a winner!

Made this tonight and we loved it! Added Tonys Cajun seasoning at the end. So good!

Was going to cut recipe in half since there’s only 2 of us but glad I didn’t. My husband loved it & went back got seconds. Only change is I added some garlic powder.

We love this chowder.  Fixed it for Christmas Eve and doubled the recipe.  It was a hit!

This is delicious! Made with canned corn and used 3 cups of chicken stock instead of 4, and threw in 2 cans of corn along with the juice. Also added in 2 extra strips of bacon and a bit more cheese. Perfect for a chilly fall evening!

This leftover turkey corn chowder comes together in about 30 minutes and is the most delicious way to use up that leftover Thanksgiving turkey.

Leftover Turkey Corn Chowder

cream style corn

sweet yellow whole kernel corn

chicken broth or vegetable broth

celery rib (chopped)

red bell pepper (diced)

golden or red potatoes

Italian seasoning

garlic powder

salt and pepper

In a large stock pot combine cream style corn, whole kernel corn, broth, celery, bell peppers, potatoes, Italian seasoning, and garlic powder.

Cover and simmer over medium heat for 20-25 minutes until potatoes are tender and easily pierced with a fork.

Stir in turkey and season with salt and pepper. When turkey is heated through, serve and garnish with fresh parsley or thyme as desired.

Mexican corn chowder combines charred corn, green chiles and potatoes in a spicy, creamy broth. Make this recipe in just under an hour!

On a medium hot grill or hot grill pan, char the corn all over, 12-15 minutes. Set aside until cool enough to handle.

Turn a small dipping sauce bowl over and place in the bottom center of a large bowl. Position each ear of corn lengthwise on the small bowl and slice the corn kernels off each cob, scraping the cob with the knife to extract any juices. Repeat with all ears of corn.

Cut 3-4 bare corn cobs in half, discarding the rest. Set the corn kernels and cobs aside.

In a Dutch oven or soup pot over medium heat, melt the butter. Add the onion, celery, poblano, garlic, salt, oregano, and bay leaf. Cover and sweat the vegetables, stirring occasionally, until the onion softens, about 6 minutes.

Remove lid. Add the corn kernels and cobs, potatoes, milk, cream and ancho powder (or chile powder of choice). Bring to a boil, cover, and lower the heat to simmer. Cook, stirring occasionally, about 25 minutes. Test potatoes with fork to be they are tender yet cooked. Carefully remove and discard the cobs and bay leaf.

Transfer 2 cups of the soup to a blender and purée until smooth. Be careful and leave gap in lid to let steam out and cover with towel.

Stir the thick puréed soup back into the pot of remaining soup to thicken. Season with salt and the ancho chile powder to taste.

Divide into soup bowls and garnish with the cilantro, Mexican crema, cotija cheese crumbles and additional ancho chile powder. Serve with lime wedges.

Using either, fresh, canned, or frozen corn, this Easy Corn Chowder recipe is a great year-round soup! With added potato, bacon, and cheese, you’ll want a big bowl!

Easy Corn Chowder

bacon (, diced)

celery (, finely diced)

garlic (, diced )

salt and pepper (,

russet potato (,

corn kernels ((fresh from 5 ears of corn, canned and drained,

honey ((if using canned or frozen corn))

bay leaves

Add the bacon to the bottom of a large heavy soup pot set over medium heat. Stir until the bacon is browned and crispy. Remove to a paper-towel-lined plate with a slotted spoon.

Drain or spoon off all but 3 tablespoons of the fat in the pot. Stir in the butter until melted.

Add in the onion and celery; cook, stirring occasionally, until the vegetables just begin to become tender, about 5 minutes.

Add in the garlic and saute until fragrant, about 30 seconds. Season with salt and pepper, to taste.

Sprinkle the flour into the vegetables to coat them evenly and make a paste. Cook a minute or two to get rid of the raw flour flavor.

Pour in the chicken broth along with the potato, corn, honey, thyme, and bay leaves; bring to a boil, then reduce heat to a gentle simmer. Cook until the potatoes are tender but not mushy, stirring occasionally, about 10-12 minutes.

Discard the bay leaves from the soup.

Add in the heavy cream.

Using an immersion blender, puree the soup until the desired consistency is reached (alternatively, transfer about 3 cups of the soup in a food processor or blender and stir it back into the soup.)

Stir in the shredded cheese until melted.

Stir in most of the cooked bacon, reserving some for garnish.

Taste and adjust seasonings, if necessary.

Ladle the soup into bowls and garnish with the some cooked bacon and diced scallions.

Southwest Corn Chowder

chicken broth (I used low sodium)

half and half (I used Fat Free)

chili powder (chipotle chili powder if you have it!)

Grill corn for 8-10 minutes, turning throughout until slightly charred on edges and corn is tender. (If using canned corn, saute in a skillet with 1 teaspoon oil in a pan over medium-high heat til slightly charred) Cut corn off the corn and set aside.

In a large stock pot over medium high heat, melt butter. Add potatoes, garlic, and onions and saute for 3-4 minutes until onions are translucent and tender.

Stir in chicken broth, bring to a boil for 5-10 minutes until potatoes are fork-tender.

Stir in corn, half and half, salt, pepper, chili powder, and green chiles (including juices from the can). Simmer while you prepare the roux.

To prepare the roux, in a medium sauce pan melt butter. Stir in flour for 1 minute. Gradually whisk in heavy cream.

Gradually stir roux into simmering soup.

Taste, add salt and pepper as needed. Serve with fresh cilantro if desired.

This  is a rich corn soup with lots of green chiles . Add in all the extras and you have a soup extravaganza!

Melt butter over medium heat. Add onions and cook until translucent. Add garlic and cook another minute.

Stir in green chilies, chicken stock, most of the corn, salt and oregano. Cook until corn is soft.

Now using your handy dandy hand immersion blender, puree this. It will not be totally smooth. That is OK!

Now stir in the half and half. and the reserved corn. Heat, without boiling until the reserved corn is cooked through.

When ready to serve garnish with goat cheese, bacon, and salmon.

Dot with Sriracha. Sprinkle with basil. Get ready to ladle some golden goodness into your pie hole. Just perhaps there are silver linings!
